CHAIRMAN'S REPORT JOHN MURRAY, CHAIRMAN

2017 is already shaping up to be a big year for Bankstown Sports Club and its associated venues, with the construction of a new business hub, a brand new renewals system and a great line up of entertainment the whole family will enjoy. Work is underway on the site of the new Flinders Centre which will sit adjacent to the club on Restwell Street. The 9-storey office tower will provide contemporary, efficient and sustainable A-grade office space with state-of-the-art conference and meeting facilities, and spectacular views of Sydney’s CBD. One floor of the tower has already been leased by an early learning school which will cater for infants and toddlers and should be up and running by mid-2018, and a UFC Gym which is a health, wellness and fitness centre offering a wide range of group classes, personal training and elite coaching for all ages. Bankstown Sports will also relocate its administration offices to Flinders Centre, once work is complete. Our new Asian dining precinct, Peking Sq. has also been very successful in its first few months of operation. After opening on 8 December last year, members and guests have been booking out lunch and dinner sessions to try the authentic Chinese street food, yum cha and Peking duck offerings. I would encourage all of you to come in and try a few dishes. We have changed the way the club runs its membership renewals, and there are now even more benefits for joining the Bankstown Sports family. We have changed to an annual system, which means your membership will now expire exactly 1, 3 or 5 years from the date you join or renew, instead of 30 June.

WELFARE REPORT March, April and May

If you renew in March, you will get 3 bonus months on your membership card from your old 30 June expiry date. So, if you renew for 1 year, your new expiry date will be September 2018. Also, if you renew for 3 or 5 years before 30 June this year, you will get extra Reward Points to spend in the club. I would encourage all of you to renew as soon as you can to take full advantage of these great offers. Senior’s Week will be celebrated from 3-12 March and Bankstown Sports has the pleasure of hosting the Senior Spectacular on Sunday, 5 March. Canterbury-Bankstown City Council is running dozens of special events. We also have a great line-up of entertainment at the club over the next few months. If you love Irish music, Celtic Beat and Eireborne are two of the best shows you can see, Todd McKenney is back with his 20th anniversary tribute to Peter Allen, and we have tributes to Celine Dion and Elvis. There are also some great shows for the kids over the Easter school holidays, free kids bingo and recent release movies in The Theatre. And if you’re looking for the complete night out, make sure you check out page 36 in this magazine for our great Travelodge accommodation deals.

One-on-one with our

EXECUTIVE CHEF Helmut Gundendorfer has been at the helm of the Bankstown Sports Club kitchens for 17 years, and he is just as passionate about food now, as he was when he first began. You may have seen Executive Chef Gundendorfer busily preparing and cooking food in our bistro or café kitchens, or walking the club in his signature white smock, always with a cheeky grin on his face. We caught up with him to find out what drives him to be so passionate about food. Where did you work before Bankstown Sports? I was the Executive Chef at the SS & A Club in Albury, which is a very similar venue to Bankstown Sports. I also used to look after the catering for the La Trobe University campus in Beechworth, and for the Cumberoona, which is a steam driven paddle boat that cruises the Murray River. Growing up, did you always want to be a chef? When you finish school, it’s very difficult to know what you want to do. You’re all over the shop and you don’t know what to do! I was always interested in becoming a chef and thought I might as well give it a go. I was 15 when I decided to do an apprenticeship for 4 years, and I was hired in a kitchen straight after school. It was definitely luck of the draw that I landed in the profession I did. It sounded 4

alright and I liked the kind of living it offered, so I fitted in well. What do you love most about being a chef? I love the creativity and I really like being busy. There is always something new happening in the hospitality industry. Like last year, for example, we opened up the Brewhouse which was a lot of work from choosing serviettes to the cutlery to the different smoked meats we have. It’s a big job. If you take me back 10 years, I would say an a-la-carte menu was my favourite thing to create, but these days I would rather work on more specialised venues like the Brewhouse, with its gourmet burgers and fries. My tastes have really changed over the years. How do you create a menu and how do you decide what dishes to include? First, I always do my research. I look at Neil Perry or Gordon Ramsay and I see what they’re doing; I see what the current trends are, and I google a lot! Sometimes I’ll go back to books or flick through magazines for inspiration. Once I decide on a direction or a theme, I sit down with

my chefs and I give them a few ideas on dishes they could create, we map out a menu plan and then they go away and start working on some new creations. We then review the choices they've made and collaborate to finalise a menu. Do you have to cook at home or does your wife look after the meals at home? I am normally still at the club for dinner so I’m not home to cook! But I do like to cook for her when I am home on my days off. At least one day a week! Especially in winter, because we are home a lot more. What’s your favourite dish to make? I love making a good paella or risotto. In summer, I love a nice BBQ or a good salad. A nice watermelon salad with quinoa and some prawns is beautiful in the hot weather. In winter, I usually go with a warmer, heartier dish. What’s your favourite food to eat? This is a hard question! There are so many good things in this world, but if I had to choose I would go with a nice lamb shoulder, or slow-cooked lamb. Something with some oregano and some lemon and a little bit of tzatziki and pita bread. I like that stuff!

So… what’s on special in Greenfield Station Bistro this autumn? We’re giving our members and guests a really hearty specials menu to choose from this Autumn, with food guaranteed to warm the tummy! There’s a garlic prawn pizza, a porterhouse steak, crispy fried fish and chips, homemade potato gnocchi, chicken and mushroom stir-fry and a southern-style fried chicken burger. All of our specials are $15 each and are available Monday to Thursday for lunch and dinner in the bistro.

SCHOLARSHIP PROGRAM Bankstown Sports Club has supported Bankstown Girls High School with a $14,400 grant to provide academic and sporting scholarships, which will help students experiencing financial hardship. Bankstown Sports has again supported the Academic and Sporting Scholarship program at Bankstown Girls High School, through the ClubGRANTS scheme. The program allows four students in years 7, 9 and 11 an opportunity to learn and fulfil their academic and sporting potential. The club has been supporting this program since 2006, and over the 10 years it has provided over $140,000 in funding.

The scholarships support students who are experiencing financial hardship, but who have academic and/or sporting potential which could be advanced with some financial assistance. Bankstown Girls High School principal Mark Leary says the school is extremely grateful to the club for its support. “These scholarships are an important part of providing equity for some of our girls. Many of the girls have very complex family situations and the financial hardship aspect of the scholarship guidelines ensure that the scholarships go to girls who are in need of financial support”.

In some situations, the girls have either one or both parents who do not work and the financial strain on the family is a burden which the scholarships help to ease”. Mr Leary says scholarship recipients must submit an application which provides evidence that they are experiencing financial hardship or disadvantage. “The girls who receive the scholarships use them to enhance their potential to achieve academically. They relieve a lot of stress from the girls and their families by helping them purchase equipment to help them with their learning. Every girl who earns a scholarship uses the money wisely to

enhance their education and take advantage of a number of opportunities”. Bankstown Sports CEO Mark Condi says the club is more than happy to help. “We are very proud to be able to provide these scholarships to students in our local community who need a bit of extra assistance. The students who benefit from this funding have already shown academic or sporting prowess and have a real passion for bettering themselves. Everyone has a right to a good education and if the club can help facilitate this in any way, we will”.

IS BACK! World champion woodchopper, David Foster returns to Bankstown Sports on Easter Sunday to showcase his incredible skills with an axe. David Foster has been woodchopping for over 40 years and still talks as passionately about his sport now, as he did when he first picked up the axe. He’s won world title after world title, has been in the Australian team since 1979 and was Captain of the side for 21 years.

David has been involved with Bankstown Sports Club for almost two decades, and for the last 3 years he has been doing a woodchopping demonstration inside the club on Easter Sunday. He says he loves showcasing the sport he loves to families that are here to celebrate.

Woodchopping is in his blood. His grandfather did it and so did his dad.

“I’m pretty sure Bankstown Sports is the only club in Australia that lets us actually chop inside. We do a bit of carving with a chainsaw and we do a bit of chopping and everybody loves it! We’re getting a pretty good crowd there now and the kids love it. The Easter Bunny turns up too!”

