Summer Fun! Since we work with our hands, we appreciate the chance to use summer to extend our creativity to the food we prepare and eat. We have compiled this collection of recipes from our own kitchens that we thought you would enjoy as part of your summer celebrations. Summer is the time when everyone flings open their windows and smells freshly mown grass, jumps in the pool on a hot day, drinks thirstily from a tall glass of ice cold lemonade and gathers family round for a day of grilling chicken, burgers and hot dogs over a hot flame. The pool is filled with squealing children, and the air is filled with laughter. Summer is a time of hiking, biking, swimming, grilling, sweating and playing hard with pent足up winter energy. School is out, and the kids are ready to play. Summer is also time when people throw caution to the wind and end up getting hurt, burnt, strained, sprained and exhausted. That is why we have also compiled some safety tips for you, your family and your pets for the hot summer months. While it is no substitution for getting immediate medical attention, it does comprise of a few things that will help keep you from having a medical emergency in the first place. You know, picnics, parties, barbeques, celebrations and any of the above listed holiday events. We've got party planning and table runners. We have clocks for dad and flag earrings for the 4th. Of course, we have lots of summer jewelry. There are lovely lightweight scarves for nights under the stars, and we even have a pair of barefoot sandals. We know that you want to enjoy your summer as much as we do, so grab some of our great summer recipes and enjoy your family and friends. Be safe! 2


Take aspirin, ibuprofen or acetaminophen for the pain. If you have any problem with these medications or it is a child with a sunburn, consult your doctor before taking anything. Do NOT put things like petroleum jelly, butter or anything else that suffocates the skin on your burn. Information courtesy of Mayo Clinic.

Sunburn Remaining in the sun without sunscreen can lead to sunburn, which is the over足exposure to the sun's ultraviolet rays. Symptoms include fatigue, headaches and the blistering of the skin over a large area of the body. Generally, people experience sunburn to a small portion of their body, but should a larger portion be exposed, there is the possibility of it becoming a much more serious situation. If the skin is merely red, it is a mild sunburn that will heal with time, but should there be blisters that are white in appearance or numb to the touch, these are much more serious burns that need immediate medical attention. Call for emergency help if this appears or the sunburn is on a child less than a year old.

Dogs can get sunburned as well. See the pet safety section for information on dog sunburns.

Dehydration Even when you're careful, the sun can take a lot out of you when you're out in the heat. Hot, dry air can quickly cause dehydration if you're not careful about your fluid intakes. Dehydration can be corrected rather quickly by rehydrating with water. When you lose water in your system, you lose oxygen that goes to the brain. If not treated, dehydration can cause a body to go into shock. Some of the reasons you may become dehydrated can be too much alcohol, too much exercise in the heat and the possibility of heat stroke or heat exhaustion. If you're suffering from vomiting or diarrhea, you run the risk of becoming dehydrated in extreme heat. It can also be triggered by an infection or high blood sugar. Here are the signs of dehydration:

Heat Stroke

Special note on the elderly: Due to medications that many may be on, the elderly are much more susceptible to the effects of the heat, so they should always be shaded, and they should have plenty of fluids at all times.

Heat stroke is the elevation of the body's temperature to over 104 degrees, and it is a medical emergency that can mean life or death. Heat stroke can be caused by dehydration, and it can happen to anyone who over足exerts themselves in the hot sun without proper hydration.

Treatment for Dehydration

Signs of heat stroke:

Dehydration is more than the loss of water in the body余 it is the loss of potassium and electrolytes that are crucial for the heart to keep beating. When someone shows the symptoms of dehydration, get fluids into them immediately, and if you have Gatorade on hand, you can give that to adults. Children should be given Pedialyte or any other of the brands that provide children with electrolytes.

If the victim is showing signs of low blood pressure, such as dizziness or confusion, or has a rapid pulse, call 911 immediately and get them immediate medical attention.

Treatment Get the victim cooled down immediately and call your emergency line for medical assistance. Get them to a shady area and remove all their clothing. Spray or wet their body with cool water like from a hose, put ice packs on their groin and under their arms. Fan them to promote sweat. Give them cool liquids to drink, but absolutely no alcohol or caffeinated drinks. Water is the best. Continue cooling until their body temperature lowers to 102 or 101 F/38.8 or 38.3 C. The pastel color of these feminine dangle earrings reminded me of the light pink flowers on the shrub rose called THE FAIRY ­ so that's what I decided to name the earrings. They are very well named, because the beaded earrings do seem to have a magical, glowing quality to them.

