A note from The Managing Director 2014 was a milestone year for The Emirates Academy of Hospitality Management for a number of reasons. Our 10th Graduating Cohort, the successful hosting of the 32nd EuroCHRIE Conference, and a record number of students joining EAHM across our three intakes. EAHM celebrates its 10th Graduating Cohort

Congratulations Graduates of 2014! The Emirates Academy of Hospitality Management (EAHM) is delighted to have celebrated the graduation ceremony for its 10th graduating cohort at Jumeirah Emirates Towers this past November. We celebrated the graduation of 60 students from 27 different countries, All of whom received their degrees from EAHM with smiling faces and support from a cheering audience. Of the graduates, 33 completed the “Bachelor of Science (Hons.) in International Hospitality Management” degree, 12 completed their “Master of Business Administration in International Hospitality Management” degree, and 14 completed their “Associate of Science in International Hospitality Operations” degree. The keynote address was delivered by Dr. Abdulla Al Karam, Chairman of the Board of Directors and Director General, Knowledge and Human Development Authority (KHDA). Other distinguished speakers included Mr. Gerald Lawless, President and Group Chief Executive Officer of the Jumeirah Group, and Mr. Ron Hilvert, Managing Director of EAHM. Commenting on the graduating class, Dr. Stuart Jauncey, Dean of The Emirates Academy of Hospitality Management, said: “These students are not only professionally orientated, but also skilled in business disciplines and well-grounded in the different operational activities that contribute to the provision of hospitality. We believe that these graduates are well prepared for the next stage in their lives, and all of us look forward to hearing of their future successes and achievements. At EAHM, most of the graduates are employed within six months of graduation. Alumni of EAHM have been employed by over 100 companies worldwide and work in over 90 countries. Page 3


EuroCHRIE The Emirates Academy of Hospitality Management (EAHM) is proud to have hosted the 32nd European Council on Hotel, Restaurant and Institutional Education (EuroCHRIE) Conference in Dubai on 6 - 9 October, 2014. More than 250 delegates from over 50 countries, representing around 100 institutions from the Americas, Europe, the Middle East, and Asia-Pacific attended the conference, and were all warmly welcomed by EAHM faculty, staff and students.

As a precursor to the conference, EAHM hosted “Train the Trainer” sessions jointly offered by the International CHRIE, STR Share Center, and the American Hotel and Lodging Educational Institute. Steve Hood, Senior Vice President from the STR Share Center facilitated the course, which resulted in several hoteliers receiving their “Certification in Hotel Industry Analytics.” The EuroCHRIE Conference kicked off at sunset on the Sundeck of Jumeirah Beach

Hotel, where delegates caught up with old members, welcomed new delegates, and anticipated the conference events to come, all while admiring the Burj Al Arab in the background.

The opening ceremony began with a welcoming address from EuroCHRIE President Jan Meierhoff, Gerald Lawless, President & Group CEO of Jumeirah Group and Ron Hilvert, Managing Director of EAHM. Conference Chair Dr. John Fong, Director of Marketing and International Relations and Associate Professor at EAHM, introduced the first keynote speakers of the conference: David Russell, Chairman of The Total Simulation Company, Gaurav Sinha, Founder & CEO of Insignia Worldwide and Steve Hood, Senior Vice President of STR SHARE Center. In the afternoon, delegates attended paper presentations delivered by fellow delegates, in addition to workshops on THE-ICE’s accreditation process and hospitality and tourism changes in Africa, to name a few. The day finished with Futuristic NEoN (New Era of Networking) Night at Jumeirah Beach Hotel’s Beachcombers restaurant, where the highlight was a surprise projection of the EuroCHRIE logo on the Burj Al Arab!

The next day commenced with three more keynote presentations by Salwan Finj, Divison Head and Regional Senior Key Account Manager of LG Electronics, Peter Stark, President of REDGlobal and James Mabey, Senior Vice President of Development in the Asia Pacific Jumeirah Group. Delegates were treated in the afternoon by many more impressive paper presentations and workshops. The conference ended with the Gala Dinner Award Ceremony, which saw outstanding individuals and organisations within the hospitality and tourism industry being recognised through an array of illustrious awards.

Industry Liaison / Awards & Recognition Internship Most of our first year students start their internship in July, and in 2014 we had approximately 70 students setting out to many locations and taking up a variety of roles. An internship is such an exciting and rewarding period for students at EAHM, as they enter hospitality organisations across the world. Many of our students choose to do their internship in Dubai and this is a reflection of Dubai’s growing status

as a destination that offers extraordinary experiences for travelers. EAHM students can intern in hotels & resorts, event companies, airlines, luxury products and consultancy companies around the world. EAHM offers our students ongoing support whilst they are on internship in the form of correspondence, telephone calls and personal visits. EAHM is never far away!

