‫ﺍاﺳﻤﻚ ﻭوﻣﻴﻼﺩدﻙك ؟‬ ‫ﻣﺄﻣﻮﻥن ﺑﻦ ﺃأﺣﻤﺪ ﺑﻦ ﻣﺤﻤﺪ ﺍاﻟﻄﻴﺐ ‪ ،‬ﻭوﻟﺪﺕت ﻓﻲ ‪ ١٩٦٠-٣-١٣‬ﻡم ﺑﻤﺪﻳﻨﺔ ﺍاﻟﺨﺮﻃﻮﻡم ‪.‬‬ ‫ﺣﺪﺛﻨﺎ ﻋﻦ ﻧﺸﺄﺗﻚ ﻭوﺣﻴﺎﺗﻚ ﺍاﻟﻌﻠﻤﻴﺔ ؟‬ ‫ﻧﺸﺄﺕت ﻧﺸﺄﺓة ﺩدﻳﻨﺔ ﺣﻴﺚ ﻛﺎﻥن ﻭوﺍاﻟﺪﻱي ﺍاﻟﺸﻴﺦ ﺃأﺣﻤﺪ ﻣﻦ ﺣﻔﻈﺔ ﺍاﻟﻘﺮﺁآﻥن ﺍاﻟﻜﺮﻳﻢ ‪ ،‬ﺑﺪﺃأﺕت ﺣﻴﺎﺗﻲ ﺍاﻟﻌﻠﻤﻴﻪ ﻣﻦ ﺳﻦ‬ ‫ﺍاﻟﺮﺍاﺑﻌﺔ ﺑﻤﺪﺍاﺭرﺱس ﺗﺤﻔﻴﻆ ﺍاﻟﻘﺮﺍاﻥن ﺍاﻟﻜﺮﻳﻢ ﻭوﺣﺘﻰ ﺳﻦ ﺍاﻟﺴﺎﺩدﺳﺔ ﻭوﻣﻦ ﺛﻢ ﺍاﻧﺘﻘﻠﺖ ﺍاﻟﻲ ﻣﺪﺭرﺳﺔ ﺍاﻟﻌﻴﻠﻮﻓﻮﻥن‬ ‫ﻭوﻛﻨﺖ ﻣﺘﻤﻴﺰﺍا ﻓﻲ ﻣﺎﺩدﺓة ﺍاﻟﺮﻳﺎﺿﻴﺎﺕت ﺣﺘﻰ ﺍاﻟﻤﺮﺣﻠﺔ ﺍاﻟﺜﺎﻧﻮﻳﺔ ﻭوﺗﺨﺮﺟﺖ ﻋﺎﻡم ‪. ١٩٨١‬‬ ‫ﻧﻮﺩد ﻣﻌﺮﻓﺔ ﺍاﻟﻬﻮﺍاﻳﺎﺕت ﺍاﻟﻤﻔﻀﻠﺔ ﻟﺪﻳﻚ ؟‬ ‫ﻛﻨﺖ ﺍاﻋﺸﻖ ﻛﺮﺓة ﺍاﻟﻘﺪﻡم ﻭوﻗﺪ ﻟﻌﺒﺖ ﻓﻲ ﻋﺪﺓة ﻓﺮﻕق ﻛﺮﻭوﻳﺔ ﻓﻲ ﻣﺮﺣﻠﺔ ﺍاﻟﻨﺶﺀء ‪ ،‬ﺑﺎﻹﺿﺎﻓﺔ ﻟﺮﻳﺎﺿﺔ‬ ‫ﺍاﻟﺴﺒﺎﺣﺔ ‪.‬‬ ‫ﻣﺎﺫذﺍا ﻋﻦ ﺧﺒﺮﺍاﺗﻚ ﺍاﻟﻌﻤﻠﻴﺔ ؟‬ ‫ﺣﻴﺎﺗﻲ ﺍاﻟﻌﻤﻠﻴﻪ ﺑﺪﺃأﺕت ﻓﻲ ﻋﺎﻡم ‪ ١٩٨٣‬ﺑﺎﻟﺠﻤﻬﻮﺭرﻳﺔ ﺍاﻟﻠﻴﺒﻴﻪ ﻭوﺍاﺳﺘﻤﺮﺕت ﻟﻤﺪﺓة ‪ ٣‬ﺃأﻋﻮﺍاﻡم ﺗﻨﻘﻠﺖ‬ ‫ﺧﻼﻟﻬﺎ ﺑﻴﻦ ﺍاﻟﻌﺪﻳﺪ ﻣﻦ ﺍاﻟﺸﺮﻛﺎﺕت ﺍاﻟﺘﻲ ﺗﻌﻤﻞ ﻓﻲ ﻣﺠﺎﻝل ﺍاﻟﻜﻬﺮﺑﺎﺀء ﻭوﺍاﻟﺴﻼﻟﻢ ﺍاﻟﻤﺘﺤﺮﻛﺔ ‪،‬‬ ‫ﺑﻌﺪ ﺫذﻟﻚ ﻗﺮﺭرﺕت ﺍاﻟﻤﻐﺎﺩدﺭرﺓة ﺍاﻟﻰ ﺍاﻟﻤﻤﻠﻜﻪ ﺍاﻟﻌﺮﺑﻴﺔ ﺍاﻟﺴﻌﻮﺩدﻳﺔ ﺣﻴﺚ ﻋﻤﻠﺖ ﻓﻲ ﺫذﻟﻚ ﺍاﻟﻮﻗﺖ‬ ‫ﻓﻲ ﻣﺠﻤﻮﻋﺔ ﻣﻌﺎﺭرﺽض ﺍاﻟﻨﺴﻴﻢ ﻟﻠﺴﻴﺎﺭرﺍاﺕت ﻭوﺍاﺳﺘﻤﺮﺭرﺕت ﺑﺎﻟﻌﻤﻞ ﺑﻬﺎ ﺣﺘﻰ ﻋﺎﻡم ‪١٩٩٢‬ﻡم ‪،‬‬ ‫ﺛﻢ ﺍاﻧﺘﻘﻠﺖ ﻟﻠﻌﻤﻞ ﻓﻲ ﺷﺮﻛﺔ ﻫﺎﺷﻢ ﺣﺴﻮﻧﺔ ﻭو ﺃأﻭوﻻﺩدﻩه ﻟﻠﺘﺠﺎﺭرﺓة ﻭوﺍاﻟﺘﺒﺮﻳﺪ ‪، HRC‬‬ ‫ﻓﻲ ﻓﺮﻉع ﺍاﻟﺮﻳﺎﺽض ﺑﻮﻇﻴﻔﺔ ﻣﺴﺎﻋﺪ ﻭوﻛﺎﻧﺖ ﻟﺪﻱي ﺭرﻏﺒﺔ ﻟﻠﺘﻌﺮﻑف ﻋﻠﻰ ﻋﻠﻢ ﺍاﻟﺘﺒﺮﻳﺪ‬ ‫ﺑﺸﻜﻞ ﻣﻮﺳﻊ ﻭوﺩدﻗﻴﻖ ﺣﻴﺚ ﻛﻨﺖ ﺍاﻗﺮﺃأ ﺍاﻟﻜﺜﻴﺮ ﻣﻦ ﺍاﻟﻜﺘﺎﻟﻮﺟﺎﺕت ﻭوﺍاﻟﻜﺘﺐ‬ ‫ﺍاﻟﺨﺎﺻﺔ ﺑﺎﻟﺘﺒﺮﻳﺪ ﺣﺘﻰ ﺗﻤﻜﻨﺖ ﻭوﷲ ﺍاﻟﺤﻤﺪ ﺇإﻟﻰ ﺍاﻟﻮﺻﻮﻝل ﻟﻬﺪﻓﻲ ﻭوﻳﻌﻮﺩد ﺍاﻟﻔﻀﻞ‬ ‫ﷲ ﺛﻢ ﺑﻤﺴﺎﻋﺪﺓة ﺇإﺩدﺍاﺭرﺓة ﺷﺮﻛﺔ ‪ HRC‬ﻭوﺍاﻟﺰﻣﻼﺀء ﻭوﻗﺪ ﺳﺎﻫﻤﺖ ﺍاﻟﺸﺮﻛﺔ ﻟﻲ‬ ‫ﺑﺘﻘﺪﻳﻢ ﻋﺪﺓة ﺩدﻭوﺭرﺍاﺕت ﻣﻦ ﻛﺒﺎﺭر ﺍاﻟﻤﻬﻨﺪﺳﻴﻦ ﺍاﻟﻤﺘﺨﺼﺼﻴﻦ ﻓﻲ ﻣﺠﺎﻝل ﺍاﻟﺘﺒﺮﻳﺪ‬ ‫ﻣﺜﻞ ﺩد‪ .‬ﺟﻮﻥن ﻭوﺍاﻳﻀﺎ ﺩد‪ .‬ﺟﻴﺮﻫﺎﻡم ﻭوﺳﺎﻫﻤﺖ ﺍاﻟﺪﻭوﺭرﺍاﺕت ﻫﺬﻩه ﻟﺘﻤﻜﻨﻲ ﻣﻦ ﺣﻞ‬ ‫ﺍاﻟﻜﺜﻴﺮ ﻣﻦ ﺍاﻟﻤﺸﺎﻛﻞ ﺍاﻟﻔﻨﻴﺔ ﺑﻐﺮﻑف ﺍاﻟﺘﺒﺮﻳﺪ ‪ ،‬ﻛﻤﺎ ﺗﻠﻘﻴﺖ ﻋﺮﻭوﺿﴼ ﻋﺪﻳﺪﺓة ﻟﻠﻌﻤﻞ‬ ‫ﻓﻲ ﺧﺎﺭرﺝج ﺍاﻟﻤﻤﻠﻜﺔ ‪ ،‬ﻭوﺣﺘﻰ ﺍاﻻﻥن ﺃأﻋﻤﻞ ﻓﻲ ﺷﺮﻛﺔ ‪ HRC‬ﻭوﺳﺄﺑﻘﻰ ﺑﻤﺸﻴﺌﺔ ﺍاﷲ‬ ‫ﻣﻌﻬﻢ ﺣﺘﻰ ﻳﺄﺗﻲ ﺍاﻟﻮﻗﺖ ﺍاﻟﺬﻱي ﻻﺗﻜﻮﻥن ﻟﻲ ﺍاﻟﻘﺪﺭرﺓة ﻋﻠﻰ ﺍاﻟﻌﻤﻞ ‪.‬‬ ‫ﺍاﺫذﻛﺮ ﻟﻨﺎ ﻣﻮﻗﻔﴼ ﻣﺆﺛﺮﴽ ﻓﻲ ﺣﻴﺎﺗﻚ ﻟﻦ ﺗﻨﺴﺎﻩه ﻋﻠﻰ ﻣﺮ ﺍاﻟﺴﻨﻴﻦ ؟‬ ‫ﺍاﻟﻤﻮﻗﻒ ﺍاﻟﻮﺣﻴﺪ ﻫﻮ ﻓﻘﺪﺍاﻥن ﺍاﺣﺪ ﺃأﻋﺰ ﺃأﺻﺪﻗﺎﺋﻲ ﻓﻲ ﻣﺠﺎﻝل ﺍاﻟﺘﺒﺮﻳﺪ ﺣﻴﺚ ﺗﻌﺮﺽض‬ ‫ﺻﺪﻳﻘﻲ ﻟﺤﺎﺩدﺙث ﻋﻤﻞ ﻭوﻓﻘﺪﺕت ﻋﻠﻰ ﺃأﺛﺮ ﻫﺬﺍا ﺍاﻟﺤﺎﺩدﺙث ﺻﺪﻳﻘﻲ ﺍاﻟﻤﻘﺮﺏب ﺟﺪﺍا‬ ‫ﻭوﺍاﻟﺬﻱي ﻻ ﺃأﺯزﺍاﻝل ﺃأﺗﺬﻛﺮﻩه ﺣﺘﻰ ﺍاﻷﻥن ‪.‬‬ ‫ﻣﺎﻫﻮ ﺍاﻟﻌﻤﻞ ﺍاﻟﺬﻱي ﺗﻌﺘﻘﺪ ﺑﺄﻧﻪ ﺳﺒﺐ ﻧﺠﺎﺣﻚ ؟‬ ‫ﺳﺮ ﻧﺠﺎﺣﻲ ﻫﻮ ﺍاﻟﺘﻮﻓﻴﻖ ﻣﻦ ﺍاﷲ ﻋﺰ ﻭوﺟﻞ ﺃأﻭوﻻ ﹰً ﺛﻢ ﺣﺒﻲ ﺍاﻟﺸﺪﻳﺪ ﻟﺘﻌﻠﻢ ﻛﻞ‬ ‫ﻣﺎﻫﻮ ﺟﺪﻳﺪ ﻓﺎﻟﻌﻠﻢ ﻫﻮ ﺍاﻟﺴﺮ ﻟﺪﻱي ﻭوﺃأﺣﺪ ﺍاﻟﻨﺠﺎﺣﺎﺕت ﻫﻲ ﺇإﺷﺮﺍاﻓﻲ ﻭوﻣﺘﺎﺑﻌﺔ ﻋﺪﺩد‬ ‫ﻣﻦ ﺍاﻟﻤﺸﺎﺭرﻳﻊ ﺍاﻟﻜﺒﺮﻯى ﺍاﻟﺘﻲ ﻧﻔﺬﺗﻬﺎ ﺍاﻟﺸﺮﻛﺔ ‪.‬‬ ‫ﻧﺼﻴﺤﺔ ﺗﻘﺪﻣﻬﺎ ﻟﺰﻣﻼﺋﻚ ﺍاﻟﻮﺍاﻋﺪﻳﻦ ﻓﻲ ﺍاﻟﻤﺴﺘﻘﺒﻞ ؟‬ ‫ﺃأﻭوﺻﻴﻬﻢ ﺑﺎﻹﺧﻼﺹص ﻓﻲ ﺍاﻟﻌﻤﻞ ﻭوﺍاﻟﻤﺜﺎﺑﺮﻩه ﻭوﻳﻨﺘﻈﺮﻭوﻥنﹶَ ﺑﻌﺪ ﺫذﻟﻚ ﺍاﻟﺘﻮﻓﻴﻖ ﻣﻦ‬ ‫ﺭرﺏب ﺍاﻟﻌﺎﻟﻤﻴﻦ ‪.‬‬

