Welcome to the April issue. Focusing on a different topic each month in Hickory Living Magazine has gotten rave reviews! We are happy you are enjoying the changes. When doing some research, I found it interesting that while fall is the favorite wedding season in most of the country, Southerners prefer spring nuptials. So, April is the perfect time for Hickory Living to feature weddings and all the planning that takes place for them. Inside you’ll find unique wedding venues to fit different budgets, vendors who can supply all you need for your special day, and articles that will inspire wedding planning. With all the rain we’ve endured over the past few months, I think the May flowers will be just fine without the April showers! I am so ready to dig in the dirt! My landscape of evergreen shrubs and trees is perfect for winter, but come spring… I am ready to fill concrete pots with color! It’s all I can do to wait until the last frost to plant flowers. I’ve rushed planting annuals in the past, only to have them freeze in April and have to start over in May. Unlike Jesus, they can’t be resurrected in three days! So, if you are tempted to plant in April…don’t do it! Focus your excitement on preparing. Clean your pots, replenish the soil, rake garden beds, pull weeds, and add mulch, but wait before planting those annuals! This month we celebrate Easter. As a kid, my family and I would attend a sunrise service that Sunday. Then we would eat breakfast and head over to my grandmother’s house to hide eggs and have lunch. The weeks leading up to the holiday were spent shopping for our Easter outfits and dying and decorating eggs. It

was so much fun getting a basket filled with candy, stuffed animals, and chocolate bunnies, but as I grew older, the sunrise service became more meaningful and my favorite Easter activity. Don’t forget to enjoy this holiday with your family, creating childhood memories and traditions. North Carolinians have a way of weaving their southern traditions into every activity and weddings are no exception. Regardless of the theme or style, many of the ceremonial customs remain intact in the South. Classic and elegant is making a comeback in other parts of the country but never really went out of fashion in the South, and vintage-elegance with a taste of rustic is so fitting for our area and still very popular. April begins the most prevalent season for Southerners to tie the knot, making weddings a very timely subject for this

son, vice president at CVHS. “This has been a guiding principle at CVHS since it was originally founded as Catawba Memorial in 1967. And it’s not just about providing care, it’s about caring.” An example of this was echoed by one of the nurses who recalled an instance when her nursing unit’s staff learned of a handicapped patient who, for years, had spent very little time outside. Staff took it upon themselves to arrange additional staffing coverage for their other patients so they could take this particular patient out into the sunshine for some fresh air. “You hear stories like this every morning in our daily leadership huddle,” noted Richardson. “The staff goes above and beyond the call of duty regularly.” John Coffey agrees. He is a local musician who benefited from the skill of physicians at Catawba Valley Cardiology and Catawba Valley Vascular Surgery. When immediate critical care was needed, the hospital and surgeons were able to turn

a worsening situation around. “The level of professionalism all the way through my experience was above and beyond expectations,” John shared. “The nursing care I received could not have been better. Their attentiveness and attitudes made my stay a very pleasant experience while helping me keep a positive mind toward my recovery.” INNOVATION “If you want to change healthcare, you have to think outside the box,” said Drew Chesson, MD and chief medical officer of CVHS. “And in this case, the ‘box’ meant going outside our walls and bringing care into your neighborhood.” Catawba Valley Medical Group does just that through its 27 locations and innovative care model. “We’re a part of one of only 58 NextGen ACOs in the United States,” said Chesson, referring to Accountable Care Organizations. requires continuous quality improvement, attaining positive outcomes, and cost efficiency. The patient care team consists of physicians, nurse practitioners, physician assistants, nurses, and administrators. It focuses on better patient visits, following and caring for sicker patients, education, and outreach. HICKORY LIVING • APRIL 2019