“I got brought up in it. I’m third generation, my son is fourth generation, and it’s just been a part of my life for so long. People say ‘what is the reason for your success?’ I think if you enjoy the journey, if you enjoy what you’re doing, no matter what you do in life, you’re going to be successful. And that’s what I’ve done. I’ve enjoyed the journey and the comradeship”. “I’ve had a very long and successful career which I would never have imagined possible as a kid growing up. And at the age of 60, I’m still in the Australian side, which I’m pretty proud about!”

He will also be competing at the Easter Show again this year from Friday, 7 April. He will be chopping for a world title on the Saturday, another one on the Sunday, and then he’ll take part in a few veteran’s woodchops through the week. Australia then goes up against New Zealand and the US in the international competition. “It’s been a busy few months trying to get fit!

When I was younger, drinking beer and eating pies was your training. Now I’ve had to do a lot of walking and cardio training, and a lot of flexibility stuff like yoga and pilates. “I don’t chop as much these days mainly because of my back; I have a ruptured disc in my back. But I can still compete in the cross-cut saw event, so it’s more cross-cut sawing than woodchopping now”. Despite his injury, he refuses to even entertain the thought of retiring, and believes he still has plenty more years left in him! “I’m not getting caught up in my age. Now I can represent my country in the veterans division as well which is 60 and over, so I can go for as long as the body holds up. I have noticed that you don’t wake up the same and there’s a few more aches and pains, but you just have to get up and keep moving. You’ve gotta have a reason to get up and move of a morning and woodchopping and grandkids, and life in general is keeping me young and active”. Bankstown Sports InTouch

CONSTRUCTION

HAS BEGUN! The foundations have been laid and our builders are hard at work on Restwell Street, where the new business hub will start taking shape this year.

Construction on the new Flinders Centre is now underway on Restwell Street, with the new business hub to provide contemporary, efficient and sustainable A-grade office space in the heart of Bankstown. The 9-storey tower will stand adjacent to Bankstown Sports and visitors will have direct access to all of the club’s restaurants, bars and entertainment offerings. We are excited to announce we have signed two long-term leases in the new centre, with an early learning centre and UFC GYM sharing the first floor. The childcare centre will offer state-of-the-art care and learning facilities for infants and toddlers up to the age of 5, with a license to look after approximately 80-90 children per day. It will provide a holistic approach to education in a warm and nurturing environment that reflects the unique diversity of the children, families and local community. The centre will be open for business in mid-2018. 12

UFC GYM is a health, wellness and fitness centre that offers programs for all ages and fitness levels. It delivers innovative and effective fitness experiences that enable members to ‘train different’, by fusing together mixed martial arts with state-of-theart equipment, group classes, elite coaching and tailored personal training. UFC GYM operates at several locations across Sydney, offering a wide range of martial arts classes for beginners and the more experienced, including boxing, kickboxing, Brazilian Jiu Jitsu, self-defence, Muay Thai and MMA. The facilities also cover the more conventional strength, crosstraining, cardio and yoga training techniques. UFC GYM Australia CEO Maz Hagemrad, says there is something for everyone. “The basis of our training comes from our professional UFC athletes, utilising high intensity training and functional training. Mixed martial arts underpins the style of the

specialised training we offer; for example, our conditioning classes include things like boxing, kickboxing and Muay Thai as the discipline, but you aren’t necessarily learning to fight, you are just using the different moves to get fit. “We also run all of our classes for kids as well as adults. No other gym in the world offers this type of fitness programming for children aged 5 years and up”. Bankstown Sports Club CEO Mark Condi, says the gym will be a unique and welcome addition to the local area. “There are plenty of gyms around the Bankstown area but none that offer the variety of training UFC GYM does. We feel the facility will have a positive impact on the local community and will make health and fitness available to everyone. We are really excited about this new partnership and believe our members, patrons and local residents will benefit greatly”.

It can often turn into a full-time job! At Bankstown Sports, our team of event professionals can cater for any style or theme, with a variety of packages available to suit your needs. The club has 13 spaces available with the ability to cater for 10 to 1,000 guests.

