S HELBURNE F ARMS Holiday Catalog 2013 Greetings from the cheese house! This year, our 2-year cheddar was honored with a ribbon in the American Cheese Society national competition. We were proud to be recognized for the high quality milk and hard work that goes into making cheese. But that particular batch of cheese also has its own story. The cheese was made at the very end of our 2010 season, in early December, by Kate Turcotte. Kate had been making cheese for four years, while also earning her degree from the University of Vermont. This was her “farewell batch,” as she was taking her cheesemaking experience here to a new job. And the batch turned out perfect — creamy yet complex, smooth and sharp. When it came time this summer to choose the cheeses for competition, it was hard for me to separate the objective tasting notes from the memory of seeing a cheesemaker make a great cheese from all that she’d learned at the Farm. So we went with the heart. Shelburne Farms cheese isn’t only about growing the hay and pasture that feed our Brown Swiss dairy cows. It’s also about growing new cheesemakers and farmers, forging new understandings for visitors of how food can be sustainably produced, and helping keep this beautiful farm as part of Vermont’s working landscape.