Food Safety The heat and food do not always go well together, so here are a few things to remember when you are packing that picnic lunch and heading to the park. Just remember to keep hot foods hot and cold foods cold when picnicking. Coolers are necessary and keep them in the shade. Take bottled water with you when you camp or picnic to ensure your water source is clean. Don't leave foods out in the hot sun, or you could end up with a tummy ache. This means if you are eating potato salad, then cover it and put it back in the cooler as soon as everyone has been served. They can get leftovers out of the cooler.

Grilling Out Keep the meat separated from other foods and buy it last when you shop. The meat and poultry juices can contaminate the rest of your food if not properly stored. Put the meat in the freezer within two hours of bringing it home unless the temperature is over 90, and then do not wait any longer than an hour. Keep raw meat and poultry away from anything meant to be eaten raw like fruit and vegetables. Slowly thaw meat out in the refrigerator to allow it to cook evenly when grilling. Meat and poultry can marinade for 2 or more days if properly stored and refrigerated. If the marinade is going to be used as a sauce in grilling, set aside some before letting the meat set in it. Do not use the same utensils to eat with that you used to poke the meat with, or you run the risk of contaminating the rest of your food. Cook all your meat and poultry thoroughly to kill any bacteria that may be present. Properly prepared and cooked meats are perfectly safe to eat and enjoy.

Safe Cooking Temperatures Always pack a meat thermometer when grilling or camping. Hamburgers, hot dogs and poultry should be cooked at 160 degrees and fish and other meats should be cooked to 145 degrees. When grilling, keep the food on the other side of the heat to keep it from getting too hot before you are ready to cook it.

Hiking or Day Trips There are many things that can be included in the backpack to eat along the trail or when you reach the summit. Peanut butter in plastic jars or PBJ sandwiches, concentrated juices, tuna, dried noodles to reconstitute when you cook, dehydrated food, nuts, beef jerky, dried fruit and powdered drinks. Don't forget to pack lots of water to go with all these foods. Too much salt while out on the trail can cause problems if you are not properly hydrated. Be careful when hiking in bear country with all these goodies, or the bears will think you are a walking snack bar. It goes without saying, if you're hiking bear country, take your bear spray and carry a bell, or sing really loud and off key. Most hiking and sports stores carry a line of dehydrated foods to take along with you on your trip. They also carry cooking supplies if you are going backcountry. Don't forget a map if you are unfamiliar with the territory. 12

Heat stroke – Keep them cool and contact the veterinarian immediately. Like people, heat stroke is deadly to a dog, and they cannot tell you if they are disoriented. You have to watch them for signs of heat stroke.

Pet Care Summer Dogs love summer as much as you do, and they are more than happy to accompany you everywhere you go and do everything you do in the summer. There are some things that you need to be aware of if you are taking your pet out to play with you. First Aid ­ if you are taking your pet hiking with you, take along a first aid kit that can help treat torn toe nails, cracked pads, sprains or breaks and always carry fresh water for your pet. If you're hiking in snake area, be sure to talk to your vet about what to carry to help your pet should they suffer a snake bite. Bites can swell up a face faster than ice melts in Arizona. Sunburn – Dogs can sunburn if they are short hair dogs. Just like people, put a light layer of sunblock on their skin if you're going to be out during the day. Generally, they should not be out in the direct sun during the hottest parts of the day. Over­exertion – Dogs can get heat stroke just like people if they are outside playing too hard. Since dogs don't sweat, they have to pant, and that may not be enough if they get too hot. Keep your pet from running like the Frisbee loving fool they are and always keep plenty of fresh water available. If your dog starts to overheat, put them in the shade or let them lay down in a creek or pond to cool down. Humidity makes it worse.

Keep your pet healthy during the summer, and don't let them get hurt. They want to play with you, and they want to be with you, but they don't know when to stop. It goes without saying that on the really hot days, keep them inside where they can cool down, and never, ever, ever lock your dog in a car.

Sport Safety With warmer weather, everyone is out running around playing all types of sports. In addition to heat exhaustion and other sun related injuries, many other types of injuries can occur while playing hard. Here are a few tips to keep yourself safe and pain free while enjoying some exciting competition. Safety Equipment ­ Every sport has its own safety equipment that should be worn during play. Regardless of the degree of professionalism, all athelets should take care to protect their heads, hands, elbows, knees and back. Wear helmets, pads, gloves, eye protection and other equipment meant to protect your body. Eye Protection ­ Regardless of the sport, protect your eyes at all times. Whether it is goggles for swimming or sunglasses for playing golf, keep your eyes covered and protected. Mouthguards ­ Protect your teeth with the proper mouthguard. Alcohol – Drinking and swimming don't mix. While it is great fun to float around on the inflatable chair with a cocktail in the cup holder, it is not a really good idea. Carry yourself out of the pool and plop yourself down in a chaise lounge and call for the cabana boy if you want to drink poolside.

