CAPTAIN’S CORNER Dear Cliff, Thank you and your brilliant team at C2C for an outstanding and excellent service during our winter stay in Turkey. Whether helping with the smallest things or indeed the bigger issues, everything was done rapidly, effectively and not at least always with a smile and no fuss. We have had the pleasure of meeting the team all the way from Göcek to Istanbul and everything just worked out perfectly every time - you have some fine people, there. “Last minute” is an Odessa specialty and it take a steady pair of hands ashore to make everything happen in sync with us, and in C2C I have found that partner that makes being a captain in a new cruising ground a lot less stressful. You have been able to pull a rabbit out of the hat for us on a few occasions over the winter and for that I salute you, Sir! We’ll be staying in Turkey for a little while yet, and I very happy to say as we’re now leaving Istanbul to start a busy charter schedule, I do so confidently knowing all Odessa’s needs around Turkey’s shores are being well looked after by some very special people at C2C.. Looking forward to seeing you around over the summer.

Itinerary

Welcome to Turkey

İSTANBUL 41° 0’18.58”K, 28°58’37.70”E Clearing the yacht into Turkey from Istanbul. There are three options to berth; Fenerbahçe Marina (40°58’42” N, 29°02’20” E) on the Asian Side of the City, Ataköy Marina (40°58’22” N, 28°52’55” E) on the European Side of the City and Kuruçeşme Dock on the Bosphorus (41°03’15.15” N, 29°02’07.13” E). All locations have their pros and cons’. If the guests are willing to enjoy the Bosphorus more (sightseeing, restaurants, clubs, bars) the Kuruçeşme dock is closer to where the action is avoiding the traffic. A Bosphorus Trip with one of our professional Tour Guides will captivate your interest while narrating the fascinating history and breathtaking visits to the palaces. Have a lunch at famous fish restaurant Uskumru. In the afternoon back to the yacht for a cruise to Prince Islands, indulging in a swim and water activities.

You will immediately notice a discreet fusion of Mediterranean, Ottoman and local Bodrum styles. The gulf of Göcek and Fethiye provides many opportunities to visit cultural sites as Caunos, Telmessos, Fethiye Museum, Tlos, Pınara, Letoon, Xanthos and Patara. A prominent characteristic of the town is the fact that it harbors islands and coves located in a large and secluded bay. Göcek coves and the 12 islands, which are described as a hidden paradise, with clean Mediterranean water, green pine forests, and beaches, have rendered Göcek an indispensable destination. Göcek being only 20 minutes distance from the International Dalaman Airport is a very convenient place for embarking and disembarking guests. Silky Touch in Dolmabahçe … Dolmabahçe Palace, a museum where unique works, the Ottoman heritages are protected… The palace, which was built between 1843 and 1856 upon order of Sultan Abdulmecit I, served as home for Ottoman sultans for years. In Republican area, Atatürk used Dolmabahçe Palace as his residence, where he spent his final days of life. The 35 square meter silk carpet known as “Silk Carpet of Palace” is in the waiting hall near the Muayede Hall used for holiday ceremonies. In 2006, in the 150th anniversary of Dolmabahçe Palace, an event named: “The Last Link of Know: Ottoman Palace Carpets” was organized. Çınar Carpet was exhibiting the world’s biggest double knot silk carpet reaching to 102 square meters. The carpet, which was exhibited in the palace, is now found in Çınar Carpet store in Antalya.

Your Home at Sea, Kuşadası Marina… Located at the north end of Kuşadası town, Setur Marinas Kuşadası is situated very close to Ephesus (one of the best preserved and most famous cities of the antiquity found in the Aegean), the Temple of Artemis (one of the world’s seven wonders), the House of Virgin Mary and the Church of St. John. The local waters, right by the marina, are suitable for fishing and many fishing tours are offered, particularly in the winter months. The marina is located 70 km from Izmir International Airport, less than an hour away. The marina has 450 yachts mooring capacity at sea and 150 land capacity, and just like in other Setur Marinas, Kuşadası Marina also features a launching area, with a 80 tonne lift, where yachts can be launched and pulled ashore. RMK MARINE Welcomes new concepts by Hot Lab Yacht & Design

Hot Lab Yacht & Design are currently working at RMK Marine in Turkey on a comprehensive 43m refit project. This recent work and M/Y Karia which was on display at the 22nd edition of Monaco Yacht Show in 2012, has shown the quality of build and extensive facilities provided by RMK Marine, and led the Hot Lab studio to seek the opportunity to introduce RMK 5000 design project at the yard. The Hot Lab idealised concepts show two primary variations the True Luxury Explorer and the Leisure, both of which have a great deal of flexibility to suit the individual client requirements and the tastes of the current market. Designed with modern lines and soft curves there is smooth uncluttered look and feel to the design. The full displacement hulls on both designs provide long range cruising with thanks to the diesel/electric propulsion package under 500 GT thresholds. Both projects accommodate up to 10 guests and 8 crew plus the Captain. On the True Luxury Explorer concept, there is a vast aft deck specifically designed to accommodate a tender of up to 10.2m. When equipping the aft deck with the custom tender, the area beneath is dedicated to underwater and onwater excursion toys including submarine, diving room, hovpods and jet-skis. While the exact GA is in the configuration phase, this area can also be converted into a “touch and go” heli deck in order to enjoy the most out of this explorer superyacht and the areas it will take you to. This heli deck will give the owner and guests the freedom of exploring even the most secluded areas. With the heli deck version aft, a tender of 9m can be stored under the main deck behind the engine room with a pair of jet skis that are disembarked using the winged shell door configuration. In addition to these amenities that can be enjoyed with families and friends, special attention is given to additional storage, ease of provisioning, extra freezing spaces and cold garbage storage that combined complete the package of circumnavigation without a need of stopping in unscheduled ports.

On the Leisure concept the helipad is substituted with a 6 meter wide swimming pool and sunbeds creating an environment of peace and quiet whilst enjoying the ultimate cruising experience. The 9m tender is cleverly placed in the lazarette, which uses an overhead crane to deploy it easily over the side into the sea. For both the True Luxury Explorer and Leisure design the beach club area is to the stern, thus providing friends and families’ unforgettable moments enjoying their culinary and drinks whilst admiring the activities going on. An additional feature comes with the hydraulically operated bottom hinged transom door which creates an extended area for the beach club. The main difference between the interior layout of the True Luxury Explorer and Leisure is the location of the 10 person inside and outside dining areas. On the Leisure concept, the interior dining table is situated when entering the main deck through the convex shaped sliding doors and the alfresco dining table arrangement is situated one deck above on the wheelhouse deck. For the True Luxury Explorer concept there are two interior dining tables seating 10 people at a time. The purpose of having two inside dining tables is to be able to dine on the sun deck (observation deck) with 360 degrees of view in an enclosed area that can be turned into an alfresco dining area at the touch of a button operating the sliding doors during your voyages in warmer climates. The other dining table is situated right on the wheelhouse deck. Her robust hull is designed to ice class standards to overcome the harshest marine environments. The engines, hull design and interior layout have been arranged and thought through to give the owner and guests the best cruising range and seakeeping characteristics possible. Ölüdeniz, this amazing and wonderful area encompassing the coast of Fethiye, Turkey. Worth traveling many of miles to encounter this absolute area of beauty, long silky white sand beaches and mesmerizing turquoise waters. This location of Ölüdeniz has a stretch of 14 km (9 miles) south of Fethiye, which is a small village resort in the Muğla province located on the south west coast of Turkey. This picturesque town, surrounded by the steep sided (Babadağ) mountains, remains as one of the most photographed beach areas of the Mediterranean. Babadağ Mountain (Father Mountain) towering above Ölüdeniz on the Southwest coast of Turkey is a geological marvel that just happens to make for incredible thermals and ideal conditions for Paragliding. We had the time to sit down and talk about paragliding with a professional pilot Erdal Akkus and asked him some very interesting questions about Paragliding! How do you practice a “paragliding jump”? Can you please provide some general information regarding the components, equipment needed for paragliding? After making the courageous and life changing deciding to “jump” fly with a paraglide, you simply book yourself a flight, with a professional agency of course. It’s a good idea to book a few days in advance. Each glider has his personal pilot, in who escorts and assists throughout. After arrival at the selected take-off area, the pilot kits you up and gets you ready for your flight. Also the pilot will brief you about the things you will need to do. We advise that one brings their trainers and cameras and of course before taking off, we wish you a nice flight! General equipment, which can also be rented can be listed as; parachute which we call the canopy, the harness, the reserve parachute and addition to these; flight carabiners for the canopy and harness connection, crash helmet and shoes suitable for the flight. Depending on the type of flight; additional equipment can be listed as GPS, variometer (measures ascending and descending air currents), gloves, jump suit and radio.


Can you summarize how paragliding has been introduced first in Turkey? Paragliding began to be recognized in Turkey in early 1990s when Babadağ mountain (situated in the Fethiye Ölüdeniz region) was discovered as a flight area by foreign pilots and then started off as a sport in university clubs. As for today, Ölüdeniz Babadağ is recognized as one of the most important flight areas in the world and welcomes hundreds of foreign pilots every year. There are about 2000 paragliding pilots in Turkey and this number increases every year. We know that Ölüdeniz is the most paragliding spot in Turkey...What makes Ölüdeniz this much popular/ attractive? Can you please give some information about Ölüdeniz and its surroundings? The obvious is that Ölüdeniz is a touristic region and it’s very high peaking mountains of over 1960 meters adjacent to the sea. In addition to the obvious there is sufficient transportation means getting one to the summit, 6 different take-off points, and the incredible weather conditions perfect for paragliding. Also, we mustn’t forget the enchanting sceneries of the flights. What is the best time to make a jump in Ölüdeniz? Is there any specific season or months? Although flights go on throughout the year in our region, the best time would be in the months starting from May to the end of October. The gliders have their limitations too. For example, flights are not done in winds exceeding these limits. It’s always a good idea to stay within limits for a safe and enjoyable flight. Strong winds and turbulence decrease the elements of safety and enjoyment. What do we have to know about paragliding before doing a jump in terms of jump safety, choosing clothes and shoes, health requirements? First of all, you don’t need to know how to fly. Your pilot will be briefing and assisting you regarding all aspects. Following your pilot’s instructions is the one thing you have to keep in mind. You can pick suitable clothes depending on the temperature but for footwear, instead of going for sandals or flimsy shoes, be sure to wear sturdy running shoes or trekking boots if possible. You can safely participate in the flights if you don’t have any serious health conditions. Be sure to inform your pilot about your health condition anyway.