ALUMNI This year is the 10th anniversary of the first EAHM graduation. A significant milestone that deserves celebration! With this in mind, the Alumni Association will be relaunched to coincide with the anniversary.

Culinary Events MLA (Meat & Livestock Australia) Workshop Sometime ago, we spent a full day with Tarek Ibrahim from MLA. The field trip started at 8:00am in the morning, as we headed towards the warehouse to actually visualise the process of meat storage, packaging and identification of the meat carcass in Al Quoz. This was followed by a visit to Prime Gourmet’s kitchen area, where we witnessed how to display meat in a retail outlet. After this, we came back to the EAHM and had a full fledge theory session to understand all the concepts involved and we were subject to hands on practical exposure to the meat. We learned how to work with the meat using butchery skills, the correct way to look at the meat for the quality points and how we cook the different types of cuts correctly. The long day ended with rewards of tasting the cooked meat!

Galleries Lafayette Cheese Presentation We finished our morning cup of coffee at EAHM and headed straight to Galleries Lafayette at the Dubai Mall to visit the cheese room, situated in the food halls where Elie Makhlouf from Promar Trading was conducting a seminar on cheese. We learned a lot in terms of prime regions of production, types of milk, the process of making, maturing, storing and serving cheese along with varieties of cheese samples and how to consume it in correct order. Lots of tasting went on until the cheese boards wore a deserted look. This was the first visit to the venue and will feature regularly in our calendar. A totally thrilling experience with lots of mouthwatering cheese to add to the taste buds.

Olecea

Trimester 2 of 2014 saw the immense success of Olecea - Olives & Oil. As an integral part of their Food and Beverage Management course, the second year students invested their sweat, passion and many sleepless nights into this restaurant project over four weeks. They developed a Mediterranean casual dining concept that did not only convince EAHM’s students and staff, but also outsiders. !CON was transformed completely into a relaxed Mediterranean oasis that offered high quality food in a cozy ambiance. A great part of this success was due to Olecea’s own resident DJ, Rami Talj, a second year student and to the amazing mocktails of Jean-Thomas Naudo. The infamous Rosemary Chocolate Tart with Lavender Ice Cream was the star of the culinary side. Other exciting combinations such as the Gorgonzola Panna Cotta or the Mediterranean Slow Cooked Beef exceeded everybody’s expectations. The popular outside seating area saw its own special offer with a special taste of Olecea in a great ambiance. Everybody was quite aware and involved in Olecea due to the great marketing. The high presence on Facebook with many funny videos and mouthwatering images increased the appetite of guests to come. Teaser events with mocktail tryouts saw an amazing response from students & staff and pushed the team even further. The challenge of an outside catering event at the British Embassy in Dubai was yet faced by the students. With great passion, an amazing concept and the much appreciated assistance by the F&B lecturers, as well as Abdul and Subair, all guests were convinced of the great canapés and the group’s engagement. It was an utter treat to watch the enthusiasm of the restaurant project team and taste their sumptuous variety of mocktails. It is sure that nobody will forget this great concept soon, as all guests left with a little taste of Olecea’s oil and a recipe booklet. As we all know, it was definitely a THYME TO RELAX! Monin Mocktail Competition

Something Smells Fishy

In November, EAHM hosted a mocktail competition for its students sponsored by Monin. Russell Sanchez and Hemant Tinoo from Monin UAE assisted Food and Beverage Service lecturer Max Rauch in setting up the competition in which 12 EAHM students prepared a mocktail for four judges. The students competed across four heats, with the final round consisting of a mystery box challenge, until three winners were announced. Congrats to 1st, 2nd, and 3rd place winners Daria Avedian, Nicholas Zhang, and Sanchit Aggarwal.