‫ﺑﺘﻮﺻﻴﺎﺕت ﻣﻦ ﻛﺒﺎﺭر ﻣﻬﻨﺪﺳﻲ ﺍاﻟﺘﺒﺮﻳﺪ‬ ‫ﺃأﻫﻤﻴﺔ ﺗﺠﻔﻴﻒ ﺍاﻟﻤﻮﺍاﺩد ﺍاﻟﻐﺬﺍاﺋﻴﺔ ‪ ,‬ﻭوﺧﻔﺾ ﻧﺴﺒﺔ ﺍاﻟﺮﻃﻮﺑﺔ‬ ‫ﺍاﻟﺘﺠﻔﻴﻒ ﻫﻮ ﺍاﺣﺪ ﺍاﻟﻄﺮﻕق ﺍاﻟﻤﺴﺘﺨﺪﻣﺔ ﻓﻰ ﺣﻔﻆ ﺍاﻟﻤﻮﺍاﺩد ﺍاﻟﻐﺬﺍاﺋﻴﺔ ﻋﻦ ﻃﺮﻳﻖ ﺧﻔﺾ ﻣﺎ ﺗﺤﺘﻮﻳﺔ ﻣﻦ ﺭرﻃﻮﺑﺔ ‪،‬‬ ‫ﺑﺎﺳﺘﺨﺪﺍاﻡم ﺍاﻟﺤﺮﺍاﺭرﺓة ﺗﺤﺖ ﻇﺮﻭوﻑف ﻣﻼﺋﻤﺔ ﻣﻦ ﺣﻴﺚ ﺩدﺭرﺟﺔ ﺍاﻟﺤﺮﺍاﺭرﺓة ﻭوﺩدﺭرﺟﺔ ﺍاﻟﺮﻃﻮﺑﺔ ﺍاﻟﻨﺴﺒﻴﺔ ﻭوﺳﺮﻋﺔ ﺍاﻟﻬﻮﺍاﺀء ‪ ،‬ﻣﻤﺎ ﻳﺆﺩدﻯى‬ ‫ﺇإﻟﻰ ﻧﻘﺺ ﻣﺎ ﺗﺤﺘﻮﻳﺔ ﺍاﻟﻤﻮﺍاﺩد ﺍاﻟﻤﺠﻔﻔﺔ ﻣﻦ ﺭرﻃﻮﺑﺔ ‪ ،‬ﻭوﺑﺎﻟﺘﺎﻟﻰ ﺗﺮﺗﻔﻊ ﻧﺴﺒﺔ ﺍاﻟﻤﻮﺍاﺩد ﺍاﻟﺼﻠﺒﺔ ﺇإﻟﻰ ﺍاﻟﺤﺪ ﺍاﻟﺬﻯى ﻳﻘﻒ ﻋﻨﺪﻩه‬ ‫ﻧﻤﻮ ﻣﻌﻈﻢ ﺍاﻷﺣﻴﺎﺀء ﺍاﻟﺪﻗﻴﻘﺔ ﻣﻊ ﻋﺪﻡم ﺍاﻹﺿﺮﺍاﺭر ﻣﺎ ﺃأﻣﻜﻦ ﺑﺼﻔﺎﺕت ﺍاﻟﻤﺎﺩدﺓة ﺍاﻟﻐﺬﺍاﺋﻴﺔ ﻣﺜﻞ ﺍاﻟﻠﻮﻥن ﺃأﻭو ﺍاﻟﻘﻴﻤﺔ ﺍاﻟﻐﺬﺍاﺋﻴﺔ ‪،‬‬ ‫ﻭوﻋﻠﻰ ﻫﺬﺍا ﺍاﻷﺳﺎﺱس ﺗﺠﻔﻒ ﺍاﻟﺨﻀﺮﻭوﺍاﺕت ﺇإﻟﻰ ﺣﺪ ﺃأﻗﺼﺎﻩه ‪ %5‬ﻓﻰ ﺣﻴﻦ ﺗﺠﻔﻒ ﺍاﻟﻔﺎﻛﻬﺔ ﺇإﻟﻰ ‪ ، %24‬ﻭوﺫذﻟﻚ ﻻﺣﺘﻮﺍاﺋﻪ ﻋﻠﻰ‬ ‫ﻧﺴﺒﺔ ﻣﺮﺗﻔﻌﺔ ﻣﻦ ﺍاﻟﻤﻮﺍاﺩد ﺍاﻟﺼﻠﺒﺔ ﺍاﻟﺬﺍاﺋﺒﺔ ‪ ،‬ﻭوﺍاﻟﺘﻰ ﻳﺼﻞ ﺗﺮﻛﻴﺰﻫﺎ ﺑﻌﺪ ﺍاﻟﺘﺠﻔﻴﻒ ﺇإﻟﻰ ﺃأﻛﺜﺮ ﻣﻦ ‪ %70‬ﻓﺘﻌﻤﻞ ﻛﻌﺎﻣﻞ‬ ‫ﻣﺴﺎﻋﺪ ﻟﻠﺤﻔﻆ ‪.