“Our team proactively seeks out problems to be solved, looking for better ways to keep people healthier,” said Dr. Chesson. “Transitional care management and preventive health are just two areas where the team takes the lead in surrounding patients with resources.” Transitional care management ensures patients are prepared after a hospital stay. Did they pick up all their medications? Do they understand how to take them? Do they qualify for Meals on Wheels or need home health services? Preventive health covers everything from reminders and follow-ups for people with chronic illnesses like COPD and diabetes to scheduling procedures like mammograms and colonoscopies, as well as educational programs and support groups. Another example of innovative care is CVHS’ Heart Failure Clinic, a program of Catawba Valley Cardiology. Run by Sara Paul, DNP, an internationally known cardiovascular practitioner with over 30 years of experience, it focuses on the treatment and prevention of heart failure. Adina Andreu, chief nursing officer, said, “We can help patients avoid repeated ER visits, manage heart failure symptoms and medications, and follow-up to assess and treat problems, thereby reducing admissions. The patient education and coordination of home health services we provide are critical for these patients.” CVHS is also known across the region for its Center for Women & Children. “I believe our birthing center, newborn nursery, and dedicated pediatric unit, along with all of the maternal, fetal, and pediatric programs we offer, are hidden gems in our area,” Andreu explained. “We can handle almost any situation, from natural births to high-risk pregnancies and deliveries.”

Especially valuable in the community is CVHS’ Level III Newborn Intensive Care Unit and its Neonatal Transport Service. An advanced team of nurses and respiratory therapists travel to receive babies at birth from hospitals within a 75-mile radius. Over 100 transports a year carry preemies and high-risk infants to fetal specialists in the NICU who give these infants a fighting chance. Andreu added, “The high-tech equipment that we use every day is surpassed only by the extraordinary level of care and the dedication of our staff. These providers save lives every day.” A key to delivering this level of care is reflected in CVHS’ Magnet designation, which recognizes nursing excellence and innovation. Not only was CVHS the 32nd hospital in America to be Magnet recognized, but it is also one of the few select


medical centers across the United States to receive four consecutive Magnet designations, with a fifth Magnet review currently underway. DEDICATION Matt Webber, CVHS director of marketing and corporate communications, explained, “I definitely see a huge difference in the ways this organization connects with its community. In my first months here, I was asked to conduct focus groups to learn more about what this system means to our stakeholders. It was powerful. A prominent local leader said, ‘CVHS has always been there over time. That’s what builds confidence and reassurance throughout our community. You have become the hospital of choice.’” CVHS’ dedication to not only its patients but this entire community is particularly evidenced by the work of the Catawba Medical Foundation. The Foundation’s goal is to ensure the long-term viability of the system and keep the focus on doing what is best for this community—not what best profits a corporation. “We have challenges just like any growing organization, but we are constantly listening to our employees, constituents, and patients with the aim of improving the level of care in this community,” said Richardson. Through gifts and the generosity of its supporters, the Foundation is able to provide the system with resources such as the Good Samaritan’s Closet that provides free clothes and medical equipment to patients in need, the Savi Scout technology for breast surgery, and numerous others. In addition to the work of the Foundation, CVHS also provides grants to our community. The Catawba store recently merged to join the Claremont pharmacy. “We are very hands-on, and our pharmacists are all part-owners of each of the stores where they work,” co-owner Bob Busbee said. “They have a vested interest. We provide personal service and know most of our patients by name. We get them in and out with little wait time. Having 10 stores makes us large enough to leverage our buying powers with vendors. One popular addition in Claremont is Glo cosmetics, a skincare and makeup line. They also added CBD cream and oil. CBD is made with hemp extract from cannabinoids. It has a variety of uses including pain relief, helping people with seizures, and lowering cholesterol. HealthSmart Pharmacy offers several services to make it easier for patients to manage their medications. The first is a

“Ryan always wanted to get married at Christmas,” said Grace McLaurin Ehrenreich, “and a winter wedding is especially beautiful and special.” Grace is Ryan Kelly’s mom. She was also her wedding planner, purchaser, designer, best friend, and long-distance confidant. Grace’s friend Cindy Williams coordinated details and directed the big day. “Like many mothers and daughters, we started out thinking we were planning an elegant, small wedding, maybe 100 guests. As 22

plans, ideas, and visions formed, we couldn’t turn back. On December 15th we celebrated Ryan and Kevin’s love with 250 of our closest family and friends!” When details got more complex, and Ryan took on some Bridezilla characteristics, Ryan’s stepdad, John, was peacemaker and consoler. Ryan’s dad, Scott Young, knew he wanted nothing to do with planning and said, “Here’s my part of the budget, you all figure it out.” The dads could tell this was a big deal.