LEVELS 1 & 2 We have 9 rooms on our first and second floors which are suitable for conferences and meetings, social gatherings, cocktail events, presentations, dinners and high teas. All rooms have interconnecting capabilities with access to a full-service bar and the digital/AV technologies.

These rooms can cater for 20 to 220 guests. They are all wheelchair accessible with toilets located nearby.

THE GRAND BALLROOM This is our largest and most extravagant space and is the perfect setting for a large conference, trade show or expo, product launch, cocktail event, awards presentation, wedding or large social gathering. It can host 600 guests for a sit-down banquet, 800 guests in a theatre-style set-up, and up to 1,000 for a cocktail event. It also features a large pre-function event space with a full-service bar, with its own unique entrance, private lift and wheelchair accessibility.

THE THEATRE The Theatre is one of our newest entertainment options at the club and is perfect for presentations, movie screenings, live shows, stage productions and large functions. Situated on Level 1, it can cater for 635 guests as a fully seated theatre, 604 in cabaret-style, and 538 with a dance floor.

A MOTHER'S They are our chefs, housekeepers, teachers, hair stylists, taxi drivers, cheerleaders, therapists, events co-ordinators and storytellers. They are our shoulders to cry on and our biggest fans… they are – our mums! Celebrations of mothers and motherhood can be traced back to the ancient Greeks and Romans, who used to hold festivals to honour their goddesses. Over time and across the world, these traditions have grown and developed so that instead of celebrating one individual, we recognise the idea of motherhood as a whole, and the influence of mothers in society. Every family celebrates Mother’s Day differently, and in their own special way. At Bankstown Sports, we have a lot of employees who are mothers, and one in particular has been part of our family for almost three decades. Sandra Salveron (pictured above, far left) is one of our switchboard operators and has been a dedicated and loyal employee for 27 years. She began working at intouch café in 1989 and also helped out with some of our major functions. She then moved to our 16

reception desk and quickly became a supervisor, before taking on the role of switchboard operator. Mother’s Day has always been one of Sandra’s favourite days of the year. “I’m a mother of four and I have five grandchildren. Between myself and my two siblings, there are 11 mothers in our wider family. I can’t describe in words how important my family is to me. They are my world and my reason for existing. “We are always together on Mother’s Day, whether it be for a picnic, a BBQ, a restaurant or just at home, it doesn’t matter what we do as long as we are together as a family”. Sandra says it’s been incredible to watch her family grow over the years. “All of my children were finally back home in Australia last year after being overseas at various times, and we managed to get a photo

taken of the whole family; children, mother’s and grandmother’s. When I look at that photo, I realise how lucky I am to have all of them in my life”. Everyone knows being a mother isn’t always easy and there are many challenges when raising children. But despite the emotional rollercoaster that comes with parenthood, Sandra says she wouldn’t change it for the world. “It is difficult sometimes, but it is also the most rewarding role you will ever undertake. Watching my children grow from babies and being there every step of the way, and seeing them become the beautiful people they are today is just priceless, and I couldn’t be prouder. “As a mother, you feel and experience many emotions; good and bad, happy and sad. We laugh with our kids and we cry with them, and at times we are heartbroken for them. But the love you have for a child is unconditional.