‬‬ ‫ﻭوﻣﺼﺪﺭر ﺍاﻟﺤﺮﺍاﺭرﺓة ﺍاﻟﻤﺴﺘﺨﺪﻣﺔ ﻓﻰ ﺍاﻟﺘﺠﻔﻴﻒ ) ﺇإﻣﺎ ﺃأﻥن ﻳﻜﻮﻥن ﻃﺒﻴﻌﻴﺎ ﹼّ ( ﺃأﻯى ﺑﺘﻌﺮﻳﺾ ﺍاﻟﻤﻮﺍاﺩد ﺍاﻟﻐﺬﺍاﺋﻴﺔ ﻷﺷﻌﺔ ﺍاﻟﺸﻤﺲ‬ ‫ﻭوﺍاﻟﺤﺮﻛﺔ ﺍاﻟﻄﺒﻴﻌﻴﺔ ﻟﻠﻬﻮﺍاﺀء ﻭوﻳﻌﺮﻑف ﻫﺬﺍا ﺍاﻟﻨﻮﻉع ﺑﺎﻟﺘﺠﻔﻴﻒ ﺍاﻟﻄﺒﻴﻌﻰ ﺃأﻭو ﺍاﻟﺸﻤﺴﻰ ﺃأﻭو ﺗﻜﻮﻥن ﺍاﻟﺤﺮﺍاﺭرﺓة ﺍاﻟﻤﺴﺘﺨﺪﻣﺔ ﻓﻰ‬ ‫ﺍاﻟﺘﺠﻔﻴﻒ ) ﻣﻮﻟﺪﺓة ﺻﻨﺎﻋﻴﺎ ( ﻋﻦ ﻃﺮﻳﻖ ﺣﺮﻕق ﻣﻮﺍاﺩد ﺍاﻟﻮﻗﻮﺩد ﻛﺎﻟﻔﺤﻢ ﻭوﺍاﻟﺰﻳﻮﺕت ﺃأﻭو ﺑﺎﺳﺘﺨﺪﺍاﻡم ﺍاﻟﻜﻬﺮﺑﺎﺀء ﻭوﻳﻌﺮﻑف ﻫﺬﺍا‬ ‫ﺍاﻟﻨﻮﻉع ﺑﺎﻟﺘﺠﻔﻴﻒ ﺍاﻟﺼﻨﺎﻋﻰ ﻭوﺻﻨﺎﻋﺔ ﺍاﻟﺘﺠﻔﻴﻒ ﻋﻤﻠﻴﺔ ﻣﻌﺮﻭوﻓﺔ ﻣﻨﺬ ﻗﺪﻣﺎﺀء ﺍاﻟﻤﺼﺮﻳﻴﻦ ﻭوﻣﺎﺯزﺍاﻟﺖ ﺣﺘﻰ ﺍاﻵﻥن ﺣﻴﺚ‬ ‫ﻳﺠﻔﻒ ) ﺍاﻟﺒﺎﻣﻴﺎ – ﺍاﻟﻤﻠﻮﺧﻴﺔ – ﺍاﻟﺒﻠﺢ – ﺍاﻟﺘﻴﻦ – ﺍاﻟﻌﻨﺐ ‪ -‬ﺍاﻟﻤﺸﻤﺶ ( ﺷﻤﺴﻴﺎ ﻓﻰ ﻣﺼﺮ ﻟﻜﻦ ﻓﻰ ﺍاﻟﻔﺘﺮﺓة ﺍاﻷﺧﻴﺮﺓة‬ ‫ﺍاﺯزﺩدﻫﺮﺕت ﺻﻨﺎﻋﺔ ﺍاﻟﺘﺠﻔﻴﻒ ﻭوﺗﻘﺪﻣﺖ ﻛﺜﻴﺮﺍا ﹼّ ﻭوﺍاﺳﺘﻤﺮ ﺍاﻟﺘﻘﺪﻡم ﻣﻨﺬ ﺫذﻟﻚ ﺍاﻟﺤﻴﻦ ﺇإﻟﻰ ﺟﺎﻧﺐ ﺍاﻟﺘﻘﺪﻡم ﺍاﻟﻌﻠﻤﻰ ‪ ،‬ﻭوﺃأﻧﺘﺠﺖ‬ ‫ﺃأﻏﺬﻳﺔ ﺗﻤﺘﺎﺯز ﺑﺠﻮﺩدﺓة ﺍاﻟﻄﻌﻢ ﺍاﻟﻘﻴﻤﺔ ﺍاﻟﻐﺬﺍاﺋﻴﺔ ﻛﻤﺎ ﺃأﻣﻜﻦ ﺑﻔﻀﻞ ﺍاﻟﺘﻘﺪﻡم ﺍاﻟﻌﻠﻤﻲ ﺗﺠﻔﻴﻒ ﺃأﻧﻮﺍاﻉع ﻣﻦ ﺍاﻷﻏﺬﻳﺔ ﻟﻢ ﺗﻜﻦ‬ ‫ﺗﺠﻔﻒ ﻣﻦ ﻗﺒﻞ ﻣﺜﻞ ﺍاﻟﻠﺒﻦ ﻭوﺍاﻟﻌﺼﻴﺮ ﻭوﺍاﻟﺒﻴﺾ ﻭوﺍاﻟﺤﺴﺎﺀء ‪.