Here's the recipe for traditional Thinai Neyyappam: 1. Dissolve 1/2cupjaggery in5tbsp water and filter it. 2. Soak a cup of foxtail millet for 2 hrs and grind finely withjaggery and water. 3. Add a pinch of cardamompowder,
4 tbsp of fresh grated coconut and a pinch of cooking soda. The batter should be slightly thinner than idJi batter consistency.
5. Heat kuzhipaniyaram pan, fill ghee in the pits and when hot, fill half of the pits with batter. Cook in simmeredheat. 6. Turn the neyyappams to cook both sides. 7. Once both sides are cooked, drain ghee and collect