Who can do a paragliding jump? Are there any age, height restrictions? Any healthy and enthusiastic person can do it. The lower age limit is 7 and there is no upper limit. Anyone who is capable can do paragliding. The oldest known passenger is a lady of 89 years. What are the safety points to take into consideration prior to a jump? Regarding the passenger, concentrating and abiding to the instructions are the crucial points of the flight. Can you please give information about take off and landing areas? Where is the meeting point? How long does it take and how do you take care of transportation to the take off location on the mountain? Getting to the take-off area is 30-35 minutes from Ölüdeniz. Roughly 45 minutes prior to jump you will meet with pilots at Ölüdeniz Beach. A minibus will take you and the pilots to the take off area. The first take-off strip is at 1700 meters and faces south. Our second strip is at 1800 meters and faces north. The next strips are located at 1900 meters and face northeast and southeast. How many jumps are made in Ölüdeniz in a day? The legal limit is 5 flights maximum in one day.


What is the duration of a normal paragliding experience? Although it varies depending on weather conditions, a straight flight takes about 20-25 minutes. What is the general interest to paragliding? Is it becoming popular? Its popularity in Turkey is always increasing in both solo and tandem flights. We can say that it’s quite popular. How may jumps were done in 2013? Can you please give us an approximate number? The number for just the Fethiye-Ölüdeniz area is about 120.000130.000 flights. Can you share with us an interesting funny experience on jump if you have ever had? There was a British guy who had booked flights for himself and his wife. They showed up on the day, got in the vehicle and we got on our way to the take-off area. The man had told his wife that they were booked for a boat trip. The lady was frightened of heights and her husband wanted her to get over it. As we approached the take-off strip, she began crying. When we got there, I took my time to talk to her and get her to relax and I got her ready to take off. She was trembling with fear. To up the security, I got some additional assistance during the take-off. After being airborne, her over-excitement and fear still quite high.


I kept on talking to her so that she would understand that she was safe and her fear subsided. By the time we were flying over the sea, she was even more relaxed. I even let her have the controls for a while. When I knew that she was completely at ease, notifying her first, I started doing the acrobatic trick called “the spiral” and then went on to land. After we had landed, she was jumping in joy, shouting out “I want to do it again!”. Her husband was watching in disbelief. Unfortunately, it was the very last day of their holidays, so they had to leave without going for a second flight.

THE C覺TY OF MARD覺N Founded on the slopes of Maz覺 Mountain at the height of 1083 metres, Mardin presents the signs of settled culture dating back to centuries with its time resistant stone architecture.


MARDIN’S Houses

The city was built of yellow stone including the madrasas, churches, mosques, houses, fountains, arcades and its streets. Mardin is comprised of mosques, churches, stone houses whose borders are drawn with high yard wall, together with narrow streets, special passages (traditionally called “abbara” in Turkish”) and fountains appearing in many corners. This architectural wonder faces towards the vast Mesopotamia, which endows its viewers with ever changing colours of each passing season. You get lost while you walk around the narrow streets of the city and the Mardin arcade which date back to the year 5000 BC however every church, mosque, house and fountain that you see reminds you that you are in a very exclusive city giving the impression of having stopped the time. Mardin is the city where different religious beliefs live together, where mosques and churches are located side by side and where azan and tools can be heard in a fellowship. It is the city of civilized people who share each other’s pains, happiness and fests, who have not had any problems between each other due to religious and ethnical differences and who considers other religions with respect and tolerance.

Mardin’s houses are constructed as terraces, one on another, towards the plane from the slopes of the castle. Front yards of all buildings face towards the south and they are mostly at least two storey because of the slope of the hill. None of the houses overshadows another one. Old houses of Mardin consist of two parts dedicated to only woman and man, called as “haremlik” and “selamlik” in Turkish. The main room where men receive their guests are generally the rooms elaborated most delicately in terms of stonemasonry.

Passages, “Abbara’s” These passages similar tunnels travel ways under houses of the city, crease surprising shortcuts for intracity communication. Savurkapı Quarter is the place where you can see most of these passages that are also seen in some of the Mediterranean countries.

Pigeons Because of the affection of most of the Mardin population towards pigeons, it is possible to see many special kinds of pigeons. Mardin is said to host more than one hundred types of pigeons. As many pigeon types are brought up with such distinctive features as tumbler in the air and rough legged, “Mardin Pigeon” is very famous.

Donkeys In Mardin with extremely narrow and stepped streets apart from a few main streets, these cute and rugged animals of the nature are used for carrying loads and even for collecting trash.

Kites in Its Sky The sunset is striking, winds cooling down the city and children flying their kites. Kite flying is a favourite pastime and one may see kites every time you look at the sky. “The Prettiest Kite Competition” is organised in Mardin every year in June.

Summer Nights in Throne In hot summer nights in Mardin, people sleep in the thrones installed in the roofs or yards of the houses under the stars. These thrones are about one metre high above the ground, installed in summer and removed in winter, have different sizes according to the needs of the family and they are covered with a bed net of white calico. Once installed in strong trees in the past, these thrones are also made of metal today.

Doorknobs Another peculiar feature to Mardin are the decorate doorknobs, each giving a distinctive character to every door. Doorknobs in the shape of rings, honeysuckle and stylised cock figures are still in use. In Mardin, you can sometimes see two different doorknobs giving different sounds for men and women. In some places, you may even see doorknobs for children.

Shahmaran Shahmaran is a legendary creature unique to this region. With a snake body and a female face, Shahmaran figure is very popular among painters, coppersmiths and writers in Mardin. This figure is seen very often especially in the painting technique called painting under glass. It is both memorializing to Mardin and believed to bring good luck.

Products Savur district of Mardin and its surrounding is the famous vineyard land. Here people make slightly fermented grape juice, walnuts on a string dipped in starch grape molasses and wine. It is known that in Ottoman Empire times, every year 800 kg of dry plums were sent to the sultan. The supply is plentiful, citrus fruits, apricot, apple, nut, pear, plum types, cherry, sour cherry, walnut, almond, peach, peanut, bıtım and all other fruit, vegetable and legumes can be grown in Savur. The area surroundings are mapped with vast vineyards and olive fields.

MARDIN CUISINE Mardin has a very rich cuisine with diverse kinds of meals prepared with meat and cracked wheat, with delicious harmony of mixed vegetables. The speciality of the “Mardin Cuisine” come from the diversity of the spices grown in the region together with care and time allocated to cooking. Cinnamon, cilantro, mahalep, ginger, allspice, sumac, chili pepper and almond can be counted as the materials enriching Mardin Cuisine.

Different cultures in Mardin show their impacts on the cuisines of the region. Among the common regional dishes of Mardin which became a mix culture, there are flour soup, red lentil soup, lentil ball, fresh almond with meat, plum with meat, vegetable stew with meat, stuffed lamb ribs, tripesoup, stuffed vine leaves, wheat rice with noodles, closed Turkish pizza, stuffed mutton balls, steak tartar a la turca and quick bread with meat.


HANDCRAFTS IN MARDIN Stonemasonry The material used in Mardin architecture is stone. Limestone in Mardin was mined from slopes in the southern region of the city in the past. In 1925s, these limestone deposits were exhausted. Famous architect Sarkis Lole discovered the stone deposits in Midyat. The best samples of stonemasonry welcomes us in Mardin and its surroundings, in every corner. Every door, window and every detail has its share of this wonderful stonemasonry. The main patterns of stone ornament are helix, tulip, bunch of grapes and carnation.

One of the oldest families in this field is Assyrian Ĺžimmas Hindi family who has been known as painter and printer for 200 years. Today Ms. Narsa, the oldest member of the family having decorated all the churches in the region with the printed curtains and paintings they made, continues to keep the printing art she learned from her ancestors with religiously patterned covers she produces.

Weaving

This handcraft continues its existence in the historical arcade of Mardin for centuries. Engraving traditional patterns on copper is executed still today by manual, hand and etching tools.

Particularly in Artuquid time (1108-1406) together with period of principalities in Anatolia, Mardin was known for its wool leaves and cotton fabrics. Silk fabric woven in the weaving loom from the raw silk produced by Yezidis developed as a weaving industry in 15th century with the dominance of Akkoyunlus and reached a broader market in Ottoman times.

It means wirework and it is the handcrafted ornament made with gold and silver metals turned into wire. The region of origin of the famous filigree jewellery made on silver is of the Midyat District of Mardin. Thanks to their craft in this area, Assyrians are called as “the magician of cloth and gold�.

Saddle making was once one of the most important professions of the Madrin history, now in threat to be lost with the entrance of automobiles. A few craftsmen still perform this profession.

Printing

Visitors of Madrid quickly realised the abundant number of tailor shops in the city. Developed cloth trade, clothes coming from Syria and people of Mardin taking care of their outfits triggered the development of the tailoring profession in the city.

The art of dying clothes with madder and decorating them with patterns from hand made wooden prints is still practiced in Mardin.

STRONGLY RECOMMENDED TO SEE Mor Gabriel Monastery It is 80 years older than Mor Saba Monastery in Palestine. It is one of the oldest and still active monasteries of the world. With this feature, it has a very important position in both the Turkish country and the world cultural heritage.

Deyrulzafaran (Mor Hananyo) Monastery 5 km away from the city centre, Deyrulzafaran (Mor Hananyo) Monastery was constructed on a mountain slope used first as Sun Temple and afterwards as castle dominating the plain by Romans. Deyrulzafaran (Mor Hananyo) Monastery was the resident of Assyrian Orthodox patriarchs for 640 years between 1293 and 1932. Because of the saffron plant grown around the monastery, the place started to be called “Saffron Monastery” after 15th century. Residence of metropolitan of Madrid, Deyrulzafaran Monastery is visited every year by Assyrians spread around four corners of the world for praying and fertility.

Constructed in 1177, Hatuniye Madrasa is a two-storey building with two iwans and arcaded yards. Inside the mosque, there is the footprint regarded to belong to the Prophet Muhammad. Hatuniye Madrasa is one of the most important works of Artiquids.