Pool Safety It is not summer until someone starts a dumb game of Marco Polo and someone else gets a nose full of chlorine water. There are many things about pool safety that should be a given, but let's run down the basics again. Sunburn ­ This is covered in the sun section, but if anyone is going to get a sunburn, it is someone who is on the water and is playing hard in the sun. Children – Make sure that children are never, ever left unattended at the pool. This also goes for intoxicated adults who cannot swim. It only takes a moment for someone to find themselves in too deep. Water – Don't swallow chlorine water. It is not good for you. For the love of Pete, don't pee or poop in the pool, not only does it make others not like you, it spreads bacteria.

Life preserver – Make sure you have a life preserver poolside, and you know how to use it. A real life preserver, and not a floatie or water wings. First Aid – There must always be an adult on hand who knows how to help a drowning victim. You must be able to perform CPR and mouth­to­mouth resuscitation should there be an accident. Always keep a poolside phone to call for emergency assistance.

Weather conditions ­ if you see a storm coming, get out of the pool and get in the house. Lightning kills. At the first rumble of thunder or the first grey cloud on the horizon, pack it up and go inside.

Boating Safety Fun on the water often includes boating, skiing, fishing, tubing and many other types of watersports. In order for everyone to remain safe, there are some things you should do to ensure the saftey of all. Number one is to take a boating safety course. Weather ­ Always check the weather, and don't boat if there is a chance of a storm catching you on the water. Float Plan ­ Tell someone at the marina all the pertinent information regarding your destination, your equipment, your hull number, emergency contact information and anything else that would be needed should you not arrive back on time. Carry GPS with you. Swim ­ No one should be boating if they cannot swim. Life Jackets ­ Make sure the proper size and fit of the life jacket meets the boater's needs. Children have different sizes than adults. Make sure everyone is wearing their jackets at all times while in the boat. Alcohol ­ Avoid this if you are boating. There are laws about drinking and boating, and there are statistics that show alcohol is a contributing factor to boating accidents and drowning.

Mix it all together in a mixing bowl. Refrigerate.

1 tablespoon red wine vinegar 1 lemon, juice of 2 garlic cloves, minced 1/2 teaspoon red pepper flakes 2 teaspoons capers, drained 1 1/2 teaspoons ground cumin 1 teaspoon paprika 2 teaspoons olive oil 1 (15 1/2 ounce) can chickpeas, drained or 1 cup dried garbanzo beans, cooked, rinsed and drained 1 tomato, chopped 1 roasted red pepper, drained and chopped (from a jar) 2 tablespoons fresh thyme (chopped) 2 tablespoons fresh parsley (chopped) sea salt, to taste pepper, to taste 1/4­1/2 cup feta cheese Stir together first 7 ingredients in a bowl. Baby Kale Salad with Lemon Garlic Dressing Connie of The Singing Beader Cut the yellow cherry tomatoes in half and add to salad. For a colorful presentation, you can choose to put them on top of the salad after adding the dressing. Finely chop or mince clove of peeled garlic. Cut lemon in half and juice both pieces in a juicer that has a jar. Keep the juice in the jar and add the finely chopped garlic. Add the salt, pepper and agave nectar. Mix thoroughly. Let sit in refrigerator for 30 minutes. Stir again and pour over baby kale lettuce. Toss well. Toss the salad for each serving to distribute the dressing evenly. Serves 3 to 4 (salad will appear to shrink in quantity after adding dressing).

Tri­Color Pasta Salad Nancy of Wyverndesigns 1 box tricolor pasta 1 pepper (green, red, or half of each) chopped 1 small onion, chopped 1 can of black olives, sliced 1 1/2 8 oz. bottles of your favorite vinaigrette salad dressing Cook pasta a minute or two short of al dente. You do not want the pasta mushy. Drain and rinse with cold water to stop the cooking process. Let cool for 30 minutes, then add peppers, onions, olives and salad dressing and mix well. Refrigerate until ready to use. This salad tastes best when it has been refrigerated overnight but refrigerating for a few hours works, as well.