Chefs from Jumeirah Emirates Towers held an exciting demonstration for students on sushi, explaining the history of sushi, their unique classifications, and how to assemble it correctly. In addition, Mark Allen from “Wet Fish” showcased an array of fresh fish to the students,

Housekeeping The content for the housekeeping module in 2014 has again been reviewed and updated in order to try and make the subject more engaging and informative for the students in the first year and to stimulate interest in housekeeping as an international career, an area where there is a recognized shortage of industry professionals. Hege Aamo, Resort Executive Housekeeper for Madinat Jumeirah, again reprised her role as guest speaker on the module, but this trimester included a great session on Hotel Room Design and Concept which the students used to support their presentations and subsequently the quality of mood boards this year was much improved with the best board being displayed in the library. In addition there were sessions on careers, opening and pre-opening problems for an executive housekeeper and two highly enjoyable practical classes in which the students made towel animals and in the last session for the trimester were given a flower arranging demonstration. Students were then given the opportunity to make a number of table decorations and corsages. The Jumeirah housekeeping staff and flower department made an invaluable contribution in terms of organizing and managing the sessions. Site visits this year also provided students with a wider awareness of the issues of managing the housekeeping department at the Burj Al Arab and for managing the laundry operations here on site. Students responded very positively to the course overall and it is hoped to build on this success for the new trimester in September this year. JW Marriott Hotel Two groups from EAHM went to the JW Marriott Marquis Hotel in Dubai, and it was an enlightening visit with a show around, as well as a video presentation in the JW Marriott’s Dubai Ballroom, their largest hall. There were show around tours that taught students about the different kinds of events and conferences that go on and the beautiful views of the world’s tallest tower hotels were a treat. There were also tours of the F&B outlets in the hotel and all the staff and tour guides were welcoming to all the questions students had. A lot was learnt and we’re very grateful to the JW Marriott Marquis for the excellent experience! His able assistant Bashir demonstrated with extreme skill how to properly fillet a fish, and several students volunteered to go head-to-head with him in a phenomenal skill test postdemonstration.

Raw Coffee Tour Students visited Raw Coffee, located in Al Quoz, which serves 100% Fairtrade organic coffee. Kim and Matt shared their knowledge, expertise and experiences on various types of coffee, origins, and the roasting. Students were also treated to a demonstration of the whole process, right from purchasing the beans to roasting to making a delicious cup of hot coffee. Inside Scoop My Experience at the Noodle House All my life I only wished to become a chef, and when it was time to do my 22 weeks internship, I took the chance and did my experience at Jumeirah’s very own Noodle House. I was lucky to get this opportunity and took full advantage of it. The Noodle House is a casual dining restaurant, which serves a variety of choices from the South-East Asian region. It is considered to be the flagship restaurant of Jumeirah Restaurants LLC. The unique aspect about the Noodle House is all of the staff are fun to work with and are very humble.

At the end of my internship, one of my colleagues told me: “ At the beginning, we were scared to talk to you because you are a local, but as the time passed by we saw how sweet and caring you are.” They say to be able to become a great manager, one has to understand how the operational side of the business is being run. Therefore, my experience at the Noodle House is the beginning of my future.

industry to develop my talents and passions. Life at EAHM is quite extraordinary. With a small student body of 300 representing 62 nationalities, EAHM boasts quite a diverse community. EAHM is part of the Jumeirah Group, which allows students to take their internships in 5-star hotels all around the world! Without the knowledge I gained at EAHM, passing the internship course would have been a difficult task.

As the Burj Al Arab is visited by many VIP guests, how was it working with guests at such a level? At first it was difficult, but after a while when I got used to the hotel operations, I began to appreciate the unique learning experience each day offered. Rauf Garalov is a second year student pursuing his Bachelor of Science in International Hospitality Management (BSc) at the EAHM. His dedication to hospitality across both academia and work experience, especially during his six-month internship at the world-renowned Burj Al Arab enabled him to receive a scholarship. Following are some of the questions We asked Rauf about his rewarding experience during his internship at the iconic Burj Al Arab and his education at EAHM:

How did you receive a scholarship to study EAHM?

What would you say to students who are going to study at EAHM?

During my shift in one of the restaurants at Burj Al Arab, I met with the owner of the hotel Rixos Quba, and he liked how I served. As a result, he offered to pay for my contract at EAHM. Additionally, after my studies, I will have a guaranteed place in the hotel Rixos Quba in Azerbaijan.

I feel that this is the perfect learning environment for students eager to explore the diverse modules of hospitality. Moreover, the international exposure that each student can gain would not only be beneficial for their career development, but would also boost their confidence, taking them a step forward to become successful leaders in the hospitality world. Additionally, the practical work offered at EAHM enables the students to enhance their networking and communication skills by building strong bonds and establishing longlasting relationships through internships and part-time jobs.