Domed mosque extended to the sided tail, vaulted porches and deep vaults are connected to the big eyva fountain. In a high arched niche water gushes out of the wall and flows through a trickle into a basin in the middle of the madrassa. Above each of the low doors to the small classrooms showed a symbol the field of study. The artificial source of water in the wall symbolizes the birth, the trickle the childhood and youth and the basin symbolizes the place, where the people will gather after death on the day of court. About the red stains on the walls the legend relates that when Kasım Pasha died in a battle with Timurids, his sister threw his bloody shirt to the wall. Standing on the roof of Kasımiye Madrassa offers a wonderful view over the region of Northern Mesopotamia.

Ulu Mosque (Cami-İ Kebir) Its initial construction was by Seljuqs in 11th century according to the inscription, Ulu Mosque is the oldest mosque in Mardin. Three naves positioned parallel to the kiblah wall are covered with a dome with squinch and external flute along the two naves in front of the altar. Based on six carrying columns, the dome dominates the whole space. Its minaret was constructed during the time of Artuquid Emperor Kutbettin Ilgazi.

Abdüllatif( Latifiye) Mosque Constructed by Abdullatif Bin Abdullah from Artuquids in A.C. 1314 and found in the centre of the city on the south part of Republic Square. Abdüllatif( Latifiye) MosqueIt attracts attention with its portal and decorations which are the best conserved among Mardin structures. It has an arcaded yard.

Zinciriye (Sultan Isa Madrasa) (14. Century) With two storeys on two terraces, it has the form of a social complex with mosque and tomb. In the Madrasa, there is the tomb of Sultan Isa and many old inscriptions. The reason why Madrasa was constructed at a high level is because it was first meant to be an observatory.


ARCADE OF MARDIN Resembling a maze, arcade of Mardin is one of the most attractive arcades in Anatolia. Inside the arcade, Kayseriye arcade and Porched arcade especially draw interest thanks to their architectures. Kayseriye Arcade (Covered Bazaar) is inside the arcades in the north of Ulu Mosque. It is dated back to XVI. century (1487-1502) Aqqoyunlu Kasım period. While only the external shops are used in a partially changed form and most of the arcade has been torn down, Kayseriye shows a plan layout similarly to the Ottoman covered bazaars. Porched Arcade (Arcade of Tellarlar, Middlemen in English) is a bit more in the south of the east of Reyhaniye Mosque. It was constructed around the midst of XVII. century. It has one road in the middle covered with arcades on both sides and has a layout consisting of one line of deep shops behind the arcades. In Mardin, almost every branch of profession has its own arcade.

These arcades have undergone change in time; Flour Arcade, Shoemakers’ Arcade, Covered Arcade, Hasan Ayar Arcade, Meşkin Arcade, Butchers’ Arcade, Bilebil (Nightingales) Arcade, Republic Arcade, Carpenters’ Arcade, Linen Drapers’ Arcade, Jewellery Arcade, Silversmiths’ Arcade, Middleman (Cavalrymen) Arcade, Coppersmiths’ Arcade, Hardware Arcade, Chickpea Sellers’ Arcade.

MARDIN AND TRAVELLERS Many travellers, historians and scientist have visited Mardin for centuries. Venetian traveller Marco Polo stops by Mardin both to rest and to see the city on the historical Silk Road during his travel from Europe to Asia in 1200. Ibn Battuta visits Mardin on his way back from Iran-Iraq trip in 1327 and states “Mardin, as a city founded on the slopes of a mountain, is one of the most beautiful Islamic cities.” When Evliya Çelebi, Turkish traveller who lived in 16th century comes to Mardin, he notes that the city and its castle amaze him. Albert Gabriel and Mardin Visiting Mardin in 1939s and making research on the architecture of the city, Architect Albert Gabriel draws the plan of the city and examines the monumental structures. Coordinates Hagia Sophia (41°0’29”N 28°58’47”E) With a 33 meter wide dome dating back to the 6th century and is among the most ambitious building projects ever undertaken even to date. It was considered to be the most “sacred piece” of the city during the Byzantine age. After 1453, it was converted to a mosque and in 1935 it was opened to visitors as a museum.

The Topkapi Palace (41°0’46”N 28°59’2”E ) Was the political centre for the Ottoman Empire for 4 centuries and is situated on the tip of old Constantinople. It now serves as a museum where Ottoman kitchen equipments, clothing, jewelled thrones, daggers and the world wide famous “Kasikci Diamond” are exhibited.

The Blue Mosque 41°0’19”N 28°58’35”E ) With the uniqueness of its 6 minarets reaching for the sky, built in the 17th century, is the greatest and most splendid mosque in Istanbul with charming blue tiles.

Alexandreia Troas The ruins of ancient Alexandreia Troas, often just called Troas (presentday Eskiistanbul) occupy a now lonely site 80km/50mi to the south of Çanakkale, near Ezine. An important city at the time of Lysimachos, the massive remains date mainly from the Roman period.

This city became famous for bringing up a number of important philosophers such as, Thale ,Anaksimenes and Anaksimondros as well as Isidoros,who was the architect of Hagia Sophia.

Located in Izmir, the provincial district of Bergama,Pergamon is one of the major sites of antiquity in Turkey.

Didyma (37°21’00”N 27°14’00”E) The temple of Apollo in the ancient city of Didyama was the largest oracle center in Western Anatolia as well as the third largest religious center in the Hellenistic world.

Pamukkale-Hierapolis (37°55’23”N 29°7’26”E) Comprised of historical and natural conservation zones, the exquisite Pamukkale region is famous for limestone travertines resembling paradise. Pamukkale is one of the most interesting places in the world.Over the millennia,calcium-oxide rich water flowing down the ruins,have built up deposits of white travertine on the plateau.

Gallipoli (Gelibolu) (40°20’00”N 26°30’00”E) The Peninsula is a national park where there are many war memorials and cemeteries belonging to Turks, Australians, New Zealanders, British and French. Each year on April 25th war veterans and their families visit this place. Devil’s Foot (Seytan Sofrasi) On the hill, just above the Çamlik Forest there is a indentation that looks like a huge footprint better known to the locals as the Devil’s Footprint. The incredible view from this point on the hill overlooks all the surrounding area coves, coastline and is especially nice at sunset.

House of Virgin Mary (37°55’00”N 27°20’00”E ) Located on the top of the “Bulbul” mountain 9 km from Ephesus, the shrine of Virgin Mary enjoys a marvelous atmosphere hidden in the greenery. It is the place where Virgin Mary may have spent her last days. Indeed, she may have come to the area together with Saint John, who spent several years in the area to spread Christianity. Virgin Mary preferred this remote place rather than living in a crowded place. St.John’s Church: It is believed that St. John had spent his last years in the region around Ephesus and was buried in the southern slope of Ayosolug Hill. Three hundred years after the death of Saint Paul, a small chapel was constructed over the grave in the 4th century. The church of St John was changed into a marvelous basilica during the region of Emperor Justinian (527 -565 AD)

Bodrum Castle (37°1’53”N 27°25’46”E) Bodrum Castle was built by the Knights of Rhodes in honour of St.Peter between 1415-1437. The stones and marbles of the Mausoleum, which is one of the seven wonders of ancient world and destroyed by an earthquake in 14th century, were used for the construction of the castle. There are five main towers, reflecting the architectural styles of the nations by whom they were constructed, called English Tower, French Tower, Spanish Tower, Italian Tower and German Tower. The Knights built the walls facing the sea thin, and fortified the walls facing the land, as they had expected attacks from the land. (10 minute drive from Milta Marina) Mausoleum: Constructed as a funeral monument by Artemisia, queen of Caria after the death of her brother & husband Mausolos, the Satrap of Caria 352 B.C., the architect was Pytheos. The four facades were decorated with relief friezes executed by (the eastern facade) Scopas , (the northern facade) Byraix , (the southern facade) Timotheos , and (the western facade) Leochares. Statues of Mausolos and Artemisia, riding a chariot drawn by four horses from the crest of the monument are now to be found in the British Museum. (5 minute drive from Milta Marina) Amphi Theatre: Situated on the hillside overlooking Bodrum. This theatre whose capacity is around 13.000 was built during Carians’ reign in Hellenistic age (330-30 B.C.) The theatre consists of three different sections: a place for audience, a place for an orchestra and the stage. It became an open-air museum after the excavations made in 1973.(10 minute drive from Milta Marina) Gemiler Adasi From a far this looks like mainland however is an island. Here you will find many ancient foundations,churches and the rendance of the time. Between the island and the mainland you will find perfect anchorage for the evening with one of the best sunsets to be seen in Turkey

Ölüdeniz (36°32’56”N 29°7’29”E ) One of the jewels of the Mediterranean region, Oludeniz, is just a few minute drive from Fethiye with an astonishing crystal-clear blue lagoon and a beautiful photogenic long white beach. The beach at Oludeniz offers a huge variety of watersports, there is paragliding from Babadag Mountain (1950m.) onto the beach below. Butterfly Valley(Protected by the World Heritage Foundation) is a canyon with high waterfalls run from the top down through a canopy of trees which shelter an abundance of unique Butterfly species. The most unique of these being the Tiger Butterfly and over 70 different species.

Dalyan River (36°40’00”N 28°45’00”E) Enjoy a tour with local river boats that will weave their way through small inlets bringing you to the scenery of famous “Lycian Rock Tombs”.

Xanthos (36°21’25”N 29°19’15”E ) Capital of the kingdom of Lycia-the oldest republic in the world Letoon: Letoon was formerly an important religious cult center where three temples dedicated to leto, Artemis and Apollo stood in ancient times. Patara: A principal harbor of ancient Lycia, Patara is reached by following a winding mountain road before descending to the site. The ruins are numerous and interesting. Patara is also a place for beach lovers. Its 22 km of pure white sand stretches as far as the eye can see, making it a natural choice for all types of beach sports.

Kekova (Sunken City) ( 36°10’52”N 29°52’42”E) Along the northern shore of Kekova Island at Apollonia,earthquakes have disturbed the land causing some of the ancient houses to sink under the clear water, creating a sunken city. Myra: At the ancient Myra many splendidly carved rock tombs overlook the magnificent Roman theater. St. Nicholas was the bishop of this Mediterranean city during the fourth century, and died here in 342. The Archaeological Museum: with remains from the Paleolithic Age to Ottoman times, offers a glimpse of the area’s rich history.

