established in 1683 as one of the original counties of New York. Nestled in the Hudson River Valley, midway between New York City and the capital city of Albany, it is easily accessible by car, train, bus and air. Young and old alike can better understand and appreciate the relationship to the food we eat and the farms and farmers who grow it. JOHN ECCLES

Brew Master, Hyde Park Brewing Company Dutchess’ only brewpub is opposite the FDR Home, Library and Museum. It’s only fitting, since President Roosevelt repealed prohibition December 6, 1933. The grandson of a prohibition-era brewer, John Eccles learned his trade during a three-year apprenticeship under renowned brew master, Jay Mission, at Suffern’s Mountain Valley Brewing Company. Eccles’ beers have garnered many awards, including a silver medal at Colorado’s Great American Brewing Festival. Eccles co-founded Tap NY, the state’s largest and most prestigious beer festival/competition. The wide variety of dishes on the menu includes grass-fed beef and pork from Uphill Farm, Clinton Corners. Their meats—antibiotic, steroid and hormone free—are raised under humane conditions on 300 acres right here in Dutchess. All Heritage Breed animals are grass-fed and supplemented with the Brewery Company’s own spent beer grains. As director of brewery operations, Eccles has complete freedom to buy only the finest imported malts and hops to create world-class ales and lagers. Only the eight original beers brewed on premises are served. As FDR said in 1933, “I think this would be a good time for beer.” HydeParkBrewing.com

CHARLES & MEGAN FELLS Owner/chefs, The Artist’s Palate, Poughkeepsie At The Artist’s Palate, the focus is fresh food and fresh ideas. The products used at the

restaurant are sourced within the Hudson Valley whenever available. The Artist’s Palate offers a culinary adventure in a relaxed but contemporary setting. Intriguing combinations and variations on comfort food mark the innovative bi-weekly menu created by chef/owners Megan and Charles Fells. A gracious, knowledgeable wait staff guides you through the many offerings, from meat, game and fish to vegetarian and gluten-free offerings. Tailoring a dining experience to the bold tastes of their customers, visually and gastronomically, is the mission of the chefs and staff. The Artist’s Palate is excited about its new sister restaurant, Canvas, located next door at 305 Main Street. LEE FRAITAG

Co-owner, Willows Bed & Breakfast Lee Fraitag and his wife Lisa opened the doors to their B&B in 1996 upon Lee’s graduation from The Culinary Institute of America. The quaint farmhouse in Pleasant Valley was built in 1765. The menu reflects Lee’s life-long interest in gardening, using local products and getting back to basics. Fresh squeezed juice, homemade jams, breads, cheeses, sausages, and home churned butter are always featured. Breakfasts incorporate produce from their organic garden and heirloom apple and pear orchard. The jams come from fruit picked at Greig Farm; pork is from Hahn Farm in nearby Salt Point. Eggs are from a mile down the road at Knollkrest Farm. More apple, pears and peaches come from Salt Point’s Terhune Orchards. Breads are made from home-ground flour. Lee’s a beekeeper, so there’s honey from their own hives on the table. Cheeses and butter are made using Hudson Valley Fresh dairy products. In 2003, Lee was featured on the Food Network show “Tyler’s Ultimate” making one of his own creations, “The Willows’ Raised Apple Pancake.” Lee is happy to direct guests to farm markets and area creameries such as Sprout Creek so they can fully enjoy their area food experience. BOB GREMS

General Manager, Dutchess County Fairgrounds, Rhinebeck Bob Grems, manager of the 165-year old Dutchess County Fair, has nearly half a century of experience in the fair business himself. Growing up across from the Oneida County fairgrounds in upstate Boonville, and spending lots of time on his grandparent’s farm has given Grems a true appreciation for agriculture. This background helps Grems focus on the true mission of “preserving, promoting, and protecting” the fair’s agricultural integrity. It is with pride that Grems points out that nearly 1,700 area residents entered more than 10,000 individual exhibits to be judged in 2010. Each item made, and every animal entered, was part of a rich 200-year-old county fair tradition. Grems comments, “No place on earth do we do a better job of showcasing agriculture than at a county fair. We support our farmers and at the same time educate the public about the importance of eating good, locally grown food. If we can help protect the family farm, there’s no reason why the majority of our food cannot be grown locally rather than shipped in for thousands of miles.” DutchessFair.com

JOHN GRAZIANO

Winemaker, Millbrook Vineyards & Winery John Graziano has been the sole winemaker at Millbrook Vineyards & Winery since it was established in 1985. John was a recent Cornell University graduate when he was asked by proprietor John Dyson to be Millbrook’s first winemaker. When he started,


there were only a few acres of grape vines planted. For the last 25 years, John has grown and experimented with 30 different grape varietals. Today, on Millbrook’s beautiful 130-acre farm, 30 acres are planted with European vinifera varieties including Chardonnay, Tocai Friulano, Pinot Noir and Cabernet Franc. Each vintage, he creates approximately 20 unique wines for Millbrook’s 12,000 case wine portfolio. “It’s been great to live and work in the Hudson Valley these past 30 years. Our efforts at Millbrook have been rewarded with much more local interest recently. This is very encouraging for all of us growers and food producers that believe in the quality the Hudson Valley has to offer,” says John. Millbrook Winery celebrates its 25th anniversary vintage with the release of its 2010 vintage wines in the spring of 2011. MillbrookWine.com

