Quando si parla di Paolino si pensa subito ai totani con le patate. È un piatto povero caprese. Le patate abbondavano e la notte si andava a totani perché il mare li regalava in grandi quantità. I Bagni di Tiberio erano della nonna e dall’età di 8 anni sono cresciuto con questo piatto già a colazione. Cosa altro ricorda? Mia zia cucinava piatti irripetibili. Gateau di patate, ravioli e parmigiane di un sapore mai più provato, ma cucinava di spalle e i segreti delle sue ricette restano tali. Qualche segreto deve averlo svelato visto il vostro successo. Il segreto è non cambiare. Rispettare i sapori capresi. Oggi cosa la gratifica? L’altra sera c’era uno dei piloti dell’Air Force One con il suo equipaggio e diceva che su tutti i loro aerei c’è la lista dei ristoranti migliori di ogni paese del mondo. Noi in Italia siamo al primo posto. Un evento che ricorda con affetto? Il compleanno di Paola di Liegi qui da noi e il matrimonio di Nila Caravita di Sirignano ai Bagni di Tiberio. A Marina Grande Sofia Loren girava La Baia di Napoli e mi regalò un gelato. A chi è legato sull’isola? A Peppino di Capri. Lo ascolto sempre con piacere.

When someone says “Paolino”, the first thing that comes to one’s mind is squids with potatoes. It is a traditional and simple Caprese dish. Once, the island was rich in potatoes and the waters were teeming with squids. My grandmother owned the Bagni di Tiberio beach resort and, from the age of eight, I was raised on this dish. What other memories do you have? My aunt used to prepare the most delicious dishes: the best potato cake, ravioli pasta and eggplant Parmesan I have ever tasted. But she cooked with her back turned and her secret recipes have never been uncovered. She must have shared at least a few recipes, considering how popular your restaurant is. The secret is to remain faithful to traditional Caprese flavours. What do you find the most gratifying today? The other night, one of the Air Force One pilots, with the crew, was dining at our restaurant and told me that they have a list of the world’ top restaurants on each of their airplanes . We rank at the top of the Italian restaurant list. One of your dearest memories? When Princess Paola of Liège celebrated her birthday at our restaurant and Nila Caravita di Sirignano’s wedding reception at Bagni di Tiberio. In Marina Grande, Sofia Loren shot for her role in It Started in Naples and she gave me an ice-cream cone. Whom are you fond of on the island? Peppino di Capri. A great artist, I have always admired him. I always enjoy listening to his music.