What are your impressions of EAHM? Do you like to study here, and, if so, why? Since childhood I have been fascinated by the tourism and hospitality industry, and EAHM has enabled me to pursue many facets of the


Professional Training & Development (PT&D) Darley Flying Start Darley Flying Start is an initiative founded by His Highness Sheikh Mohammed Bin Rashid Al Maktoum. The programme offers full scholarships to individuals that want to study and immerse themselves in the global thoroughbred industry. This industry is regarded as a specific niche, which requires highly specialized and impassioned employees.

While the programme receives more than 1,000 applicants, only 12 are accepted annually. Running over 2 years, students travel between Ireland, England, USA, Australia and UAE. They participate in practical horse management, work placements, industry site visits and business management modules. Dubai International Thoroughbred Internship Programme By Marina Rizzi A subsidiary of Darley Flying Start, this 10 month practical programme, gives promising Chinese university graduates the opportunity to study and engage in the global thoroughbred industry. The programme is currently in its 3rd year, and offers 30 fully-paid scholarships annually. Over 30 graduates have attended the course to date from many of the top universities in China including; Peking University, Sun Yat-Sen University, and Fudan University. The students on the programme come from a variety of different technical backgrounds including; Law, Finance, Economics, Veterinary Medicine and Genetics.

Since 2007, The Emirates Academy of Hospitality Management is proud to participate in the final stages of their programme. The programme cumulates with their participation in the Dubai World Cup. Their final 3 months are spent in Dubai, working and studying management modules at EAHM. Here they augment their competence in subjects such as Marketing, Information Technology and Finance. After graduating, they go on to run successful

After Dubai, they go on to complete a final 6 months of practical training in one of the DFS stables. In this final stage, EAHM supports them with an online course on CV writing and Career planning. After graduation, some return to work in their previous fields at companies such as PricewaterhouseCoopers or Deloittes, while others remain in the thoroughbred industry.

Victory was the chant, and it was only what the young hoteliers could grant! Well done boys! Aside from the fantastic professors and staff, there is nothing that defines EAHM more than its students. Within the past couple of trimesters, the Student Council has projected the student voice so exponentially that the echo just hasn’t stopped. As for the student-tutor-students program established, many students were able to gain assistance from others for subjects they had any difficulties with; this ensured that no man was left behind!

The trimester also saw the first talent show held by EAHM. EAHM’s Got Talent! For those that were lucky enough to witness the night, they would know of the abundance of talent this academy is home to. From the provision of goose bumps from our gifted singers, to the moves of our own dancing kings and queens, the night was an irrefutable success. The cherry on the icing, however, was a smashing surprise performance by the faculty; hopefully we shall have the honour of yet another one next year! Finally, with the Council selling Jalabiyas to wear on the UAE’s 43rd National Day on 2nd December, 2014, we could not be more excited with what’s to come in the forthcoming trimesters. Welcome to EAHM! EAHM Orientation @ Wild Wadi With summer fast approaching, the 2014 April Orientation ended on a cool note. We enjoyed a relaxing time, a team building exercise in the wave pool and an exhilarating ride down the Jumeirah Sceirah. Spending a day of Orientation at Wild Wadi is tradition for EAHM. It helps new students create bonds with one another, and this is a great time for them to enjoy a day in an iconic landmark in Dubai, before plunging into the academic trimester.

Ronnefeldt EAHM students enjoyed an afternoon of tea tasting and an informative tea presentation from Frank Holzapfel, the owner of the Ronnefeldt tea company. The students had the opportunities to take part in the making and tasting of exquisite tea!

Study Abroad Farewell

EAHM organised a farewell party for the Study Abroad students in the !CON restaurant on 4 December 2014. Students from our partner universities in different countries such as Germany, India, and China attended the event. Dr. Jauncey, the Dean of EAHM. first thanked the students for coming to Dubai to gain a new perspective on the hospitality industry. Thereafter, the Study Abroad students were awarded a certificate and an EAHM hoodie, as a souvenir of their stay. The students were very satisfied with Study Abroad Program and expressed their thanks to EAHM.

EAHM students win the Emirates Environmental Group Public Speaking Competition! EAHM recently participated in its first public speaking competition and won first place in their category! On 26 November 2014 a team of five students went up against fifteen other teams from universities located throughout the MENA region at the 14th Annual Inter College Environmental Public Speaking Competition presented by Emirates Environmental Group. The topic was “Who is responsible for food wastage?” The team consisted of Nadia Nasib, Eva Jaer, Karin Olsson, Akshita Vibhakar, and Rocky Mardini. Nadia presented the team’s arguments. They were required to prepare an oral presentation for delivery to a panel of four judges. This is a remarkable achievement evidencing a strong commitment to academic research, public speaking, and critical thinking skills. Page 11
