The Language of Birds Songs and Signs, Myths and Heralds

London are associated with the safety of Great Britain, and that if they leave, the country will meet with disaster. Then of course there is the magpie rhyme that everyone knows: ‘One for sorrow, two for joy, three for a girl, four for a boy, five for silver, six for gold, seven for a secret never to be told.’

Have you noticed how much more active the birds are becoming? There is an air of excitement about as the feel of spring draws near.

The rooks which hang out in the trees a short distance from my garden were really active the other morning, cawing away, filling the air with their restless flapping. It made me think of an unruly football crowd or kids in the playground when a scuffle breaks out. Then this morning, as I took my usual walk up the hillside, it seemed as though a particular thorn bush was alive with the sharp little cries that I recognised as the call wrens make when they are disturbed, even though I could see none of them. And we all know the lovely feeling we get when, as the evenings begin to draw out again, a blackbird comes close and sings it’s heart out; Spring is definitely on the way. You may be surprised to find out just how many myths and superstitions there are around the world concerning birds. A lot of these superstitions regard luck; either good luck or bad luck. For example, a bird that flies into your house is supposed to mean that an important message is on its way. As it is good luck that most of us wish for, it is widely regarded as being very lucky if a bird deposits it’s droppings on you, although you might not think so at the time! There is the tradition that the ravens at the Tower of 8

In Scotland, there is a rich mythology associated with birds and their calls, the direction of their flight, and many other factors that were said to be omens for those with the knowledge to understand them. In the earliest times, it was said that the Druids had ‘bird knowledge’ and could understand the language of birds. There were many messages birds could give just by turning up. Some of their qualities included the eagle: new life, the swan: grace, the hawk: dignity and pride, the wren: humility. The owl was a particularly potent omen, as she was associated with the night and secret wisdom. Personally, I particularly like the language of the robin! I love how he hops down really close when I go into the garden, cocking his head and giving me the ‘beady eye’, seemingly saying ‘come on, get a move on, start digging the garden!’ This is what the RSPB says about the robin’s song: ‘The robin’s spring song can start as early as mid-December, reaching full force in spring. Its purpose is two-fold: to defend a territory and to attract a mate. Therefore, spring song is far more powerful in males. Robins are adapted to life in poor light and are often active in half-light when few other birds are about. They tend to be among the earliest birds to start the dawn chorus and one of the last to stop in the evening.’ For me though, the robin joyfully welcomes the coming year, telling us all to wake up and get our blood pumping again and our homes

and gardens in order... because it won’t be long now!

Gardening Facing North The question I am asked most often asked is what to do with a north-facing wall.

Everyone wants to know what you can plant up it and more importantly, what you can do to increase the chances of your chosen plant not just surviving but thriving.

Getting the right plant for the spot is essential and I’ve listed some great north-facing wall climbers below. But first consider whether you need year round cover (and so something evergreen) or would accept a deciduous climber that will lose its leaves but keep a framework of stems, or if you could live with an herbaceous climber that will die back each year and return again in the spring. If the wall is very shaded it may be worth reducing the shade if you can. Nearby wallshrubs could be pruned back or overhanging trees crown lifted (the lower branches removed) or crown thinned. Painting pale-coloured masonry paint on the wall will cause light to be reflected back to the plant, helping it to thrive. Flowering may be reduced if the site is gloomy and so to maximise your climber’s flower power make sure that you apply sulphate of potash as this will increase flowering potential. Follow the instructions on the pack, and generally try to apply it to the root area in late summer and then again in spring. Make sure that the climber goes in at a good distance from the wall up which it is to grow. A minimum of about 45cm (18in) should mean that it can develop a good strong root system and this will help to keep it growing well. Self-clinging climbers such as the climbing hydrangea or a variegated ivy can look great and help to provide at least part of the interest you’re after for your north-facing wall, but it is best to train the stems onto the wall and protect from wind until they get properly attached.

Swanston Technical Services Plumbing - Heating - Electrical

Things are changing at Swanston Technical Services... After 52 years in the industry I have decided to at last retire. However don't worry, the business is being taken over by my colleague Steve Burrell, but more about that later. In my 52 working years I have seen incredible changes and advancements especially in safety and the efficient uses of energy. Boilers for example have evolved from great lumps of cast iron with few working parts to highly efficient (computer controlled) state of the art appliances, switched on and off by a mobile phone, wow! Gas safety and awareness has come a long way too but sadly still has a long wait to go until only registered persons can purchase and or fit gas appliances. Hot water used to come from a cylinder in a cupboard with a tank in the attic but now from a combi boiler or an even better unvented high pressure cylinder; the latter I worked with during my 18 years at Sea Long before they were even heard of in this country. On the electrical front, round pin plugs have given way to 13A, china fuses to circuit breaker and RCDs, big round brown switches to touch sensitive switches and computer controlled mood lighting (LED of course). Over the years I have enjoyed the diversity of my work, maybe replacing a consumer unit in the morning then on to repairing a leaking toilet or sink and a boiler service on the way home; the next day could see me replacing a boiler or fitting an unvented cylinder. I have enjoyed meeting customers from so many walks of life and have enjoyed the often fascinating chat. The loyalty and appreciation you, my customers have shown me over the years means a lot to me and it is with a lump 14