Aspendos Theather (36°56’20”N 31°10’20”E) Aspendos is known for his best-preserved theater of antiquity with seating for 15.000. Still used today, the theater’s galleries, stage decorations and acoustics all testify to the architects success. Touring the

Greek islands HYDRA 37° 15 0 N, 23° 8 0 E Kaminia is a small fishing port in close distance from Hydra Town. It has nice taverns at the waterfront and a calm beach. Vlichos Beach is one of the few true beaches of Hydra, Vlihos Beach is situated in the little resort of the same name. It is a small pebble beach with crystal-clear waters. On the Greek island of Hydra the bastions with cannons that were used for the protection of the harbor in due time war, can still be seen. During the 18th century, Hydra was in need of these cannons to protect the Island from attacks.


RHODES 36°10’0”N, 28°0‘0”E Natural stone surfaces ideal for reclining under the sun, pine trees reaching down to the water’s edge, emerald green water - Anthony Quinn certainly showed impeccable taste when he fell in love with its miniature bay. Stegna Beach is located 32 km south of Rhodes town and it is a bit secluded and unspoilt. On the right you will find peace and quiet and a family atmosphere, while on the left a private beach for guests of the one and only hotel, occupied mainly by groups from Germany. The long sandy beach of Tsambika is located 25 km south of Rhodes town, under the imposing rock where it stands the miraculous monastery of Tsambika. St Paul’s Bay is a small rocky bay about one quarter mile square just south of Lindos town. The bay is a great place for snorkeling and is relatively shallow at about 20 feet deep. Note: Yacht could stay on anchorage at Lindos. While in Rhodes the best restaurants where we always suggest are : Fotis Melatron, Alexis Old Town(Socrates Street) and Alexis Four Season. SYMI 36°35’00”N, 27°50‘03”E

The beautiful island of Symi is divided into several distinctive areas. Yialos (Gialos) is the main harbour, Chorio is the town above the harbour (sometimes known as ‘top town’). Yialós, is a beautiful harbor. While it is well protected from the meltemi, it can become problematic with strong S winds. It is also a busy harbor and subject to considerable ferry wash. It is not an easy harbor for yachts because it is deep and its bottom of mud and rock does not always provide good holding. It has a number of wonderful beaches, such as Nanous Beach and Agia Marina, both of which have a taverna, and Symi’s only sand beach Agios Nikolaos. The beach at Georgiou Disalona Bay is set against a backdrop of towering cliffs. Panormitis Beach offers good swimming in calm crystalline waters. The beach is located a short walk from the famous Panormitis monastery. Cool off with a refreshing swim, sunbathe on the beach or go for a walk through the tamarisk woods that fringe the beach.

The more remote Marathounta and Agios Emilianos beaches are only accessible by boat. If you like the combination of pebble and goats, you should immediately go till Marathounda beach. Here are a bunch of domestic goats who do everything they can to steal food from the tourists. Around the only taverna is a high fence to stop the goats from entering. It helps so-so. The goats are really full of ideas and they often steal food anyway. Many guests think it is fun, and feed the goats. Agios Vasileios in Symi is the most preferable place to anchor. There is a must here, you have to visit Manos Fish Restaurant! It is incredible meal of fish and mezes and if lucky you will meet Manos himself. he is normally there in the kitchen, a waiteras well with sit down and have a ouzo with some special guests if there is time? There will be the occasional dish breaking ceremony and don’t forget to ask about Mama.


MYKONOS 37°27’N 53” 25°19’20”E Mykonos is part of a cluster of islands including Delos, Rhenia and some rocky islets. You will find your choice of tavernas for al fresco dining, ouzo drinking with tidbit and the traditional tastes , and sandy beaches and scenic views are everywhere -- landmark windmills, unique “cube” architecture, nearby islands (especially Delos, an archeological marvel accessible by 20-minute boat ride). In the streets of Mykonos, most important of which is Matoyianni, one can buy clothes, jewellery and works of art designed by the most celebrated designers and artists. Chora is also the starting point if you want to discover the rest of the beauties of the island, its picturesque interior and spotless beaches. Considered being the most beautiful beach of

the island’s south-west coast, Agios Ioannis has soft sand and crystalline blue waters. From there, one can enjoy an amazing view over the island of Delos. A good place to get away from it all. Not too close to the town to be packed so a good place to enjoy a smallish beach. The isolated sandy beach of Panormos is located on the northern coast of the island. It has gold sand, forming low dunes in some parts and crystalline waters. When in Mykonos you have to try Louza of Mykonos, is a very characteristic and delicious snack which competes in terms of preference, for those who have tried the Greek delicacies, with the –also famous– sausages of Mykonos. This is a traditional type of cooked pork meat which is produced by homegrown

veal and includes the whole of the fillet from the back of the animal with the bit of the fat that covers it. This dries up and is “broiled” by the north wind of the beginning of winter and the sun, prepared with a lot of salt, pepper and other spices (thribi). Also Kopanisti of Mykonos, is a characteristic, very spicy cheese, which the tasters appreciate for its special peppery tastiness. It excellently accompanies ouzo and any other strong Greek aperitif, on bread or –in the Mykonian way– on sop barley rusk, together with tomatoes or cucumber.

Undiscovered European Yacht Destination

Albania It sounds unlikely, but the ‘Albanian Riviera’ is set to become the newest hot beach destination of the overcrowded Mediterranean. For all those who seek privacy, clear waters, and long secluded sandy beached and untouched nature, Albania is the perfect hideaway.


KSAMIL ISLANDS Small stretch of islands between Corfu and Saranda is called Ksamil Islands. Covering a total area of 15 hectares (5 hectares of land and 10 hectares of sea), they range from 7.5 – 15 meters above sea level. These small islands are located very close to each other, and are covered with typical Mediterranean plants and bird life. A number of restaurants have been built up on the hillsides of Ksamil, offering visitors’ fresh fish and seafood from the Ionian Sea, mussels from Lake Butrint, and fresh meats supplied by local stockbreeders. In the summer months, be sure to have enough time to swim at these secluded pebble beaches at Ksamil Islands.

BUTRINT A visit to the ancient city of Butrint is another must when traveling in the vicinity of Saranda. Butrint is described as a microcosm of European history since it exhibits remains from most major empires of the area, including Greek, Roman, Byzantine, and Ottoman ruins. Interesting things to see in Butrint include the Greek amphitheatre (later remodeled by the Romans), the baptistery, the cathedral, the lion’s gate, and the museum, which includes many interesting artifacts found in the area. Butrint is one of several places in Albania, which was kept off-limits to the general public during the Communist Era. The city was made into a tourist destination for foreigners to visit, but Albanian citizens were not allowed due to fears that they would try to escape by swimming the short distance to Greece. www.c2cyachting.com

THE BLUE EYE - “SYRI I KALTER” This natural, deep spring embodies the clear, vibrant blue color seen in many of Albania’s water bodies. The way in which the water bubbles up to the surface helps create the illusion of an eye, with the dark-colored center as the pupil, and the surrounding blue water appearing as the iris. The spring is reported to be about 45 meters deep, but some say it goes even further. During Albania’s communist days, the Blue Eye was one of several places reserved only for the communist elite to visit, and was kept off-limits to the general public.

LEKURSI CASTLE Built in the 16th century (circa 1537), Lekursi Castle is located on the top of a hill, overlooking Sarandë. There are excellent views of Corfu and the islands of Ksamil from the castle, and inside you’ll find a nice restaurant that is frequently visited by tourists. The castle was built because the vantage point was ideal for protecting the city from invaders who might have tried to come by boat.

PORTO PALERMO – FORT OF ALI PASHA Visit this magical harbor of astonishing blue waters and the castle of Ali Pasha, notorious ruler of this region. Starting from Himara towards the south, after the gulf of Llaman, you can explore the most stunning view of the region and even the entire Albania, the Gulf of Porto Palermo. In a magical cove with calm blue waters lies the small peninsula on which the castle of Porto Palermo is built. On the north site in a hill named Lera, visitors can visit the remains of an ancient castle. Castle was built in the beginning of the 19th century by Ali Pasha of Tepelena for his beautiful young wife. It is beautiful structure, well-kept inside, surrounded by lovely beaches and very clean water. It has a rectangular shape with four bastions in its corners. Along the terrace’s parapet is a positioned loophole for canons. The inner space is made of halls, stores and other areas. Stone stairs leading to the terrace are located in the central part. Walls protect the entire area with gun loopholes at the front and at the side. Outside, in the archway entrance, is a stone balcony in the form of a cantilever.


THE LAGOON OF NARTA Narta is the second biggest lagoon of the country and protected bird sanctuary. 40 different winter bird species, over 20 000 birds in total, are inhibited here. Around the lagoon grows a very rich flora and fauna, typical for the Mediterranean. The area of Zvernec is famous for the coastal attractions mixed with the cultural and traditional richness that compose a high potential for the development of tourism. Inside of Narta Lagoon lies the island of Zverneci, very famous for the old monastery, which expresses the cultural values of the zone.

KARABURUN-SAZAN NATIONAL MARINE PARK Karaburun-Sazan National Marine proclaimed in 2010 is the only national marine park of Albania. The park covers a marine area stretching 1-nauticalmile (1.9 km) along the coastlines of Karaburun Peninsula and Sazan Island near the Bay of Vlora. The marine park is 16 kilometres (9.9 mi) long with a width varying from 3 to 4.5 kilometres (1.9 to 2.8 mi), and covering 12428 ha of surface in total. Karaburun Peninsula itself is a Managed Nature Reserve while Sazan Island is a military zone in Albania. The marine park features ruins of sunken Greek, Roman and World War II ships, rich underwater fauna, steep cliffs and giant caves, ancient inscriptions of sailors on shore, secluded beaches, and breathtaking views of the coastline. Be advised that the park is located nearby military bases so permission may be required from local authorities first. Insight Kotor The Old City Of Kotor is an ancient trade center, due to its fortified entrance to the sea. It’s also a UNESCO World Natural and Historical Heritage Site and Montenegro’s most famous town. The Old Town is a well-preserved collection of buildings, churches, squares and stone streets that date back to the Middle Ages. The car-free, walled town is just across the street from the city’s port. Kotor is full of shops and little restaurants for coffee, beer or lunch, mostly eaten outside on tables placed in one of the city squares. Pick a square, order a coffee, and gaze at churches from the 12th through the 15th centuries. If you’re reading about each of these churches from a guidebook, sitting in Kotor’s midmorning sun with your coffee, you’ll be onto your second cup before you get through the chapter. Looking for great views? Put on your walking shoes for a hike. The city walls climb the mountain behind the town, and it’s about 90 minutes up to the fortress at the crown (at 853 feet) and back down.

Insight Perast Perast is the best preserved baroque architectural settlement on the Adriatic. In this small fisherman village it look like time has stopped centuries ago and everything reminds of the famous maritime past of this city. Two magical islands situated between the Verige passage and the towns are landmarks of entire region. Although differing in many respects, they lie in harmonious conjunction; the island of St. George - an intense, stalwart, dark and inwardlooking natural island, and Our Lady of the Rock – a man-made island that was built by scuttling old ships and depositing stones around a small crag. According to legend, the islet was made over the centuries by the seamen who kept an ancient oath after finding the icon of Madonna and Child on the rock in the sea on July 22, 1452. Upon returning from each successful voyage, they laid a rock in the Bay. Over time, the islet gradually emerged from the sea. The custom of throwing rocks into the sea is alive even nowadays. Every year on the sunset of July 22, an event called fašinada, when local residents take their boats and throw rocks into the sea, widening the surface of the island, takes place.

Insight: Mamula MAMULA On the sea charts this island is also known as Lastavica (The Swallow) it was named it generally accepted name Mamula after the Austrian general Lazar Mamula, who made fortification on the island in the mid 19th century. Mamula is an uninhabited island at the entrance to the Bay of Kotor, 3.4 km far from Herceg Novi. It has circular shape and its diameter is 200 m; it is covered in low vegetation, with a beach and a pier on the north side. During both world wars there was a prison on this island and now there is a memorial plaque placed in memory of that period. Mamula is still a deserted island, but also a favorite summer picnic resort.

Insight: Blue Cave The Blue Grotto (Plava Spilja) is a natural phenomenon that surpasses it’s cousin, the Blue Cave on the Italian Island of Sicily, because unlike it’s Italian cousin, it’s much less traveled and not yet polluted by innumerable touristic boats. Entering the this blue cave itself at first seems like a daunting experience – the rock above the entrance is low and as your eyes adjust, everything seems to be cast in extreme darkness. However, after realizing that the cavern is large enough to accommodate several boats,

you pass a small bend and realize why this natural wonder is called the Blue Cave – luminous, brilliant blue light wells up from under the water and casts a blue shadow on the grotto’s ceiling above you. You slowly lower yourself from the boat and enter the pale-blue waters that strangely enough are several degrees warmer than water outside the cave.

Insight: Sveti Stefan Sveti Stefan is most exclusive resort at the Montenegrin coast and it was featured on cover of prestigious National Geographic Traveler (edited once in decade), among the “50 Places of a Lifetime“. In the 15th century the island was a fishermen’s village. In the 1950s the last residents of the village were evicted, and Sveti Stefan was transformed into a luxury town-hotel. The streets, walls, roofs and façades of the buildings were, for the most part, preserved, while the interior of the building were transformed to offer the most modern luxury hotel comfort. Sveti Stefan, in the 1970s, was popular among celebrities, and among its guests were Princess Margaret, Marilyn Monroe, etc.. KITE SURFING 15 km long, covered with fine sand, with a completely untouched nature in the background and crystal clear water, Long Beach in Ulcinj is one of the most interesting kitesurfing destinations in the Mediterranean.


Recent years, long beach has grown into a gathering place for surfers coming from wellknown surfer destinations such as Australia, Egypt, Portugal etc. Kitesurfing or kiteboarding is a surface water sport combining aspects of wakeboarding, windsurfing, surfing, paragliding, and gymnastics into one extreme sport. A kitesurfer or kiteboarder harnesses the power of the wind with a large controllable power kite to be propelled across the water on a kiteboard similar to a wakeboard or a small surfboard, with or without foot-straps or bindings. The terms kiteboarding and kitesurfing are interchangeable. Choose your style.....freestyle, freeride, speed, course racing, downwinders, wakestyle, jumping and wave-riding.... In 2013, the number of kitesurfers has been estimated by the ISAF and IKA at 1.5 million persons worldwide. Due to unique wind conditions chasing away the average beach goer, Ada Bojana the furthest point of Long Beach is the perfered heaven for surfers. Summer wind speeds at Long Beach allow kitesurfers to achive moderately high speeds however, fall winds bring nuking....gusting up to 70 km/h (50 mi/h) hit the beaches water ways in September and October offering extreme kite to its worshipers. American Rob Douglas reached 49.84 knots (92.30 km/h), becoming the first kitesurfer to establish an outright world record in speed sailing. Previously the record was held only by sailboats. Currently, the owner of the world record is French Sébastien Cattelan, with 55.49 and was the first rider to reach 55 knots.

You are probably wondering whether is it possible to travel great distances on a kiteboard. Francisco Lufinha is the distance record holder (at once) with a 537 km travel from Gaia (Portugal) to Algarve (Portugal) set on September 18, 2013. For women, it’s Kirsty Jones setting a distance record for a kiteboard when she travelled 225 km (140 mi), crossing solo from Lanzarote in the Canary Islands to Tarfaya, Morocco, in about nine hours. But Louis Tapper completed the longest recorded kite journey, completing 2000 km between Salvador and Sao Luis, Brazil. The journey was completed between July/August 2010 and took over 24 days of kitesurfing. This trip is also the longest solo journey, completed without support crew, using one kite and a 35 litre backpack. The previous longest recorded kite journey was by Eric Gramond who completed a 13 day trip of 1450 km along the coast of Brazil. A team of six kitesurfers crossed the Atlantic ocean, from the Canary Islands to the Turks and Caicos Islands a distance of about 3,500 miles (5,600 km), from November 20, 2013, to December 17, 2013. Each of the six spent four hours each day surfing, broken into two sessions of two hours each, one during the day, and the other during the night. Long Beach in Ulcinj with its consistent, steady side-onshore winds, large open bodies of water and good launch areas has become renown as “the kitesurfer’s paradise. It has been in the past few years since Montenegro became a popular destination among mega yachts. Yachting development has brought many advantages to local community and exciting job opportunities for its local citizens.


One of them is chef Gracija Matijevic, a proud member of Montenegrin Culinary Association and former Professor at Secondary Culinary School in Budva. Passionate about national cuisine and traditional cooking techniques he has been, together with his colleagues at best Montenegrin hotels, devotedly working to incorporate traditional Montenegrin flavors into a tasty, contemporary dishes that can be served at any 5 star hotels and fine dining restaurants. He doesn’t hide his excitement to be part of yachting industry and told us that yachting has brought him a the opportunity of having access to finest ingredients, the possibility to experiment with different flavors and freedom to create menus and dish presentation of his own choice. Chef Matijevic shared with us that he uses every opportunity to introduce guests onboard these yachts, with traditional Montenegrin Mediterranean dishes. Not to his surprise guests are always asking for encore and rate his menus as quite special. “The Montenegrin cuisine based on cereals, fish and olives and inland dairy products and cheeses play a significant role. Montenegrin Coastal cuisine is significantly different from that of the cuisine found in the Northern areas of the country. While Northern cuisine has been developed under a Turkish

all its traditional dishes. influence, coastal cuisine has a distinctively Italian flavor which shows in the way that meat is cured and dried, cheese-making, wine, and spirits, the soup and stew style, polenta, “priganice” (fritters), “raštan” (collard greens), etc. However, Montenegrin coastal cuisine does have its own distinct identity,

especially in regards to the fish preparation and cooking. The tradition of grilling and roasting fish and seafood has been carried down from generation to generation, where the taste of the fish depends on the grilling technique and the type of wood chosen. The most frequently used are stripped red mullet, dentex, gilt-head bream, but also flat head Mulley, greater amberjack and sardines.” – he said.

Kacamak is very popular with people living in the villages, as it is a good source of energy for the hard labor folk. Chef Matijevic has shared with us the 4 basic ways that Montenegrins prepare fish entrees:

Cicvara

1. Fried 2. Boiled (“lešo”) Fish “lešo” boiled in water along with oil, vine vinegar, onion, laurel and other spices. It is served with boiled potatoes 3. Grill (“gradele”) Preparing the fish on the “gradele” is to grill it, but traditional is grilled on wood and coal. During the preparations the fish is soaked in aromatic herbs, mainly rosemary. It is served with delicate garlic sauce, fresh parsley and olive oil along with vegetable or salad. 4 “Brodet” Scrumptious fish stew which is prepared with three kinds of fish. Fish and shellfish are prepared a la "buzara", intensively roasted with wine, oil, spice and vegetable. Brodet is traditionally served with polenta.

OTHER TRADITIONAL DISHES INMONTENEGRO Traditional dishes in Montenegro are the result of both the country’s geographic position and its interesting history. Flavors from Italy, Turkey, Serbia and Croatia have significantly influenced the country’s cuisine still today. However, the Montenegrin cuisine keeps to its strengths, natural, organic ingredients that are used in preparation of

Similar in esthetics to the Kacamak yet quite different in flavor and texture, cicvara is made from cooking crumbled cheese pieces, and when the grease or fat is released, wheat flour is added to achieve the desired texture. The mixture, porridgelike, can be eaten with cooked potato and sour cream. This dish also provides high energy and is pleasant tasting as it seems to melt in the mouth.

Njeguska Prsuta (Prosciutto from Njegusi village) The production of high quality prosciutto in Montenegro has a very long tradition at Njegusi. There are several production companies in this small mountain valley. Though, production is in large scale, Njeguska Prsuta has kept to its traditional mannerisms. It is not produced year round, but only in season, depending on the right climate. Most often the production begins at the beginning of November when temperatures outdoors drop below 10⁰C. Production begins by the salting process: salting experts rub the sea salt into pork legs weighing from 8 to 12kg. This is followed by with pressing. Finally, this hung for drying. Smoke is produced by pure beech sawdust and logs which are free of additives for a clean smoked taste. Fire is set every other day, for the period of 30 to 40 days. www.c2cyachting.com

In the months to come, it ripens and dries in the air. The best quality is achieved in the period from 10th and 12th month from the beginning of the production. This high quality of prosciutto is product of climate zone crossings, Njeguši – Mediterranean and continental climates.