‬‬ ‫ﻭوﺣﺎﻟﻴﺎ ﻳﻌﺘﺒﺮ ﺍاﻟﺘﺠﻤﻴﺪ‪ -‬ﻭوﻫﻮ ﺗﺠﻔﻴﻒ ﺍاﻟﻤﻮﺍاﺩد ﺗﺤﺖ ﺩدﺭرﺟﺎﺕت ﺣﺮﺍاﺭرﺓة ﺍاﻟﺘﺠﻤﻴﺪ – ﻣﻦ ﺃأﺣﺪﺙث ﻃﺮﻕق ﺍاﻟﺘﺠﻤﻴﺪ ﺣﻴﺚ ﻳﺘﺨﻠﺺ‬ ‫ﻣﻦ ﺍاﻟﺮﻃﻮﺑﺔ ﺑﺘﻌﺮﻳﺾ ﺍاﻟﻤﻮﺍاﺩد ﺍاﻟﻐﺬﺍاﺋﻴﺔ ﺍاﻟﻤﺮﺍاﺩد ﺗﺠﻤﻴﺪﻫﺎ ﻟﺘﻔﺮﻳﻎ ﻳﻜﺎﺩد ﻳﻜﻮﻥن ﺗﺎﻣﺎ ﹼّ ﻓﻴﺘﺤﻮﻝل ﺍاﻟﺜﻠﺞ ﺍاﻟﻤﻮﺟﻮﺩد ﺑﺎﻟﻤﺎﺩدﺓة‬ ‫ﺍاﻟﻐﺬﺍاﺋﻴﺔ ﻣﻦ ﺍاﻟﺤﺎﻟﺔ ﺍاﻟﺼﻠﺒﺔ ﺇإﻟﻰ ﺍاﻟﺤﺎﻟﺔ ﺍاﻟﻐﺎﺯزﻳﺔ ﻣﺒﺎﺷﺮﺓة ) ﺑﺎﻟﺘﺴﺎﻣﻰ ( ﺇإﻻ ﺃأﻥن ﻫﺬﻩه ﺍاﻟﻄﺮﻳﻘﺔ ﺗﺤﺘﺎﺝج ﺇإﻟﻰ ﺃأﺟﻬﺮﺓة‬ ‫ﻣﺮﺗﻔﻌﺔ ‪.‬‬ ‫ﺍاﻷﻫﻤﻴﺔ ﺍاﻻﻗﺘﺼﺎﺩدﻳﺔ ﻟﻠﺘﺠﻔﻴﻒ ‪:‬‬ ‫ﻳﻌﺘﺒﺮ ﺍاﻟﺘﺠﻔﻴﻒ ﻣﻦ ﺃأﺭرﺧﺺ ﻃﺮﻕق ﺍاﻟﺤﻔﻆ ﻻﻧﺨﻔﺎﺽض ﺗﻜﺎﻟﻴﻒ ﺍاﻹﻧﺘﺎﺝج ﻭوﺍاﻟﻌﺒﻮﺍاﺕت‪ ،‬ﻭوﻋﺪﻡم ﺍاﻟﺤﺎﺟﺔ ﺇإﻟﻰ ﺇإﺿﺎﻓﺔ ﻣﻮﺍاﺩد‬ ‫ﺣﺎﻓﻈﺔ ﺃأﺧﺮﻯى ﺃأﻭو ﺗﺨﺰﻳﻨﻬﺎ ﻓﻰ ﻏﺮﻑف ﺍاﻟﺘﺒﺮﻳﺪ ‪ ،‬ﻛﻤﺎ ﺃأﻥن ﻋﻤﻠﻴﺔ ﺍاﻟﺘﺠﻔﻴﻒ ﺗﺨﻔﺾ ﻣﻦ ﺗﻜﺎﻟﻴﻒ ﺍاﻟﻨﻘﻞ ﻭوﺍاﻟﺸﺤﻦ ﻭوﺍاﻟﺘﺨﺰﻳﻦ‬ ‫ﻟﻠﻤﻮﺍاﺩد ﺍاﻟﻤﺠﻔﻔﺔ ﻧﺘﻴﺠﺔ ﻟﻘﻠﺔ ﻭوﺯزﻧﻬﺎ ﻭوﺣﺠﻤﻬﺎ ﻭوﺗﻮﺍاﺟﺪ ﺍاﻷﻏﺬﻳﺔ ﺍاﻟﻤﺤﻔﻮﻇﺔ ﺑﺎﻟﺘﺠﻔﻴﻒ ﻋﻠﻰ ﻣﺪﺍاﺭر ﺍاﻟﺴﻨﺔ ﻛﻤﺎ ﻳﻤﻜﻦ‬ ‫ﺍاﻻﺣﺘﻔﺎﻅظ ﺑﺄﻛﺒﺮ ﻗﺪﺭر ﻣﻤﻜﻦ ﻣﻦ ﺻﻔﺎﺕت ﺍاﻟﻤﻮﺍاﺩد ﺍاﻟﻐﺬﺍاﺋﻴﺔ ﺍاﻟﻄﺎﺯزﺟﺔ ﻭوﺫذﻟﻚ ﻃﺎﻟﻤﺎ ﻛﺎﻥن ﻫﻨﺎﻙك ﻋﻨﺎﻳﺔ ﻛﺎﻓﻴﺔ ﻓﻰ‬ ‫ﺗﺼﻨﻴﻌﻬﺎ ﻭوﺗﺨﺰﻳﻨﻬﺎ ‪.‬‬ ‫ﻭوﻳﺠﺐ ﻗﺒﻞ ﺍاﻟﺒﺪﺀء ﻓﻰ ﻋﻤﻠﻴﺔ ﺍاﻟﺘﺠﻔﻴﻒ ﺍاﺧﺘﻴﺎﺭر ﻭوﺳﻴﻠﺔ‬ ‫ﺍاﻟﺘﺠﻔﻴﻒ ﺍاﻟﻤﻨﺎﺳﺒﺔ ﻟﻄﺒﻴﻌﺔ ﻭوﺧﻮﺍاﺹص ﺍاﻟﻤﻮﺍاﺩد ﺍاﻟﻐﺬﺍاﺋﻴﺔ ﺍاﻟﻤﺮﺍاﺩد‬ ‫ﺗﺠﻔﻴﻔﻬﺎ ﺇإﺫذ ﺃأﻥن ﻃﺮﻳﻘﺔ ﺗﺠﻔﻴﻒ ﺍاﻟﻠﺤﻮﻡم ﻭوﺍاﻟﺪﻭوﺍاﺟﻦ ﻭوﺍاﻷﺳﻤﺎﻙك‬ ‫ﻣﺜﻼﹼّ ﺗﺨﺘﻠﻒ ﻋﻦ ﻃﺮﻳﻖ ﺍاﻟﻠﺒﻦ ﻭوﻣﻨﺘﺠﺎﺗﺔ ‪.‬‬ ‫ﻭوﻟﻀﻤﺎﻥن ﺍاﻟﺤﺼﻮﻝل ﻋﻠﻰ ﻣﻨﺘﺞ ﻣﺠﻔﻒ ﺟﻴﺪ ﻳﺠﺐ ﺿﺒﻂ ﻛﺎﻓﺔ‬ ‫ﺍاﻟﻌﻤﻠﻴﺎﺕت ﺍاﻟﻼﺯزﻣﺔ ﻗﺒﻞ ﺍاﻟﺒﺪﺀء ﻓﻰ ﻋﻤﻠﻴﺔ ﺍاﻟﺘﺠﻔﻴﻒ ﻭوﺍاﺛﻨﺎﺋﻬﺎ‬ ‫ﻭوﺑﻌﺪ ﺍاﻻﻧﺘﻬﺎﺀء ﻣﻨﻬﺎ ‪ ،‬ﻓﻌﻠﻰ ﺳﺒﻴﻞ ﺍاﻟﻤﺜﺎﻝل ﻗﺪ ﻳﺴﺘﻠﺰﻡم ﺍاﻷﻣﺮ‬ ‫ﻗﺒﻞ ﺇإﺟﺮﺍاﺀء ﻋﻤﻠﻴﺔ ﺍاﻟﺘﺠﻔﻴﻒ ﺇإﺟﺮﺍاﺀء ﻋﻤﻠﻴﺔ ﺍاﻟﻔﺮﺯز ﻭوﺍاﻟﺘﻨﻈﻴﻒ‬ ‫ﻭوﺍاﻟﺘﻘﺸﻴﺮ ﻭوﺍاﻟﺘﻘﻄﻴﻊ ‪ ،‬ﻭوﺭرﺑﻤﺎ ﻳﺴﺘﻠﺰﻡم ﺍاﻷﻣﺮ ﺍاﻳﻀﺎ ﹼّ ﺇإﺟﺮﺍاﺀء ﻋﻤﻠﻴﺔ‬ ‫ﻧﻘﻊ ﻓﻰ ﻣﺎﺩدﺓة ﻛﻴﻤﻴﺎﺋﻴﺔ ﻣﺜﻠﻤﺎ ﻳﺤﺪﺙث ﻋﻨﺪ ﺗﺠﻔﻴﻒ ﺍاﻟﻌﻨﺐ‬ ‫ﻹﻧﺘﺎﺝج ﺍاﻟﺰﺑﻴﺐ ﺃأﻭو ﺍاﻟﺒﺮﻗﻮﻕق ﻹﻧﺘﺎﺝج ﺍاﻟﻘﺮﺍاﺻﻴﺎ ﺑﺎﻟﻄﺮﻕق ﺍاﻟﺸﻤﺴﻴﺔ‬ ‫ﻭوﻗﺪ ﺗﺠﺮﻯى ﻋﻤﻠﻴﺔ ﺗﺒﻴﻴﺾ ﻟﺒﻌﺾ ﺍاﻟﻔﻮﺍاﻛﻪ ﻛﺎﻟﻤﺸﻤﺶ ﺃأﻭو‬ ‫ﺗﺠﺮﻯى ﻋﻤﻠﻴﺔ ﻛﺒﺮﺗﺔ ﻟﻠﺒﻌﺾ ﺍاﻵﺧﺮ ﺑﻐﺮﺽض ﺍاﻟﻤﺤﺎﻓﻈﺔ ﻋﻠﻰ‬ ‫ﺍاﻟﻠﻮﻥن ﻛﻤﺎ ﻓﻰ ﺣﺎﻟﺔ ﺍاﻟﻤﺸﻤﺸﻴﺔ ﻭوﺍاﻟﺰﺑﻴﺐ ‪.‬‬ ‫ﻭوﻣﻦ ﺍاﻟﻼﺯزﻡم ﺇإﺟﺮﺍاﺀء ﺑﻌﺾ ﺍاﻟﻌﻤﻠﻴﺎﺕت ﺑﻌﺪ ﺍاﻧﺘﻬﺎﺀء ﻋﻤﻠﻴﺔ ﺍاﻟﺘﺠﻔﻴﻒ ﺣﻴﺚ ﺗﺨﺘﻠﻒ ﻣﻦ ﻣﺎﺩدﺓة ﺇإﻟﻰ ﺃأﺧﺮﻯى ﻭوﻣﻦ ﻫﺬﻩه‬ ‫ﺍاﻟﻌﻤﻠﻴﺎﺕت ﺍاﻟﺘﺮﻃﻴﺐ – ﺍاﻟﺘﻐﻠﻴﻒ – ﺍاﻟﺒﺴﺘﺮﺓة ﻭوﺟﻤﻴﻌﻬﺎ ﻋﻤﻠﻴﺎﺕت ﺍاﻟﻐﺮﺽض ﻣﻨﻬﺎ ﺗﺠﺎﻧﺲ ﺗﻮﺯزﻳﻊ ﺍاﻟﺮﻃﻮﺑﺔ ﻭوﺣﻤﺎﻳﺔ ﺍاﻟﻤﺎﺩدﺓة‬ ‫ﺍاﻟﻤﺠﻔﻔﺔ ﻣﻦ ﺍاﻟﺘﻠﻮﺙث ﻭوﺇإﻃﺎﻟﺔ ﻣﺪﺓة ﺣﻔﻈﻬﺎ‬ ‫ﻓﻲ ﺣﺎﻟﺔ ﺍاﺳﺘﺨﺪﺍاﻡم ﺍاﻟﺘﺠﻔﻴﻒ ﺍاﻟﺼﻨﺎﻋﻲ ﻟﻠﻤﻮﺍاﺩد ﺍاﻟﻐﺬﺍاﺋﻴﺔ ﻻﺑﺪ ﻣﻦ ﺗﻮﻓﻴﺮ ﺑﻌﺾ ﺍاﻟﻀﻮﺍاﺑﻂ ﻟﻠﺴﻴﻄﺮﺓة ﻋﻠﻰ ﻋﻤﻠﻴﺔ‬ ‫ﺍاﻟﺘﺠﻔﻴﻒ ﺃأﺛﻨﺎﺀء ﺇإﺟﺮﺍاﺋﻬﺎ ﻭوﺗﺘﻤﺜﻞ ﻓﻰ ‪:‬‬ ‫‪ -1‬ﺿﺒﻂ ﺩدﺭرﺟﺔ ﺍاﻟﺤﺮﺍاﺭرﺓة ﺍاﻟﻤﺴﺘﺨﺪﻣﺔ ﻓﻰ ﻋﻤﻠﻴﺔ ﺍاﻟﺘﺠﻔﻴﻒ ﻭوﺍاﻟﺘﻰ ﺗﺨﺘﻠﻒ ﻣﻦ ﻣﺎﺩدﺓة ﻷﺧﺮﻯى ﻭوﻣﻦ ﻃﺮﻳﻘﺔ ﻷﺧﺮﻯى‪.‬‬ ‫‪ -2‬ﺿﺒﻂ ﺍاﻟﺮﻃﻮﺑﺔ ﺍاﻟﻨﺴﺒﻴﺔ ﻟﻠﻬﻮﺍاﺀء ‪.‬‬ ‫‪ -3‬ﺿﺒﻂ ﺳﺮﻋﺔ ﺍاﻟﻬﻮﺍاﺀء ‪.‬‬ ‫‪ -4‬ﺿﺒﻂ ﻣﺎﺩدﺓة ﺍاﻟﺘﺠﻔﻴﻒ ‪.‬‬