DEVELOPING YOUR PLAN There are really just a handful of questions that need consideration when you begin. What’s the who, what, when, and where? What do you want it to look like, taste like, sound like? What’s your party style? What will make your memories special? That’s pretty much it, right? Oh, I forgot—what do you want to spend? Special details for Ryan and Kevin were planned long before the wedding. “It took a year to get everything pulled together,” Grace told me. “We knew we could save money by planning exactly what we wanted ourselves. We prioritized everything and created a wish book of pictures and ideas. With that and our budget in hand, we crafted invitations, found our venue, the dress, florists, caterer, cake designer, photographer, the band—every piece of the big picture. The wish book kept us on track and budget. Keep this in mind—once you get what you want in place, stay off Pinterest! If you don’t, you’ll start changing, adding, and second guessing everything. Don’t sweat the small stuff. Relax and have fun.” CREATING YOUR SPECIAL DAY “Our wedding ceremony was the result of our own personal desires and excellent counseling with Pastor Charles Kiker of Christ Church. His best advice? That the ceremony isn’t a spectator event, but rather, a time for him to speak to us,” shared Ryan. We got married at Lenoir-Rhyne’s Grace Chapel. It’s a beautiful church.” Music sets the tone for a wedding ceremony, and Ryan chose bells as a highlight. “My grandmother’s name was Belle, so in her memory, handbells were played during the service, and there were bells and butterflies in my bouquet,” she said. “The bridesmaids walked down the aisle to Silent Night, and the

mothers’ procession was Mary, Did You Know? Everyone was given a stick with bells and ribbons to ring when we kissed. Little details like these made my wedding special.” Flowers create a backdrop for all that takes place and can be a big part of the budget. Donna Gragg arranged greenery and church flowers and Leroy Kennedy at Thistle Dew Nicely designed reception arrangements and centerpieces. Flowers were the big WOW, second only to the bride. Christmas garlands, lots of winterwhite flowers and poinsettias, twinkling trees, and candle lanterns surrounding the altar created a take-your-breath-away setting. AND THEY DANCED ALL NIGHT! “74 South at Moretz Mill was wonderful,” Grace told me. “The staff helped with everything at the reception—it ran without a hitch.” When choosing a reception venue, consider the number of guests— you don’t need a huge venue for a small intimate wedding, and you don’t want people to feel squeezed in, either. Visualize what you want everything to look like. Will you need space for a band and dance floor? What’s your seating plan? Is it easy for guests to find and park? “Moretz Mill is perfectly suited for a big party, and it was quite the party,” Ryan said with a

smile. “Kevin and I took dance lessons in Atlanta, so our fully choreographed Dirty Dancing-style party kick-off needed space!” The couple’s finale was a swing rendition of All I Want for Christmas is You…nothing like getting everyone in the mood for Diverse Groove Band and a night of celebration! Grace engaged Flavia Bulza at Let Them Eat Cake for her creative vision and delicious masterpieces. “People come to weddings to see the bride in her dress and the wedding cake. They both looked beautiful,” she said. “Flavia’s cakes are edible works of art, truly. And, Ryan was stunning in her Martina Liana dress, just like the cake!” Your caterer can make or break your reception. Taste test your possibilities and find someone whose food is impressive, who will work within your budget. “I’m glad we decided on a buffet dinner, because it was hot, delicious, and presented beautifully,” Ryan said. “Good food was what Kevin cared about most, and the UGA bulldog cookies on the cookie bar made his day. L&L Catering prepared a plated salad and buffet for dinner with carving stations. They provided plenty of staff, coordinated all the linens, and made sure guests were served at the buf-