Lamb under the iron pan The basic characteristic of this meal is the dish in which this meal is prepared. Iron pan is a dish, which most often is made of cast iron, and it is used to cover the base pan, which is filled with meat and potatoes. The embers from the hearth are then placed ontop of the cast iron creating this peculiar upside down baking process. The meal is extremely aromatic and tasteful because “sac” (iron pan) does not allow the liquids and the aromas to evaporate. Unique and must try.

Popeci from Podgorica There are many meals that are specific to Podgorica, but Popeci is by far the favorite amongst locals. This is a meal made from pork fillets and is interestingly arranged. Blanketing a veal steak with a piece of cheese or old ‘kajmak’ and a piece of ham ‘prsut’ rolled tightly as one, then deep fried, resulting in a rich juicy interior and a crunchy and tasty exterior.

Kotor Fish Stew Fish is probably the most traditional ingredient in coastal cooking. Fish stew from the Boka Kotorska region, is one the most famous of all coastal dishes. It is made from sprat and cooked with celery, garlic, onion, red pepper and white wine. Your side dish to complete this fabulous course would be mussels cooked in wine, justly seasoned with parsley, garlic, breadcrumbs and black pepper.

Fritters (“priganice”) When you think about a traditional Montenegrin desert you usually think of “priganice” (fritter), “Priganice” are easy and quick to prepare, and they are served with honey, jam or cheese. EASY TO PREPARE, LOCAL RECIPIES BY CHEF GRACIJA MATIJEVIC Traditional fish chowder

Octopus salad:

1,5 kg white fish 1.5 liter Fish Broth 0.8 dl olive oil 150 gr onion 15 gr garlic 1 lemon Parsley 1 Bay leaf 100 gr Carrot 50 gr Celery Salt and Peeper up to taste 2 tbsp. Red Wine vinaigrette 1 tsp paprika powder 100 gr fresh tomatoes

1kg octopus 200 gr onion 20 gr garlic 100 gr fresh tomatoes Parsley Salt and pepper Olive oil Lemon juice

Stir-fry finely chopped onion, garlic, grated carrots and celery at extra virgin olive oil. Add salt and pepper. Add to the sauté paprika and pour in fish broth. Add chopped tomatoes, parsley lemon juice, vinaigrette, fish meat (from fish used to prepare fish broth) and bay leaf and let it cook slowly for about 1 hour. Add salt and pepper to taste.

Boil Octopus until soft not rubbery consistence (depends on octopus size), once achieved remove from the water, let cool and finely chop. Add finely chopped onion and garlic, chopped fresh tomatoes and season with salt pepper, olive oil, lemon juice and parsley.

NAVAL HERITAGE Porto Montenegro has been enriched by Naval Heritage Collection representing a special homage to this region’s glorious and intriguing maritime history.

Porto Montenegro, the nautical village and high-end marina development intended for yachts of all sizes, with the infrastructure meeting the most sophisticated needs of yachts, their owners, crews and guests, is currently under construction in the Boka Bay, at the location of the former military shipyard Arsenal. Porto Montenegro has been enriched by Naval Heritage Collection representing a special homage to this region’s glorious and intriguing maritime history. Reflecting the area’s rich maritime traditions, the Naval Heritage Collection is housed in a beautifully restored building and tells the remarkable story of the Adriatic’s maritime past. Showcasing over 300 artifacts, from Yugoslav submarines to the diaries of Montenegro’s Princess Ksenija, Austro-Hungarian ship equipment and industrial machines, some of them more than 100 years old, the airy, light-filled space attracts visitors young and old. Themed exhibitions are displayed throughout the year in addition to the permanent collection pieces. For many though, the star attraction remains the colossal P821 submarine standing proudly across the street from the NHC building.

As a logical sequence to the rich (sub) marine history… Arsenal, where ships and submarines were repaired, marked not only the development of the town of Tivat, but also the development of maritime industry of the south Adriatic. Arsenal was established in 1889 on the initiative of Admiral of Austro-Hungarian Navy and admirer of the Boka Bay, Maximilian Daublebsky von Sterneck. Maximilian has been remembered as a great reformer of the Kaiser’s navy, and under his command, the Austro-Hungarian Navy became a powerful naval force. The same year, representatives of the Municipality of Tivat, on the ship called Keiser Franz Josef I, signed an agreement on ceding the land to the command of the Austro-Hungarian Navy. The great AustroHungarian Empire located its port within the bay of the excellent seamen and scientists. Count Frano Viskovic invented a dromoscope (a device for discerning the deviations of ship’s compasses) and a cyclonographe (an apparatus for drawing cyclonic movements); Milos Vukasovic,

the citizen of Boka Bay, was one of the most famous South American ship constructors; Petar Zambelic skillfully guided ships through the dangerous Straits of Magellan. One of Magellan’s followers, Captain Ivo Visin, who was the first Slav to circumnavigate the world, also came from the Boka Bay. He started his expedition in 1852, and he returned seven years later. Leo Brenner is actually a pseudonym of Spiridon Gopcevic, the founder of the second oldest observatory on the east coast of the Adriatic and professional magazine called “Astronomiches Rundschau”, after whom one of the Moon’s craters has been named. Then, the First World War occurred, and given the high demand for weaponry, warship and submarine repair and maintenance became a lucrative industrial activity. The Boka Bay became the most important German submarine base in the Adriatic when two German submarines arrived in 1915. In January 1917, there were 33 submarines only in the Boka Bay. A German submariner Martin Niemoller, the pastor, the pacifist and the outspoken opponent of Nazi crimes, was assigned to a submarine U-73 and he left the Boka Bay to plant mines that destroyed in


1916 a pride of the British shipbuilding, the TransAtlantic ship called Britannic, the successor of tragically sunk Titanic. A great Admiral Karl Doenitz, the German naval commander during World War II, who caused a lot of troubles to Winston Churchill and signed the instrument of unconditional surrender of the Nazis, started his submarine-related career in the Boka Bay. For a short period of time (1918-1921), Arsenal and Boka were under French control. In March 1921, the flag of the Kingdom of Serbs, Croats and Slovenes was flown over Arsenal. In 1928, the first two submarines of the Kingdom’s Navy, called Nebojsa and Hrabri, built in Great Britain, and arrived in Arsenal. It was the beginning of the formation of elite submarine flotilla. Nebojsa submarine will be remembered for the trip it made at the very beginning of the Second World War to join the allied troops on the Mediterranean. It reached Alexandria, and it stayed there, unable to go anywhere else due to frequent breakdowns.

More recent history… Arsenal further developed and expanded its activities to: repair of a wide range of vessels, from tugboats, through corvettes, to minelayers, torpedo boats and submarines. Arsenal manufactured spare parts, armaments and pontoon bridges; it educated and trained its human resources. It was used by the Yugoslav Navy at the time of the crisis and wars in the Balkans during the nineties of the 20th century, and afterwards it experienced financial collapse. In 2006, a Canadian businessman Peter Munk with a group of high profile foreign investors transformed the location of the former industrial giant into a megayacht marina. In 2010, this coastal area has become accessible to civilians after being used for 121 years exclusively for military purposes.

Segments of more than a century long tradition … An old Austro-Hungarian sawmill, the authentic building constructed at the beginning of the last century, which has been preserved and reconstructed for the needs of Naval Heritage Collection. The museum artifacts authentically depict working conditions, working environment, machines from various development periods of Arsenal, nautical maps, project designs, models of submarines and machines, as well as people who contributed by their work and innovation to the glorious history of the former industrial giant.

Imagine you are a submariner of the last century A special attraction for the museum visitors are two submarines: a large P-821 submarine called “Hero”, which is the first submarine that the Yugoslav Navy designed and produced in Split in 1968, and pocket P-912 submarine called “Una”. The view of cannons from the Napoleonic Era, as well as of the most luxurious vessels of nowadays, through the periscope of the preserved submarines, enables the visitors to experience the maritime past and present of the Boka Bay Naval Heritage Collection is the bridge between the maritime and industrial tradition of the former Arsenal and Porto Montenegro – the real experience and haven for all sea lovers. The bay of saints that has been forgotten until recently is now concealing a new Mediterranean adventure.

Croatia Sipan Island is a biggest among Elafiti Islands and offers its visitors a sanctuary of rocky shores surrounded by crystal clear seas.

This scenic chain of islands in the district of Dubrovnik spread within the Deer Archipelago consists of 13 evergreen islands, islets and rocks. Because of their incomparable beauty these islands were first mentioned as the Elafite Islands by Gaius Plinius Secundus Maior in his work Naturalis historia in the 1st century A.D. These islands are blessed with lush subtropical vegetation, a mild climate, easily accessible coast and characteristic landscapes, whereas past centuries provided them with an architectural heritage.This rarely preserved Mediterranean oasis used to be the favorable out-of-town residence and place of leisure of the Dubrovnik aristocracy.

SIPAN ISLAND Places to See: Old Settlement Mali Zaton Ston

Use this opportunity to visit Ston at Peljesac peninsula, area well-known for its mussel and oysters-growing farm since Roman times. Not far from Ston is the beautiful Bay Prapratno with its centuries old olives trees, Mediterranean thickets and clean sandy beaches.

Insight:

The whole Peljesac peninsula has about 2500 inhabitants whereas 600 inhabitants are living only in Ston. Ston was a military fort of the Ragusan Republic whose defensive walls are among the most famous in the world: there is a 900 meters (3000 feet) long town wall and 5 km (3 miles) Great Wall outside the town. The walls extend to Mali Ston (Little or Small Ston), a smaller town on the northern side of the Peljesac isthmus and the end of the Mali Ston bay.

