Classic Forged knives VALGOBBIA - ITALY

Made from special high carbon stainless steel, comprising Carbonium (for hardness), Chrome and Molybdenium (resistance to corrosion) and Vanadium (resistance of cutting edge). Each forged knife is hand crafted. A forged knife is a true example of blacksmith art. A steel blank, or piece of steel, is heated in the forge. The maker then pounds the steel with a hammer, into the rough shape of a knife. The forged knife is heated again and more hammering follows. Several cycles of heating, cooling and hammering all serve to temper the steel and make the forged knife strong and not easily broken. After the knife is completed to the makerâ&#x20AC;&#x2122;s specifications, it is ground from spine to edge, creating a tapered blade. The handle is attached to the tang, or the bottom part of the knife, and is riveted into place. Almost every forged knife has a bolster, or divider that separates the blade from the handle. The bolster may be for balance, as well, but this thickened part of the forged knife helps create a safety barrier between blade and fingers. Once the handle has been attached, the blade is then sharpened to a razor edge. A forged knife is prized for its durability, and for the ease with which it maintains a sharp edge. It can be easily sharpened. Only minimal maintenance is required to keep a high carbon stainless steel forged knife in good condition.

A good forged knife will last for a lifetime of household use.

Use and maintenance The handles of the forged knives are made from natural wood, Bubinga, which is covered with a thin layer of natural oil. Forged knives will last a lifetime if handled correctly â&#x20AC;&#x201C; wipe with a warm damp cloth after use and store correctly. Avoid prolonged contact with water. Not suitable for the dishwasher.

Use and maintenance The materials used by Coltelleria Valgobbia in the manufacturing of knives and tools ensure that they are dishwasher safe, if neutral detergents are used and if knives are dried with a cotton towel upon completion of the wash cycle. Clean with warm water and neutral detergent after each use to prevent the adhesion of corrosive food particle on the blade. If sharpening with a grindstone, use a cooling liquid. Incorrect sharpening may compromise the technical features of the knife and can cause dulling of knives & tools and even breakage. The Valgobbiaâ&#x20AC;&#x2122;s knife and tool should only be used for the purpose for which they were designed.