in my throat I will be leaving you once Steve has settled in. Now about Steve... I have known Steve for several years now. He has worked for me on many occasions helping out on larger installations and also with jobbing. He has proved himself to be an honest, competent and reliable colleague with whom I enjoy working, and I have no doubt that he will prove to be a very worthy successor. Time now to hand over to Steve. Thank you all, I'm going to miss it! I was born and brought up in the Swanston area and have many years experience in the plumbing and heating industry. As John has already mentioned, we have worked together for many years on various projects. I have enjoyed this greatly and the experience and knowledge John has passed on to me is invaluable. I specialise in bathroom and heating installations along with day to day plumbing, electrical and heating maintenance. While I will be continuing to provide my expertise in the plumbing, heating and electrical areas, I also have a range of reliable contacts in other trades including tiling, plastering and joinery, and can therefore take the stress out of any bathroom installation by providing and co-ordinating other trades. Customer service is of great importance to me and I aim to provide a reliable, quality, honest service, with customer satisfaction a priority. Where some companies are focused only on securing bigger jobs and contracts, I will aim to satisfy all customer needs, placing the same focus on small jobs as large ones. I look forward to continuing where John left off in providing a quality service to the local area. Steve

Could you tell me what is meant by “digital services” under the new VAT rules?

From 1st January 2015 there are new place of supply rules for value added tax (VAT) on the supply of digital services by businesses to consumers in the EU. VAT on digital services will be paid in the consumer’s country, not the supplier’s country. It will be charged at the rate that applies in the consumer’s country. Saints

1. Bury St Edmunds, Suffolk - King Edmund of East Anglia was supposedly captured, tortured and killed by Danish invaders in 870, and buried in the Saxon town of Beodricesworth. After Edmund’s canonisation, the town became known as Sancte Eadmundes Byrig in the 1000s, and ultimately Bury St Edmunds.

2. Merthyr Tydfil, Merthyr - The word merthyr is related to the English ‘martyr’, and hence Merthyr Tydfil is named after the local St Tydfil, who was murdered by a band of pagan assassins in the Merthyr area in 480AD.

3. St Albans - St Albans is named after the first known Christian martyr, Alban, who was executed in the town sometime around the 3rd century AD. According to St Bede, Alban was a pagan who converted to Christianity after allowing a cleric fleeing from persecution to shelter at his home. 4. St Andrews, Fife - The remains of St Andrew were brought to the town now bearing his name sometime in the mid 700s, and he was chosen as the patron saint of Scotland around 200 years later. Andrew is also one of the patron saints of Russia, Romania, Ukraine and Greece.

5. St Bees, Cumbria - St Bees in Cumbria takes its name from St Bega, a 7th century Irish saint who fled across the Irish Sea on the eve of her marriage to a Viking prince of Norway. In England, Bega founded St. Bees’ Monastery, where she served as abbess until her death. 24

Chocolate Gateau This is a cake which you will want to do again and again. Not only is it very simple but the texture is to die for, it’s gooey and moist. It makes a great dessert, serve with creme fraiche, extra thick double cream, fromage frais or greek yoghurt. I find it is best on the day you make it or the day after.

Ingredients

200g Hot Chocolates organic dark chocolate 125g caster sugar 175g butter 200g ground almonds 4 large eggs, separated For the icing: 100g Hot Chocolates organic dark chocolate 50g unsalted butter Decorate with Hot Chocolates Truffles and swirls Method Melt the chocolate in a bowl sitting over a pan of barely simmering water. Remove from the heat and stir until well mixed. Cream together the sugar and butter until pale. Add the ground almonds, egg yolks, melted chocolate and mix well. Beat the egg whites until stiff and stir a couple of spoonfuls into the chocolate mixture to lighten it, before gently folding in the rest. Turn into a buttered and lined 23cm/9″ round loose bottomed cake tin and bake at 150C/Gas 2 for 35 minutes. I find the cake needs to come out bang on time. It needs to feel firm on the top in the middle but when you put a skewer in the middle it should show some crumbs as you pull it out. Leave to cool before removing gently from the tin and cool on a wire rack.

Haddock Kedgeree Serves 4

Ready in 45 minutes

Just a few ingredients are needed to make this simple rice dish but it’s full of flavour! It’s ideal for a quick and easy supper or filling weekend brunch served with crusty bread or warmed mini naan breads, if liked.

Place the haddock in a large pan, cover with plenty of cold water and bring to the boil. Reduce the heat to a simmer and cook for 5-6 minutes until the fish just flakes. Boil the eggs in a small pan of water for 7-8 minutes.

Ingredients: • 350g smoked haddock fillet • 4 large eggs • 1 tbsp sunflower oil • 1 small onion, peeled and finely chopped • 1 garlic clove, peeled and crushed • � tsp ground coriander • � tsp ground turmeric • 1 tsp mild curry powder • 300g easy-cook basmati rice • 3tbsp fresh chopped coriander

Tip:

Add a large handful of baby spinach leaves or some lightly fried mushrooms just before the end of cooking to make this dish even more substantial.

Remove the fish with a slotted spoon and flake the flesh discarding any skin and bones. Strain the cooking liquid into a jug – you’ll need about 600ml so top up with water if needed. Run the boiled eggs under cold water until cool enough to handle. Remove the shells and cut into wedges. Set aside. Heat the oil in a large deep frying pan and fry the onion and garlic over a medium heat for 5-6 minutes until softened. Stir in the spices and cook for 1 minute then add the basmati rice and cook, stirring, for 1 minute. Gradually pour in the reserved stock and bring to the boil. Reduce the heat and simmer for about 15 minutes or until the rice is tender and most of the liquid has been absorbed, stirring occasionally. Gently stir in the flaked haddock, eggs and coriander and heat through for 1 minute. Season to taste with salt and freshly ground black pepper. Serve immediately.