Insight: To see untouched nature of Peljesac and to cruise thru protected natural area, covered with lush vegetation and blessed by crystal clear waters, you will have to drop your anchor in between Korcula and small islet Badija, as anchoring is not permitted nowhere near clean and natural environment of Gulf of Mali Ston. Spend half of the day at the Island of Korčula, one of the greenest islands in the Adriatic Sea. The island itself is rich in art and culture, as well as beautiful nature with numerous secluded beaches and bays and breathtaking views. Korčula Town is a typical medieval walled Dalmatian city, with its round defensive towers and cluster of red-roofed houses. It is well known for its MOREŠKA – a traditional sword dance and drama that was common throughout the Mediterranean in the 12th and 13th century. There is plenty of local flavor on the island. We recommend wine tasting at local vinary, a private viewing of a coral craftsman at work, or a group of traditional Klapa singers who can come aboard for a private performance.

MLJET Places to See: Mljet National Park

What to do: Kayaking, Biking, Windsurfing, Swimming at salty lake

Insight: Visit Mljet Island and you will discover the natural beauty of Croatia. Magical Mljet would be anyone’s idea of an Adriatic island paradise. With most of the island covered by forests and the rest dotted by fields, vineyards and small villages, Mljet casts a spell that can be difficult to break. Mljet National Park was created in 1960 and occupies the western third of the island and surrounds two saltwater lakes, Malo Jezero and Veliko Jezero. You can fulfill your stay on the island of Mljet with everyday activities or simply surrender yourself to the peaceful silence of untouched nature. If you prefer sport activities you may choose to practice any type of water sports, from snorkeling around the two lakes to the unforgettable visit to the underwater gardens, leaving you breathless when spotting wreck sights of ancient ships. The island is filled with biking paths, but most pleasure ones are in National Park area. There is a possibility to rent: bikes, windsurfing boards, kayaks, canoes, boats, cars and scooters that will ease your journey and make it more pleasurable. If you wish to be overwhelmed by the magic charm this island has, we recommend hiking through National Park, after which a short boat ride will follow leading you directly to the island of St. Mary


BISEVO AND VIS Places to See: Blue Cave

What to do: Jet Ski Drive, Biking, Windsurfing, Diving/ Snorkling, Try Fresh Lobsters at great local restaurant

Insight: Beautiful beaches, preserved nature, ecological agriculture and preserved traditional architecture are unique advantages of Vis. Visit Blue Cave at nearby Bisevo Island, first described and painted by Baron Eugen von Ransonet, the cave was originally accessible only by diving as it had one natural entrance below the sea level. Based on his suggestion, an artificial entrance large enough for small boats was built in 1884. The natural entrance to the cave, located on its southern side, is said to resemble a vault on the ceiling of a grotto. It is through this submarine-like opening on the ceiling of the cave that sunlight gets in and creates an iridescent blue glowing effect all around the cave. As well, a stone bar, connecting two walls of the cave, is clearly visible just below the waterline, both in above-water photographs and in underwater photos. Depending on the season, the ideal moment to visit the cave is between 11 a.m. and 12 noon. The cave was formed by the wave action of the sea, as sea water eroded the limestone rock of which the whole island of Biťevo is composed. The cave itself is 24 meters long, 10–12 meters deep and up to 15 meters high, while the entrance to it measures 1.5 meters high and 2.5 meters wide.

The Pakleni island chain is approximately 10 kilometers long, formed of limestone, with a very indented coastline and a low forest of black and Aleppo pine. They provide numerous peaceful coves for diving, spear fishing, swimming, and water sports.

What to do: Start the day with sea kayak tour to nearby Pakleni Islands. Enjoy many hidden beaches, crystal clear sea and unspoiled waters of Hvar Ride along scenic and mostly flat road on the north side of the island, riding along beautiful coastal and inland villages, lavender fields, olive groves, and vineyards. The island is noted for its lush vegetation of palm trees, agaves, myrtle, rosemary, pine woods and extensive lavender fields. Hvar town is often called Croatia’s St. Tropez. It’s a place to see and to be seen, with a beautiful fort on its hill top. You can moor in the bay and take a tender to shore or book a berth on the busy “riva”. You can spend the day visiting the town, enjoying spa facilities in one of its premiere hotels, or just relax on some nearby beaches. You might also dine in one of the great restaurants and spend the rest of the night in a popular local lounge, cocktail bar or club. Hvar is the sunniest of the Croatian islands. Called the ‘Croatian Madeira,’ it receives 2,724 hours of sunshine a year. The stunning interior is a panorama of lavender fields, peaceful villages, and pine covered hills. Under Venetian rule Hvar’s citizens developed the fine stone carving skills that resulted in a profusion of beautifully ornate buildings.


Traditional Taste of

Croatia The northern and southern areas of the Adriatic are characterised by differences in taste and preparation of more Mediterranean foods. The tradition of grilling and roasting fish and delicacies of the sea has been carried down by generations. In the north of Croatia however, Austro-Hungarian culinary influences are more evident. Croatia is also renowned for its good wines, produced both in the continental and coastal regions of the country.

Fish In the coastal regions of Croatia the cuisine has a rather Mediterranean flavour, with lots of olive oil used in the preparation. However, Croatian cuisine does have its own distinct identity, especially in regards to the cooking of fish. The tradition of grilling and roasting fish and delicacies of the sea has been carried down from generation to generation, where the taste of the fish depends on the grilling technique and the type of wood chosen. All along the coast and the isles, the fish menus are unrivalled - even the humble sardine will never taste quite so delicious. Many Croatian fish restaurants have their own fishing boats, so visitors can be assured of the freshness of the fish.

Meat Grilled pork and roasted lamb are common Croatian dishes, as is beef, which is often cooked in a delicious tomato sauce. Regional differences in Croatian cuisine are quite evident and in the north of Croatia Austro-Hungarian culinary influences are strongest – one finds meats cooked in bread crumbs and goulashes served with stuffed cabbage. The dish called sarma, consisting of minced meat, rice, onion and spices rolled in cabbage leaf, is a popular dish which is also common to many countries in the region that were under Ottoman influence. In the region around Zagreb, are the speciality is štrukli (thin sheets of cheese cooked in water). In Slavonia, the speciality is kobasice (pork sausages) as well as kulen, which is similar to salami.

Croatian cuisine is specific to every region, reflecting the country’s geography, history and culture. Cheese Paški sir, a hard cheese from the isle of Pag, is an excellent cheese and one of the most reputed in Croatia. The traditional Croatian fresh cheese (svježi sir) is also very popular, often sold at markets in plastic sacs and usually eaten as an accompaniment to a salad, with salt and pepper.

Sweet foods Croatian slastičarne (pâtisseriesor sweet shops) offer a range of sweet foods with many different influences: cream cakes of Austrian inspiration, nut cakes of Eastern influence, kremšnite (vanilla and custard cream cakes), rožata egg cakes, savijače strudels, cream cakes or rich Dalmatian tarts.

Wine The cultivation of grapevines and the production of wine has been a Croatian tradition for centuries, both in the continental and coastal part of Croatia. The most renowned wines from the Croatian coast and islands include red wines such as Teran, Merlot, Kabernet, Opolo, Plavac, Dingač and Postup, or white wines such as Malvazija, Pošip, Pinot, Kujundžuša, Žlahtina and Muškat. From the continental of Croatia, white wines such as the Rizling, Graševina, Burgundac and Traminac wines are the most renowned.

CAPO TESTA Hand-picked by National Geographic Traveler as one of the Top 20 vacation destinations in the world.

Looking for "out-of-the-ordinary" locations? litterati flock by the yachtful to Sardinia’s serpentine Northern Gallura coast, where exclusive Porto Cervo and Costa Smeralda are two favorite summer playgrounds. While a winding coastal drive—perfect for a red Ferrari roadster— offers dramatic Mediterranean views and a powerful adrenaline rush, the real rock stars of Italy’s second-largest island are the actual rocks, or more precisely, the prehistoric stone dwellings found in the mountainous interior.” Located on the northern tip of Sardinia, Capo Testa is almost an island that marks the south-western entrance to the legendary and feared Strait of Bonifacio. The cape has a perimeter of five miles, can be circumnavigated almost as if it were an island, as it is joined to the mother land by a sandy isthmus a few tens of meters wide and easily accessible from both sides. Navigating this sea area and walking among these rocks is a great thrill. The gigantic granite cliffs have been shaped over thousands of years by the incessant wind that has carved these rock formations into bizarre shapes. The isthmus that joins Capo Testa Sardinia is located three kilometers west from the town of Santa Teresa Gallura. This coast was the Roman port of Tibula, where the granite taken from the quarries of socalled “Hewn stone” was loaded on ships to be brought into the Roman Empire. The stones in which erected “Pantheon” are coming right from Capo Testa. In the Middle Ages, the Pisani with this granite colonnades realized many of their churches. Today, Capo Testa, is visited by world traveler’s, hiked, climbed and secure refuge for ones soul, the playground of ones imagination, surreal, sublime, and out of the ordinary.


ORGOSOLO ART OF THE BANDITY

Orgosolo lies in the heart of the mountain area of the Barbagia Del Supramonte. Its backlands are sight of many traces of the ancient dwellers of Sardinia: domus de janas, tombs of the giants and the nuraghes of Su Calavriche, Mereu and Gorroppu. This small isolated town was once reknown across Europea s the center of banditry. If one recalls, Italian film Director Vittorio De Seta made the famous film, Bandits of Orgosolo (1961), which tells the story of banditry resulting from the desperate fight of farmers and shepherds to defend their land from expropriation by the State. The narrow streets and alleys of the village are works of art today; strolling the allies you will come across a wealth of murals on the walls of the houses, natural rock around the town creating an open air art museum. There are hundreds of these particular works of art, with social, artistic and political themes throughout.

Oristano Medieval town of the SartigliA

Oristano, an ancient town of medieval origins, stands as one of the most significant places within the huge and varied cultural heritage of Sardinia, thanks to its history and to the extraordinary archaeological and artistic traces of its worthy past.