1 cup quinoa 2 cups water 1/4 cup extra­virgin olive oil 2 limes, juiced 2 teaspoons ground cumin 1 teaspoon salt 1/2 teaspoon red pepper flakes or to taste 1 1/2 cups halved cherry tomatoes 1/2 avocado peeled and diced Chop raw broccoli ( I like only the flower not the stem ) 1 (15 ounce) can black beans, drained and rinsed 3 green onions, finely chopped 1/4 cup chopped fresh cilantro salt and ground black pepper to taste Bring quinoa and water to a boil in a saucepan. Reduce heat to medium­low, cover, and simmer until quinoa is tender and water has been absorbed, 10 to 15 minutes. Set aside to cool. Whisk olive oil, lime juice, cumin, 1 teaspoon salt, and red pepper flakes together in a bowl. Combine quinoa, tomatoes, black beans, and green onions together in a bowl. Pour dressing over quinoa mixture; toss to coat. Stir in cilantro; season with salt and black pepper. Serve immediately or chill in refrigerator.

Cucumber Salad Irena of Ginger's Garden 2 medium cucumbers, peeled and sliced 2 tablespoons of vinegar ¼ cup of water 1 tablespoon of plain sugar A sprinkle of salt Sour cream for garnish Gently squeeze out excess liquid from the sliced and peeled cucumbers, then add them to a bowl. Mix vinegar, water, sugar and salt in a glass or cup. Add a little more water if the mixture seems too strong. Pour over cucumbers. Garnish with a dollop of sour cream. 26


Chopped Kale Salad Barbara of Solanakai Designs Everyone in my household is vegetarian and summer is all about fresh salads around here. One of our favorites is chopped kale salad. The nice thing about chopped salad is that you can chop up just about any vegetable you have in the refrigerator that is edible raw and it will probably taste great. And I find that it is always well received at barbecues. All measurements are approximate so feel free to add more of one thing or less of another or even try adding something new! I try to use as many organic ingredients as I can find. 6 c. kale, chopped 1 c. red cabbage, chopped 1 c. broccoli, chopped ½ c. red onion, chopped 2 medium carrots, grated 1 14 oz. can of garbonzo beans (kidney beads would be tasty as well) 2 T. roasted, salted sunflower seeds ½ c. dried cranberries This salad works best with a creamy dressing as it softens the kale nicely. Sometimes I make a fresh dressing but most times I prefer the convenience of a bottled dressing. I am not typically a ranch dressing fan but I have two ranch dressings I really like because they have a milder, more natural flavor: Whole Foods 365 Organic Roasted Garlic Ranch Dressing or Annie’s Naturals Cowgirl Ranch Dressing. After I add the dressing, I like to sprinkle on some hemp hearts as an additional protein source, particularly if it being served as the main course.

To start ­ put in Bowl to be mixed up: ­ Chop up 2 to 4 Cleaned, Fresh Green Onions ­ Chop up one medium­size Fresh, Raw Jalapeno ­ your choice with or without seeds ­ seeds make it hotter ­ Chop up one Fresh, Raw Yellow Chili ­ your choice with or without seeds ­ seeds make it hotter (not as Hot as Jalapeno) ­ Chop up 1/2 to 1 Fresh, Raw Red or Yellow or Orange Sweet Pepper ­ leave out seeds and membrane ­ Chop up either 1/4 regular, peeled Cucumber or 1/2 unpeeled Persian Cucumber ­ Chop up Monviso Heirloom Garlic Cloves ­ any amount ­ 1 to 5 your choice ­ Either Chop up Fresh or Use Dried Herbs of your choice ­ I always have Basil in my salads, but I also sometimes put in: Oregano, Mint, Rosemary, Anise Seeds, Fennel Seeds, Dill Seeds, Dill Weed Next ­ add in some combination, to taste: ­ Sea Salt ­ Granulated Garlic (prefer it over powdered) ­ Freshly Grated Black Peppercorns or Mixed Peppercorns ­ Lemon Juice or Lime Juice ­ Cold­Pressed Toasted Sesame Seed Oil or Extra­Virgin Olive Oil ­ or some of each (I get both of mine at Trader Joe's) ­ Apple Cider Vinegar (I prefer the Organic from Trader Joe's) ­ OR USE SOME ALREADY MADE SALAD DRESSING OF YOUR CHOICE ­ I only make my own for each salad! Now Mix Everything Up Really Well in Bowl ­ and make sure everything is to your taste ­ then add anything more of the above you want for taste ­ then here are a few Options to consider mixing in before the lettuce etc. For Vegetarian or as a Side Dish, Optionally Add Fresh, Ripe Avocado (a good fat and other nutrients). For a Main Dish, Optionally Add in some Meat ­ I only add in Cooked Chicken that I have made myself ­ so they are already flavored when cooked.