fet in an orderly fashion—totally stressfree for us.” BEAUTIFUL DAY, BEAUTIFUL BRIDE Wedding dress shopping can be chaotic, but Ryan and Grace made it fun. “We shopped in Atlanta and found a dress that I love that looked really good on me,” Ryan said. “Take someone shopping with you who you love and trust. I felt comfortable in my dress all day.” Good hair and makeup are essential. “Alan Elrod and Attitude Salon kept everyone’s hair looking great,” Grace added. “We used Darlene Mejia from Vitality Anti-Aging Center for Ryan’s portrait and wedding makeup and Lacy Patterson for the wedding party. A makeup artist should consider that lots of photos will be taken and know how to make everyone lovely in person and in the photos.” “My wedding was magical,” Ryan said. “As soon as I walked down the aisle and saw Kevin, who was crying, by the way, and my family and friends in the church, the stress just melted away. All that planning paid off in spades, and the people we worked with were amazing. They took good care of us. Of course, I never could have done this without my mom. I am one lucky daughter—and bride—for sure.”

The most beautiful day in a couple’s life is their wedding day. They want to make it a memorable event as family and friends come together to celebrate their love. Not to mention, they will honor that date for years to come as a milestone in their relationship. So, you can see how the pressure of expectations in planning the most perfect day can be overwhelming. Not to worry! There are many professionals in our area who offer advice and services to simplify the process and make your celebration amazing! A note about DIYs…I have been involved with planning several weddings, and in my experience, I’ve found that the more you can delegate to professionals, the better. It takes a village to pull a large event together, and while there are many details that family and friends can perform well, it is best to save the DIY projects for things that personalize your event and can be accomplished in advance. A good wedding planner, or a venue that provides more than space, can make your day less stressful and in many cases will save you money while doing an incredible job fulfilling your wishes. House, says that Pinterest is great, but don’t bite off more than you can chew. “Hire people to help so you and your tribe can enjoy the big day! You don’t want your memories to include hunting a glue gun to finish a centerpiece! In the end, when you add up all the work to do it yourself, sometimes it really is cheaper to pay a professional and is definitely less stressful,” said Rebecca. Grace McLaurin Ehrenreich, owner of Vitality Anti-Aging and the mother of Ryan, our featured bride, planned her daughter’s wedding. I know Grace personally, and she is an incredibly talented woman with style for days. She had some sound advice to offer brides. “Figure out what you like and have always dreamed of. Make a list of priorities, and then work within your budget. Lots of people will want to give you input but realize that you can’t please everyone. It is your once-in-a-lifetime day and should be as close to YOUR vision as possible. In the end, it is your dream that will make your wedding beautiful and meaningful.” Selecting a Venue Setting a date will be the first step in the planning process. You may want to keep your date flexible while researching venues until you see what is available.

Flame Deal, the events coordinator at Rock Barn Golf and Spa in Conover, says that you should find your venue first and foremost. It is recommended that you reserve the location as soon as possible, because all of your plans will revolve around that site. Brenda and Oz Hefner, owners of Sapphire Hills Event Center off Highway 16 in Conover, recommend that couples make a checklist when choosing a venue. They suggest the top three things on that checklist should be “your budget, your guest list, and your overall vision.” One topic that came up over and over again was space. There is more to consider than head count. Will you need space for a band or a dance floor? Is there a suite designed for the bride and bridesmaids to get ready in? Is there a separate groomsmen suite? Will you need to store items prior to setup? If the reception and ceremony are both held at the same venue, visualize the location for each. Know what each facility has available to you. Some have vendors that they work with on a regular basis and bundle services, while others have the capability to prepare everything onsite.

