Salvia Ripiena Fritta Fried Stuffed Sage

Ingredients (serves 4) • large fresh sage leaves • 100 g of flour • anchovies • 1 egg • salt • 3 table spoon of olive oil • tooth picks

Select the biggest sage leaves carefully. Wash them, then dry them by placing on some absorbent paper. Place in a mixing bowl and beat the egg with a pinch of salt. Dip the leaves in the egg. Between 2 leaves add an anchovy fillet and then secure them together with a tooth pick. Re-pass through the egg mixture then toss in the flour. Add immediately in the preheated oil, hot enough for fast frying. Fry very quickly and serve immediately.