Orange­Tarragon Chicken Salad Kathy of Kats All That 5 oz (1 1/2c) uncooked bow tie pasta 2 c cubed cooked chicken (cheat and get one of those cooked ones from the store and chop it up) 3/4 c sliced celery 1 11oz can mandarin orange segments Dressing: 1/2 light mayo or salad dressing 1 tbsp grated orange peel 2­3 tsp chopped fresh taragon or 3/4 tsp dried (I highly recommend fresh) 1/4 tsp salt 2 tbsp milk or orange juice 2 tsp dijon mustard Cook pasta until done and drain, rinse with cold water to cool. In large bowl, combine the salad ingredients. In small bowl, mix together the dressing ingredients. Add cooked pasta to salad, pour dressing over all and mix gently to coat. This will make 4 servings so I usually double or triple for our large family gatherings. It is cool and delicious and a big hit everytime.

Fresh Broccoli Salad 2 heads fresh broccoli 1 red onion 1/2 pound bacon 3/4 cup raisins 3/4 cup sliced almonds 1 cup mayonnaise 1/2 cup white sugar 2 tablespoons white wine vinegar

Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble. Cut the broccoli into bite­size pieces and cut the onion into thin bite­size slices. Combine with the bacon, raisins, your favorite nuts and mix well. To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

Berry Delicious Summer Salad 8 cups mixed salad greens 2 cups fresh blueberries 1/2 cup crumbled Gorgonzola or blue cheese 1/4 cup chopped and toasted walnuts or pecans Bottled vinaigrette Toss together first 4 ingredients; drizzle with desired amount of vinaigrette, tossing gently to coat.

Grilled Chicken over Salad Julie of Blue Morning Expressions 2 chicken breast tenders lettuce onions carrots broccoli radishes other mixed greens Cover the tenders in honey and Lawry's salt and drop them onto the grill until they are cooked. Mix the greens and add chunked chicken to the salad. We like croutons, shredded swiss cheese and Ranch dressing to top it all off. Quick, easy and makes a great meal. I use my Forman grill for the chicken, and it is done in two or three minutes.

Although ice water is my summertime staple for hydration, I love a glass of lemonade over ice when I want something with a little flavor. I keep a pitcher of this simple and refreshing beverage in the fridge all summer long. Simply mix 2 quarts of water with 1 cup of lemon juice and 3/4 cup of sugar. Mix well and pour over ice. Enjoy!

In India, limes are more common and readily available than lemons. I'm not sure why, but everyone can afford limes. So my recipe is for limeade. This is a refreshing drink that will cool you down during those hot summer days.

The Real Martini Mary of Pretty Gonzo 2 oz Bombay Sapphire Gin Splash of Dry Vermouth Cocktail Olives (no pimentos) Lots of Ice ­ key to a great martini 1. Fill martini glass with ice and add cold water. Let sit. 2. Fill a cocktail shaker with ice ­ crushed is best. Slowly pour the gin over the ice. 3a. If you prefer shaken, which bruises the gin, cap the shaker and bruise away; then let sit for about 3­4 minutes. 3b. If you prefer stirred, let sit for about 3­4 minutes. Stir by swishing around the ice and gin inside the shaker. 4. Empty the martini glass of the ice and water. Pour a trickle of dry vermouth down the inside and turn the glass, thinly coating the inside. This will result in a nice, dry martini. If you prefer, you can use Winston Churchill's advice regarding the best amount of vermouth for a martini, and simply glance at the vermouth bottle. (In other words, leave out the vermouth altogether.)

"Catmint" is a altered composition book that I created with mixed media collage techniques. The foundation is hand collaged with torn pages from an antique book. I finished the cover with pressed hornet's nest paper and three sprigs of flowering catmint, all harvested from my own little organic acre.

I created "Bloom" using layers of blue and green acrylic paint, between which a hint of ink stamping is sandwiched. The cover is embellished with three little sprigs of pressed Daucus carota blooms, better known as Queen Anne's Lace, all harvested from my own little acre.