Teas. He felt (at age 53) it was time to run his own show. Since starting the company in 1983 (with six teas), it’s grown to an impressive size (300+ varieties). Harney & Sons sends tea across the state, across the country, and around the world. Harney & Sons Fine Tea is the only tea represented in the Chinese Tea Museum, an impressive feat for a Western tea company. “The world of tea has expanded considerably in the last 28 years. I stay committed to offering the finest teas. My love of tea has spread to my family and our customers worldwide, and I enjoy sharing the gift of tea with any and everyone. I know that we have a tradition of tea that will endure,” says John. Today Harney & Sons includes John, sons Michael and Paul, Michael’s wife Brigitte, and the next generation, their sons Alex and Emeric. They operate a large Millerton warehouse, from which their wholesale and internet/catalog operations are run. Visit their two elegant tasting rooms, in Millerton and in SoHo, New York City. COLIN McGRATH

Cheese Maker, Sprout Creek Farm, Poughkeepsie A visit to this 200-acre working dairy farm combines agriculture and education. Visitors learn when processing milk into cheese, quality depends on our management of soils and pastures and meeting the animals’ needs. Colin McGrath grew up in California and fell into restaurant jobs as a teen due to his family’s love for food and his father’s history in the industry. He migrated here, earning a bachelors degree from The Culinary Institute of America, where Colin developed an interest in food science and fermentation. This led him to a position at Sprout Creek’s creamery. Immediate fulfillment surrounded him upon the discovery of producing artisan cheese. This love landed him the position as cheese maker. In the five years he’s worked there, his love has only deepened, due to the never-ending discovery taking place day-to-day in the world of cheese. Owner, Harney & Sons Fine Teas Twenty-eight years ago, John Harney made the decision to found Harney & Sons Fine

The Wild Hive Farm Community Grain Project Raised on his parents’ farm in the Hudson Valley, Don Lewis’s experience with food systems is extensive, ranging from commercial beekeeping to aquaculture and chicken farming. His sustainable milling production uses regionally and locally grown and organically raised cereal grains to supply the Wild Hive Bakery and distribute fresh flour throughout the Hudson Valley. “Our commitment to providing access to clean local foods is highlighted in the variety breads, flours and grains sold,” he says. This product line showcases not just the restoration of heritage grains, but also good taste, healthy and nutritious local foods. These are available at the Wild Hive Café and Local Food Store in Clinton Corners, and online at WildHiveFarm.com. Milling operations will open to schools and group tours by appointment in the fall of 2011.

JOSH MORGENTHAU

Orchardist, Fishkill Farms Josh Morgenthau runs Fishkill Farms, the orchard started by his grandfather in 1913 in East Fishkill (Henry Morgenthau was FDR’s treasury secretary). He grows apples, peaches, pears, and other fruits and vegetables. Committed to ecological growing and new markets, Fishkill Farms now produces more food, more profitably. Working with other young farmers, they now offer vegetables, berries, livestock and heirloom fruit. This diversity creates a rich environment, and more land is transitioned to organic management yearly, something Josh believes is “crucial to the balance of the ecosystem and the long-term stability of our food system.” They attend farmers’ markets, sell shares in a CSA, and have an internship program in organic vegetable production. Josh is excited about year-round local food; the farm freezes its harvest surpluses, offering them in a winter share with fresh eggs, cold-hardy greens, and storage crops such as apples and squash. Josh graduated from Yale University with a concentration in art and painting in 2006, and holds an honorary degree from Mount Saint Mary College for his contribution to area agriculture. Owner, Gigi Hudson Valley: Gigi Trattoria & Gigi Market/Catering, Rhinebeck/Red Hook As the owner and creative force behind Gigi Hudson Valley, Laura works with her talented team to provide a bountiful Hudson Valley roadmap to delicious and healthful eating, Mediterranean style! Laura, a graduate of the French Culinary Institute (and recipient of its Outstanding Alumni award in 2010) and registered dietitian, co-authored The Strang Cancer Prevention Center Cookbook, (McGraw-Hill 2004; Dutton 1998) and authored Hudson Valley Mediterranean: The Gigi Good Food Cookbook, (HarperCollins) in 2009. Throughout her career she’s worked closely with chefs, the food and publishing industries, and health institutions to “help people eat healthily and above all, happily.” In the May 2005 fifth anniversary issue of O, The Oprah Magazine, Laura was selected among the five most “Gifted and Giving” food professionals. Chef Laura Pensiero is a deeply committed supporter of the community, its businesses and local economy. Built in 1850 by New York Banker Charles Al Macy, Maple Grove is one of the last surviving country house estates and is a stunning example of Hudson River Bracketed architecture. Mount Beacon Incline Railway Mount Beacon, Beacon. 765-3262. This funicular was built in 1902 by the Otis Elevator Company and operated for over 75 years. It was the steepest incline railway in the world and carried over 3.5 million visitors to the summit of Mount Beacon. Destroyed by fire in 1983, an effort is underway to restore it. Fish and Game Whether you’re looking for trophy-class fish or you just want to experience the tranquility of a secluded trout stream, Dutchess County has it all. The Hudson River is quickly becoming the destination point for anglers from around the globe. Our many stocked streams and lakes have miles of public access available, and hunters and water fowlers can challenge themselves at one of our many multiple use areas. For sporting clays, trap and skeet shooters, Dutchess County is a top Northeast destination, with four shooting clubs and preserves open to the public. There are numerous spots for catching trout, bass, pickerel and perch, as well as places for dip-netting smelt, alewives and blueback herring. The beautiful Hudson itself is an ideal setting for numerous species, including largemouth and smallmouth bass, striped bass, brown bullhead, carp, white catfish and American shad. Dutchess County is one of the top two counties in the Southern Region of New York State for deer hunting with a special archery season for deer spanning a total of about six weeks. In designated hunting areas you can also find pheasant, grouse, woodcock, squirrel, cotton-tail rabbit, raccoon and waterfowl. Be sure to contact the New York State Department of Environmental Conservation in New Paltz for specific fishing and hunting regulations and other relevant information before your planned visit to Dutchess County.