“And being a grandmother is an absolute joy! You get to have fun with your grandkids, babysit, celebrate birthdays and special milestones, but in most cases, the stress and responsibility of making decisions and parenting them isn’t there. My grandkids range in age from 12 months to 15 years, so they certainly keep me busy! I love to spoil them and I’m so blessed to have them in my life”. Mother’s Day is the day we get to show the important women in our lives how grateful we are to have them. They are often the emotional backbones of a family and are the ones we turn to for advice, help and a shoulder to cry on. He has been handmaking noodles since he was a teenager and comes from a long family line of noodle makers. He oversees the kitchen and works behind-the-scenes, cooking, noodle-stretching and creating our house-made sauces. When visiting Lucky Cheng’s, you could begin your meal with some Chinese broccoli, diced beef shank, shredded tofu or chopped cucumber, before diving into our selection of vegetarian, prawn and pork dumplings. Add some shredded Peking duck or lamb pancakes, or some Chengmade wontons to the mix and then indulge in one of our many noodle dishes served dry or in a delicious soup. PEKING SQ. The newest addition to the Bankstown Sports family opened in December 2016 offering both yum cha and Chinese a-la-carte dining. Putting a new twist on the traditional, Peking Sq. features its own Peking duck oven which produces juicy, succulent duck on-demand, for dishes including duck pancakes, duck sang choy bow, sliders and spring rolls. Peking Sq. Executive Chef Shao Guang Yang (aka Gong) began his cooking career at the age of 21 when he began an apprenticeship at the Guangzhou Hotel in China. He then moved to Australia and has worked in Chinese restaurants across Sydney for 20 years, including venues in Darling Harbour, Granville and Hurstville, and at St George Leagues Club in Kogarah and Castle Hill RSL. He now oversees 10 kitchen staff at Peking Sq. and specialises in cooking live seafood, and is known for his mastery knife skills. If you love yum cha, a lunchtime visit to Peking Sq. is a must. You can try our range of fried and steamed dumplings, dim sims and pork buns delivered straight to your table on our special steamer carts, or you can order from the menu. If you’re feeling game and want a truly authentic experience, our Delicacy and

Congee menus offer preserved eggs, braised chicken feet, beef tripe and bean-curd rolls. There is also a range of sweets including deep fried Chinese dough, mango pudding, mango pancakes and egg tarts. The a-la-carte menu in Peking Sq. is available for both lunch and dinner, and Peking duck is a feature throughout. If you would like to try a selection of our duck dishes, our Degustation 8 menu has spring rolls, salad, bruschetta, a savoury crepe, soup, sang choy bow, noodles and sliced duck in a banquet style. CELEBRATES 20 YEARS Todd McKenney is one of the best-known and loved Aussie entertainers of our time. He’s also no stranger to Bankstown Sports Club, and we’re ecstatic that he’s making a return in 2017! It’s no secret that Todd McKenney loves the spotlight. Throughout his career, he’s starred in movies, he’s been a judge on Dancing With the Stars, and has immersed himself in the colourful life of the late, great Peter Allen. 2017 marks 20 years since Todd first stepped on stage in the legendary musical ‘Boy From Oz’, and to this day he continues to celebrate his songs and pay homage to his musical talents. It was the original 1988 production of the show that made Todd a household name.

On Wednesday, 12 April, step back in time to the 60’s and join Tracey Turnblad and the gang, as we whisk you away to the crazy world of Hairspray, with all the dance and rhythm and blues songs from the hit movie. There will also be a bonus tribute to Grease, with all your favourite hits including Greased Lightning, Summer Nights and You’re The One That I Want. You Can’t Stop The Beat, Kids Hairspray Show is on at 1.30pm and 6.00pm. Tickets are $5 for members and $7 for non-members.

On Thursday, 20 April, you can relive one of the best-loved Disney classics, the Lion King! This song and dance spectacular features hits like I Can’t Wait to be King, Can You Feel The Love Tonight and Hakuna Matata. The Circle of Life Lion King Show is on at 1.30pm and 6.00pm. FOR LEGACY! Bankstown Bowls is holding its annual Mixed Bowls ANZAC Day Fundraiser, getting the community together to raise money for Legacy. Come along and get involved! For our war veterans, servicemen and woman and their families, Legacy is one of the most important organisations they’ll ever need. Now in its 94th year, the voluntary group provides services to around 80,000 widows of veterans who have died, and 1,800 children and dependants who need support. Legacy is dedicated to enhancing lives and opportunities through innovative and practical programs, as well as assisting families through bereavement. More than 700 people are supported by Legacy in the Bankstown area. Members and guests of Bankstown Bowls are committed to supporting such a worthy

cause, and will again host their annual Mixed Bowls Fundraiser as part of their ANZAC Day commemorations. Held on ANZAC Day, Tuesday 25 April, teams will get involved in casual games of bowls, and will enjoy some lunch and a raffle, to raise money for Legacy. Last year, close to $3,500 was raised and men’s bowls club member, Stuart de Pede went the extra mile, and shaved his head to collect an extra $350. The club is hoping to beat that figure this year! Baulkham Hills gives back! Through the ClubGRANTS scheme, we have been able to support community groups who provide vital services for people living with a disability. NORTH WEST DISABILITY SERVICES

AUTISM SPECTRUM AUSTRALIA

North West Disability Services (NWDS) is a non-profit community organisation established in 1982 which provides services and support for people living with a disability, to help them live a full and valuable life. Each person who uses the service has an individualised support plan, with a team of trained Lifestyle Facilitators to help them achieve their goals.