This bracelet is certainly one of a kind. It bears the stamp of the Polly Ceramica logo. It began as three separate slabs of color. A slab is a stack of sheets of different colors. I learned from a brilliant mixed media art teacher to think of the rainbow spectrum of colors when designing polymer clay jewelry. 36

As one who grows and preserves much of our own food, the summer recipes I most honor are the preserves ­ fruit, vegetable, anything! Over the years I've created a number of my own preserving "recipes," but last year I made this Black Currant Rhubarb Preserve and I'm sure to do it again! And again. It inspires me to encourage *everyone* to grow a little rhubarb and at least one black currant shrub!

A change from the normal veggies and dip with this veggie pizza. Spread 1pkg lowfat cresent rolls in 9 x 13 pan and bake at 375 until lightly golden then allow to 26 cups rhubarb, chopped cool. 6 cups black currants 1 cup dried rosehips While baking and cooling mix well.. ¾ cup dried orange peel 1­ 8oz. lowfat cream cheese at room temp. 8 cups cane sugar 1/2 cup real mayo 1/2 pkg dry ranch dressing mix Cut up your favorite raw veggies When crust is cool top with mixture above and then the chopped veggies.

Awesome Potato Salad Nancy of Jazz it up with Designs by Nancy 6­7 Yukon Gold potatoes 4­6 hard boiled eggs 1 red onion Good Seasons salad dressing (already made, follow regular directions except use red wine vinegar) Helmans Mayonnaise 1. Use pressure cooker to cook potatoes or boil until cooked thoroughly. Let cool completely. 2. Hard boil eggs, let cool completely. 3. Once everything is cooled, cut up potatoes into bite size chunks. Slice eggs. Combine in one bowl. Cut onion and combine with potato and eggs. 4. Start by adding one large scoop of mayonnaise, add about 1/4 of bottle of good seasons and mix thoroughly all ingredients. Add more mayonnaise and good seasons as you require for taste. 5. Chill and serve.

To ensure that the dried herbs, especially the citrus peel, soften adequately, place them in a large pot, add enough water to cover, bring it to the boil, reduce heat to simmer 5­ 10 minutes, and then let it steep, covered until cool. Chop the rhubarb and toss it with the sugar, add to the cooled pot, atop the herbs, top it with the black currants and cover to sit over night. The next day bring the pot to a boil, stir well, turn down the heat and let it gently simmer while your pint jars are sterilizing. Fill your hot sterilized jars with the hot preserves, leaving 1∕4­inch headspace. Wipe the jar rims with a clean, damp towel, and apply the lids (according the the jar­or­lid­type you're using. Process the jars 10 minutes. Enjoy!

Marinated Green Beans Joy of Umeboshi

24 Hour Refrigerator Pickles Donna of Sew Amazin 1 quart water 1/2 cup apple cider vinegar 6 tsp salt 1/4 cup sugar 2 cloves garlic sprigs of fresh dill weed 3­4 whole cucumbers, washed well and with ends cut off quart size, wide­mouth mason jars with lids In a saucepan, combine water and vinegar; add sugar and salt and stir until dissolved. Heat the solution until it boils, then allow to cool to lukewarm. In clean jars, pack the dill, garlic and cucumbers. The cucumbers can be whole or cut into chunks or slices as desired. Fill the jar with the brine solution. Seal and place in the refrigerator for at least 24 hours. I love to make these in the summer with cucumbers from my garden or from the farmers' market. Any variety of cucumber will make delicious pickles!

Cook fresh green beans until they are still slightly crisp and cool at once in cold water. Make a marinade of: 2 T sweet rice vinegar 1T soy sauce 1T lemon juice 1T Mirin (Japanese sweet rice wine) 1 teaspoon (or more) fresh chopped garlic 1/2 teaspoon of powdered ginger or add 1 teaspoon of fresh ginger 1 teaspoon sesame oil (to taste). Dilute with a little water if the taste is too strong. Marinate overnight in the refrigerator and serve cold.

Grilled Pineapple Rose of Thaddeus Rose My favorite recipe, summer or any other time, is grilled pineapple. This version is without the grill marks. Hubby doesn't like cleaning the grill for the direct method and this way retains all the yummy juices :­) 1 pineapple (pre­cored with the core still in the middle) Honey Butter Cinnamon Foil Turn sides of foil sheet up Drain juice onto foil Cut pineapple into thick slices Arrange slices on a sheet of foil Spread slices with butter Sprinkle with cinnamon Pour honey over slices (about a teaspoon per slice) Place foil on medium hot grill for about 30 minutes Serve hot or cold.