Medieval europe of crusades was the cradle to equestrian knightly tournaments and games of military practice on hourseback. During the 16th century, the Old Continent was particularly keen on equestrian shows, with a special reference to ring jousts. Sovereigns, viceroys, big landowners and trade corporations offered such entertainments to their audience on the occasion of new nominations of kings or bishops, births of heirs to the throne, or special festivities of the liturgical calendar. Such events were meant for the noble class only, assigning the population the mere rank of spectator. Still today, in Italy, riders who may tempt their good luck in trying to spear a ring run a number of tournaments. Other jousts have horsemen attempting to hit a target, represented by a cut-out reproducing the rival knight to be challenged, featuring ancient duels, such as the ‘quintain’ of Foligno or the ‘Saracen’s Joust’ in Arezzo. At present, no papers are known to confirm the existence of the joust in the Middle Ages. Yet, the frequent relationships between local sovereigns and Italian squires during the period of Communes, in the 13th and 14th century, as well as local Kings’ long stays in big Spanish cities of the medieval period may imply that the sovereigns of the Kingdom of Arborea certainly had a fair knowledge about games related to military practice and, hence, that Oristano, like the great European cities of the time, was accustomed to see noblemen and knights challenging themselves in skill and horse-training contests with sword and spear. The official Sartiglia of Oristano is held in the winter months, it is an event not to be missed. Private Sartiglia events are possible during our spring, early summer and autumn months.

La Gritta, reservations a must…. the most sought out restaurant of the northern coast of Sardinia, an intricate fusion of traditional Italian cuisine with extraordinary international flavors and elegance. by Barbara Feltovic

I had the privilege to pass an evening dinning in my home with Chef Roberto Pierro and his family. My first question to myself after their acceptance to our invite was “what on earth do I cook?” The rest of my questions were targeted for Chef Pierro who quickly put me at ease insisting on addressing him by first name and to let him prepare the fresh Sardinian artichokes. Where did you grow up Roberto? Well, I was born in the southeast of Italy, Bari to be exact, passing my first 4yrs of childhood there. My family transferred thereafter to the great city of Turin (Torino, Italy) where my father was sure to find work. Survival, yes, I would say we where in a survival era, and not so long ago. I grew up in a very humble setting, taught the reality of life to grasp an accurate perception. The significant lessons learned from the Pierro family were to admit our weaknesses and recognize our strengths, keeping both in perspective. Was yours a conscious decision to become a chef or did you find you fell into it? It was definitely not a conscious one. It all started like a Walt Disney fairy tale... helping our local baker with deliveries on my bicycle, instead of playing with snowballs, then started making pizza and yes even a dishwasher, moving my

way up to assistant cook in very prominent restaurant in Turin, main cook and gradually making my way up to catering to some of the most elite, chic venues and private mansions. I knew I had something special here; I was able to make art out of the simplest foods, create unforgettable flavors and express my “true essence” through each dish I created. “Bis” encore, asked from every table, one of the most desirable compliments to be received by any chef! I was repeatedly asked for recipes or where I had studied such cuisine. I knew I was following my destiny. Where did you study? My answer to this question has always been that my “school” was the road I traveled, the suggestions I followed and the varied views of kitchens I worked for and visited in the years. I continue today to learn each day, deepen my passion and traveling abroad, in first person exploring the differences in food cultures around the world. What or who has influenced you the most on your choice of dishes you create today? I would have to say firstly my mother, as any good Italian boy would, with her simple but timeless dishes. The influence of my great master gastronome Giulio Gallo however, is found in almost all my dishes today, an honor to whom I learned the kitchen at 360°!

How would you describe your cooking style? As you know Sardinia is famous for fresh seafood, I base most of my menu on such. Not forgetting my roots, mom’s home cooking and the multiple of experiences abroad, I would say I have kept the sacred Mediterranean cuisine in tact, creating a light fusion of traditional Italian and an elegant modern Roberto Pierro. A simple kitchen, with clean flavors in the mouth, a kitchen digestible, always moving toward constructive changes, the result continue to change over time because behind every dish there is always work, study, rediscovering the flavors of my childhood of simple products existing today. So you supply locally? I have a great network of local suppliers, excellent seasfood, produce and local wine selection is bountiful however; being on an island one must prepare ahead for specialty goods. My kids and I keep up our bio herb gardens, which adds to the welcoming fragrances’ of La Gritta. What is your favorite food to eat? This is not easy to answers….. let me think, spaghetti with extra virgin olive oil & peperoncini! Last question for the evening and we will press on to our relaxing dinner! What would you say has been the most challenging point in your career? Taking on the challenge of running an island restaurant, La Gritta! After four years of shadowing the founders, my wife Simona’s father Beniamino, Simona and I accept the challenge placed before us; one that would changed the course of our lives forever. Leaving the secured city and transferring our family to the island, we began to revive the timeless restaurant. We are now in our fourth season of management and the restaurant is ever so youthful, however, Simona and I however have found a few extra grays.

WINE TASTING TIPS Appearance Color – tilt the glass slightly and look at the wine against a white background. White wines can vary from almost transparent white to golden yellow to amber color (for sweeter whites). Red wines can vary from pink to ruby red to garnet to br ick red. Some older vintages may exhibit a brown or orange tint at the edge Clarity – white wines should look clear and bright. With reds, cloudiness or haze may reflect sediment.

Bouquet or nose Gently swirl the wine in the glass to release the flavors. Notice how the wine runs down the inside of

the glass. These rivulets, called “legs,” are a function of the alcohol content. Generally, the higher the alcohol, the more pronounced the legs. Put your nose right into the glass and inhale the aromas — associate what you smell with familiar aromas, such as: Fruits — apple, blackberry, cherry, fig, lemon, melon, plum, prune, raisin, raspberry, etc. Herbs and spices — cardamom, cinnamon, clove, curry, pepper, nutmeg, ginger, etc. Flowers — iris, violet, rose, etc. Beverages and foods — cassis, chocolate, coffee, honey, tea, toast, vanilla, etc. Woodlands — wild mushroom, cedar, leaves, leather, tar, oak, tobacco, moss, pine, smoke, etc. “Off” odors — cork, mold, sulfur.

Taste Take a generous sip, slosh the wine around in your mouth and hold it for several seconds – you want to coat your tongue and the roof of your mouth so that the aromas will percolate in your nasal passages. Factors to consider in tasting the wine: Acidity – the juicy, zingy quality of a wine. The right amount makes the wine crisp and fresh while too little makes the wine flat and uninteresting and too much is unpleasant. Body – refers to the heft and weight of the wine in your mouth. Is it light, even watery, or heavy and full-bodied? This is to some extent a function of the wine’s alcohol content. High alcohol wines will generally have a heavier mouth feel while lighter

alcohol wines feel lighter in the mouth. Residual Sugar – especially important in white wines, which can vary from bone dry to dolce (sweet). Flavor – as with bouquet, associate the flavor with familiar flavors or aromas. For example, a wine’s flavor may be described as berry-like, floral, peppery or earthy. Tannin – an antioxidant and natural preservative found in red wines that imparts a bitter or astringent taste in your mouth and back of throat (also found in tea). Tannins are extracted from the grape skins, seeds and stems (and to a lesser extent from ageing in new oak barrels) and so are found exclusively in red wines. Tannins give substance and structure to a wine. Young red wines with pronounced tannins

may need some cellar time to soften the tannins and enable other characteristics to emerge. Texture – the feel of the wine in the mouth – smooth, velvety or perhaps astringent are common terms used to describe texture. “Creamy” is a term often used to describe the texture of rich wines that are low in acid. The best wines will have a great mouth feel, being either silky or velvety in texture. Balance – one of the most desired features in a wine is good balance whereby the various flavor components are in harmony with no individual component (such as acidity, tannin or oak, for example) present in excess. When all the parts are in harmony, the wine will have a sense of elegance and completeness and will also tend to age gracefully.

Finish This is the last impression of the wine after it is swallowed. How long does the wine’s taste linger? Fine wines have a clean, long finish, a lingering aftertaste is considered a plus while a short finish or little, if any, lingering aftertaste is undesirable. Stop and reflect on what you have tasted. Did you like it? If not, why not? Write down your comments. SARDINIA Pevero Golf Resort area has had extraordinary cachet: big cover stories on the Costa Smeralda began to appear in the pages of Vogue, Bazaar and Town and Country, replete with big glossy photos of sleek yachts moored in quiet azure coves. Beautiful tanned people in the Sardinian sun, and bejeweled, European nobility bathing in one another admiration. Golf was very much a part of the early planning, and the Aga Khan’s consortium brought in Robert Trent Jones Snr to build an intriguing layout between the Gulf of Pevero and the Bay of Cala di Volpe. At Pevero, Jones had to work with what nature had provided him. In his fascinating book Golf’s Magnificent Challenge, Jones talks about the extraordinary obstacles his design team had to face in this formidable ridge along the Costa Smeralda. In one anecdote, Jones describes a meeting between himself, the Aga Khan, and a group of Italian agronomists. On the basis of their soil analysis, the agronomists declared that, considering the present condition of the terrain, grass would be impossible to grow. They proposed to import thousands of tons of topsoil from the mainland to layer the whole course with a foot of this multi- million-dollar commodity. In his infinite Yankee wisdom, Jones came up with another proposal, which if successful, would cost a fraction of the cost. He had observed that there was an abundance of crashed granite and then hope for the best. It worked, and within months Pevero had and still has some of the most beautiful fairways in Europe. The Pevero Golf Club, designed in 1967, was opened in 1972 and for years it was a terrifically well-kept secret and within the years it has been considered one of the worlds most beautiful. There are natural ponds amidst the rocks, the underbrush is fragrant with the perfume of juniper, myrtle and arbutus berries, it is the most scenic and certainly one of the best conditioned you will ever play. It really is a magical place with views of the sea on every hole.

Sardinia sits out in the Tyrrhenian sea off the coast of mainland Italy, it is the second largest in the Mediterranean; in the north-east part of the island, the Costa Smeralda is one of the great ecological successes in the European Tourist Industry.

Another remarkable achievement is the prestigious clubhouse, whose famous wide balconies offer the view of Cala di Volpe and Pevero Bay, as well as of the first and last holes of the Golf Course. Golf services at Pevero are some of the finest in Europe. The Pro-Shop is very well stocked; the locker rooms are quite plush. The golf carts are immaculate, and there is an unusually fine driving range. Staff is especially helpfully with your golf bags and the golf concierge services are a unique feature in Europe. As far as the game itself is concerned, it is one of the most memorable golf experiences anywhere. The holes of the Pevero are designed over a spectacularly beautiful routing, where the Mistral - the northern wind which shaped the rocks in this area often adds to the difficulty of the shots. The 18 hole, Par 72 course, 6,751 yards, stretches over a surface of 3.8 miles and its many obstacles include 70 bunkers and several lakes with rocks and vegetation. Its course and greens are considered amongst the best maintained in Europe.