“At Rock Barn, we are much different than most venues. We have a spa for the brides, two golf courses for the groomsmen, and lodging on site,” Flame said. “We have ceremony and reception locations and can host your rehearsal dinner. You will need a place to store items and areas for the bride and groom to use prior to the event.” Flame also suggests for those having an outdoor ceremony to ask if the venue has a back-up plan in case of rain. “Find out what kind of support is available to you,” she continued. “I like to make myself available for the brides and help them think outside the box. We also have an events team dedicated to each wedding and the bride.” Matt Miller with Warehouse 18 in Hickory, says, “Ask for an all-inclusive price and get the details of what is provided in writing.” He also suggests that you look at the bride and groomsmen suites to make sure they fit your needs. Rebecca Stephens with Morganton Community House on North King Street in Morganton recommends that you make sure the style of the location fits your vision and theme. “You don’t want to spend extra money trying to make a venue look like something that it isn’t,” said Rebecca. “It is also important that 28

the facility have a strong, organized staff to ensure all of the details on your big day come to life!” Grace McLaurin Ehrenreich says that when choosing a venue, consider the proximity to hotels, parking, and accessibility. We asked Oz what are the hottest trends in engagement and wedding rings? “The classics are returning with a bit of a twist. Yellow gold and solitaire rings have made their way back into high demand but accompanied with the request of fancy cut stones like pear, oval, and cushion cut stones. Brides are also loving colored stone accents in their engagement rings and wedding bands and curating their own unique look by using stackable and nested rings,” Oz said. “A bride should expect honest advice, quick service, and

clear communication from her jeweler. If her engagement ring came from that jeweler, she should expect to receive a detailed appraisal that outlines the value and specifics of the ring and the diamond.” Looking Great for Your Big Day! You want to look your most beautiful in your dress! For Hickory Living’s featured bride, Vitality Anti-Aging Center provided CoolSculpting to get rid of a few areas of fat that the bride wanted gone in order to look even better in her dress. “Vitality can help with any figure or facial imperfections,” Grace added. “However, allow enough time for the treatments to complete their process—so start early!” Ryan used Vitality’s make-up artists for her bridal portraits and the day of the wedding and for the bridal party. “Choosing make-up artists that know what photographs well is so important. Many things look good in person but reflect and sparkle too much when photographed. If your wedding party is doing their own make-up, remember that shimmers and metallics will look terrible in photographs,” Grace continued. “Also, concealers need to match the skin color perfectly to avoid the raccoon look in photos.”

Trying to figure out what to fix for dinner, can leave busy parents frustrated. Many times it just seems easier to order takeout or go out to eat. However, a well-stocked pantry full of canned foods, can help you prepare a delicious and nutritious homemade meal in less time than the alternatives. Try one of the recipes below for a quick and healthy meal.

Chicken Burrito Salad Prep time: 15 minutes Serves: 6

SALAD: 1 small head romaine lettuce, torn into small pieces 1 cup cooked brown rice 1 can (15 ounces) black beans, drained and rinsed 1 can (14 ounces) diced tomatoes 1 can (10 ounces) chicken breast chunks, drained and flaked 1 can (10 ounces) corn kernels, drained 1 can (4.25 ounces) diced green chilies, drained 1 can (2.2 ounces) sliced ripe black olives, drained DRESSING: 2 tablespoons fresh-squeezed lime juice 1 tablespoon fresh chopped cilantro 3 tablespoons extra-virgin olive oil Salt and ground black pepper, to taste

Directions Salad: In large platter or individual bowls, place lettuce leaves. Top with brown rice, black beans, diced tomatoes, chicken, corn, green chilies and black olives. Dressing: In small bowl, combine lime juice and cilantro; whisk in olive oil. Add salt and pepper, to taste. Drizzle dressing over salad.

Directions In food processor, combine spinach, parsley, cheese, nuts, garlic, basil, salt and pepper; blend well. In slow, steady stream, add olive oil until mixture is blended and smooth.