Grilled Chicken with Fresh Grape Glaze

Honey­Soy Marinade For Grilled Flank Steak Sue of Quilt Tops 1.5 to 2 Pd. Flank Steak Honey­Soy Marinade: ¼ cup dry red wine 2 T soy sauce 1 T fresh lemon juice 1 t Worcestershire sauce ½ t dry mustard 1 t honey 1 T oil, veg. or olive 1 clove garlic, minced 1/8 t pepper Place steak in a shallow glass dish. In a small bowl stir together all ingredients for the marinade. Pour marinade over steak. Cover and marinate 2 to 3 hours in the refrigerator. Remove approx. 30 mins. prior to grilling. Prepare the grill. Remove steak from marinade, reserving the liquid. Grill 4 to 5 minutes per side, for medium rare. Brush steak with reserved marinade as it grills. Slice steak thinly on the diagonal and arrange on a warmed platter. Serve immediately.

Glaze: 3 cups seedless red grapes 2 teaspoons olive oil 1 cup chopped onion 2 garlic cloves, minced 2 tablespoons balsamic vinegar 2 teaspoons low­sodium soy sauce 1 teaspoon brown sugar 1 teaspoon chopped fresh rosemary Chicken: 1 tablespoon olive oil 6 chicken drumsticks (about 1 1/2 pounds), skinned 6 chicken thighs (about 1 1/2 pounds), skinned 2 teaspoons chopped fresh rosemary 1 teaspoon freshly ground black pepper 3/4 teaspoon salt Cooking spray Fresh rosemary leaves (optional) To prepare glaze, place grapes in a blender; process until smooth. Heat 2 teaspoons oil in a saucepan over medium heat. Add onion; cover and cook 10 minutes. Add garlic; cover and cook 3 minutes, stirring occasionally. Stir in pureed grapes, vinegar, soy sauce, sugar, and 1 teaspoon rosemary; bring to a boil. Reduce heat, and simmer 10 minutes or until slightly thick. Cool slightly. Place grape mixture in blender; process until smooth. Set aside. Prepare grill. To prepare chicken, brush 1 tablespoon oil over chicken; sprinkle with 2 teaspoons rosemary, pepper, and salt. Place chicken on grill rack coated with cooking spray; cover and grill 25 minutes or until done, turning and basting frequently with grape glaze. Garnish with rosemary leaves, if desired.

Cuts and bruises – bandages, gauze, adhesive tape, antibacterial cream or good old First Aid Cream Clean the cut with water and soap. Press a gauze to it to stop any bleeding. Add a spot of antibacterial cream and a bandage. Puncture wounds need medical treatment. Bee or wasp stings ­ antiseptic topical spray, Benadryl to stop the itching and a cortisone to keep the swelling down Remove the stinger if it is a bee sting. Clean the sting with soap and water, and apply ice to bring the swelling down. Add a spot of topical spray. Watch for swelling and seek medical attention for allergic reactions. Animal bites – All animal bites should be treated by a medical professional. If the animal is wild or unknown call Animal Control and give them a description of the animal.

Ticks – tweezers for removal, hand sanitizer to wipe the poison off your hands Lift the tick up so that you can get your tweezers on the entire body and pull it off. Make sure the head is removed. Flush the tick. Clean the skin and your hands to ensure there is no left over poison on your fingers. Jelllyfish sting – clean the wound with antiseptic cream Treat a jellyfish sting the same as any other type of sting. Urinating on the sting will not help unless your urine is extremely high in acid. Poison ivy – Caladryl, Benadryl or calamine lotion to stop the itch The body part can be submerged in steaming hot water to satisfy the itch without touching the infected area and spreading the poison. Sprains – elastic bandages to secure the joint Wrap the sprain in elastic to keep from aggrevating the injury. Seek medical attention if the sprain swells or gets worse. Splinters – tweezers and a dab of an antibacterial cream Use ice to numb the area and with a pair of tweezers, remove the splinter. Put a dot of antibacterial cream to the wound and watch for infection.

1. Peel and seed 2 1/2 lbs of watermelon. Puree fruit in a blender or food processor until smooth. I also strained mine through a sieve since some tiny seeds got past me. You should have about 2 cups or so of puree.

My favorite summertime dessert is a Frozen Strawberry Crunch Cake. It's made with granola 2. Easy Blackberry Cobbler Charlotte of Covergirl Beads

2 cups organic whipping cream 2 cups organic half & half 2 teaspoons organic vanilla 1 cup organic cane sugar 1.5 Tbl organic coffee pulverized or mashed into a powder. 1 Tablespoon organic cinnamon

4 cups of fresh or frozen blackberries 1 Tablespoon lemon juice 1 egg 1 cup sugar 1 cup all purpose flour 6 Tablespoons butter, melted Vanilla ice cream, optional

Combine all ingredients in an ice cream maker & whisk together余 then process according to your ice cream maker's directions. Top with organic summer berries.

Heat oven to 350 Degrees Lightly grease an 8 inch square glass baking dish with cooking spray or oil. Place 4 cups of blackberries in the dish. Drizzle blackberries with 1 Tbl lemon juice. In a medium size bowl, stir in 1egg and 1 cup of flour until the mixture is a coarse meal. Sprinkle mixture over fruit. Drizzle 6 Tablespoons melted butter over the topping. Bake 40 to 45 minutes or until topping is lightly browned and the filling is bubbly. Cool 10 minutes. Serve warm with a scoop of your favorite variety of vanilla ice cream.

Line cupcake pans with liners and place a cookie in the bottom of each. In a small bowl, beat cheese, sugar, eggs, and flavoring until fluffy. Fill the liners about 2/3 full. Bake in preheated 375 degree oven for 15 to 20 minutes (until set). Test with toothpick. Top each miniature cheese cake with 1 teaspoon of fruit filling. Chill the cheesecakes.

I love the tartness. 5 Snickers candy bars, chopped in bite­size pieces 1/2 cup Carmel sauce In a large bowl, stir together the vanilla pudding mix and milk with a whisk. Fold in the cool whip, with a spatula, until thoroughly combined. Stir in the chopped apples and snickers candy bars. Drizzle the top with caramel sauce. Cover, and chill salad in the fridge 1 hour before serving. Yields: 6 servings

Fresh fruit salad or dessert Anna of Crafts of the Past Fresh picked California fruit:

1 c. fresh strawberries, slightly under­ripe, diced into quarter­inch pieces 1 squeeze lemon juice 1 c. flour 1/2 c. sugar 1 tsp. baking powder 1/3 c. sour cream 1/4 c. vegetable oil 1 tsp. vanilla 1 large egg 1 tsp. powdered sugar Preheat oven to 400°. Line a 24­cup mini­ muffin tin with paper baking cups. Put diced strawberries into a bowl; spritz with lemon juice and stir gently to combine. In a medium bowl, stir together flour, sugar and baking powder. In a small bowl, whisk together oil, sour cream, vanilla and egg. Pour mixture over dry ingredients, stirring to combine. Fold in strawberries. Divide batter evenly among the paper cups in the mini­muffin tin. Bake 12 to 14 minutes or until cake tester comes out clean. Place tin on a wire rack for 5 minutes. Remove muffins and continue cooling in the paper cups on the wire rack. When muffins are completely cool, place powdered sugar in a small sieve and shake lightly to dust muffins with sugar. Makes 24 mini­muffins or 12 regular­size muffins

Beat the condensed milk, limeade or lemonade together and fold in the Cool Whip. Add a few drops of food coloring if you want the pie to be lemony yellow or lime green (this is optional). Pour into pie shell and refrigerate several hours before serving. I usually freeze the pie until a few minutes before serving.

Mix first 5 ingredients in large bowl with mixer until blended until batter thickens. Spoon into 24 paper­lined muffin cups. Bake 21 to 24 min. or until toothpick inserted in centers comes out clean. Cool in pans 10 min. Remove to wire racks; cool completely. Beat cream cheese, butter and lemon juice in large bowl with mixer until blended. Gradually beat in sugar until blended. Spread onto cupcakes.

Heat oven to 375° F. On a lightly floured surface, unfold the sheet of pastry and roll it into a 10­by­12­inch rectangle. Transfer to a parchment­lined baking sheet. Using the tip of a knife, score a 1­inch border around the pastry without cutting all the way through. Brush the border with the egg and sprinkle with the granulated sugar. Bake until golden and puffed, 18 to 22 minutes. Using the tip of a knife, rescore the border of the cooked pastry without cutting all the way through. Gently press down on the center of the pastry sheet to flatten it. Let cool to room temperature, 15 to 20 minutes. Meanwhile, with an electric mixer, beat the cream cheese until smooth. Add the cream, lemon zest, and 2 tablespoons of the confectioners’ sugar and beat until smooth. Spread the cream cheese mixture evenly within the borders of the pastry. Arrange the blueberries in a single layer over the filling and sprinkle with the remaining tablespoon of confectioners’ sugar.