Aspect is one of the largest providers of disability services in the country, with eight schools and services for children, adults, families, carers and professionals. The organisation helps more than 10,000 people with autism or other disabilities, and their families every year. They are a very personcentred and family-focused group which aims to provide the best opportunities for people with autism.

Through the ClubGRANTS scheme, NWDS received a grant of $5,000 from Baulkham Hills Sports Club to support the Best Mates Project, which links people living with a disability to a volunteer from the community, who helps them to explore their interests and participate in sporting and community events.

Baulkham Hills Sports supported Aspect with a grant of $5,044 to provide schoolbased therapy to 12 students from Gilroy Catholic College in Castle Hill, encouraging and helping them to participate in all facets of school life. Baulkham Hills Sports Club is proud to be able to support these two very worthwhile causes.

BANKSTOWN SPORTS CRICKET DONATION TO UGANDA

In this edition, the cricket club makes another generous donation to kids in Africa, we look back at The Albie Thomas Mile and we recognise our volunteers. BANKSTOWN SPORTS CRICKET CLUB DONATES TO UGANDA Bankstown District Cricket Club has helped to brighten the lives of hundreds of young kids in Africa over Christmas, sending another shipment of cricket gear, clothing and toys to Uganda. This is the 11th year of a partnership between the club and the Uganda Cricket Association, where members and Bankstown locals have sent donated goods to those most in need. This year, 198 kit bags and cartons were filled with sports equipment and clothing that had been donated by clubs, Cricket NSW, individuals, schools and businesses. A consignment of toys donated by the parishioners at the HopePoint Church in Georges Hall was also sent and has been distributed to children in local orphanages. President of the Uganda Cricket Association, Richard Mwarmi is extremely excited about the latest shipment.

“Having gear and clothing to use for our national, regional and club teams and being able to supply kits to schools, has seen our participation increase from just over 10,000 in 2006, to more than 60,000 today”. “We are so grateful for the generous people in Australia for supporting this program, and for the Bankstown District Cricket Club who are now famous in Uganda for what they do”. Bankstown District Cricket Club President, Scott Grant says they’re extremely proud of the program. “This is obviously making such a huge difference to the growing cricket community in Uganda. I would like to thank all those who donated equipment and I would particularly like to thank Bankstown Sports Club, which has covered the cost of shipping every container.” “We are very grateful to President John Murray, his fellow directors and CEO Mark Condi, as this program would not exist and could not continue, without the club’s ongoing support”.

JORDAN GUSMAN RUNNING THE ALBIE THOMAS MILE AT THE CREST

THE ALBIE THOMAS MILE The annual Albie Thomas Mile was held at The Crest in December where Jordan Gusman won the men’s event in under 4 minutes to retain his title for the second consecutive year. Over 300 athletes competed on the night in front of hundreds of family and friends who came to cheer them on. Brittany McGowan, a three-time Australian champion, won the women’s 1500m after joining Bankstown Sports Athletics Club earlier that week! She’s on track for an appearance at the World Championships in London in August this year. Congratulations to the Bankstown Sports Athletics Club for hosting such a successful event, and well done to all of the athletes who took part.

Kylee Freem

Kylee was nominated by the Bankstown District Amateur Football Association, for her work with the Strikers. She has been the club’s secretary for a number of years and juggles her role alongside being a full-time teacher and a mum of 3 children. Kylee is known for keeping the club running smoothly and fairly and she will not tolerate bad behaviour from any players or parents. She is so committed to the Strikers that she rarely goes to watch her own children play, as she is always at the club’s home ground, making sure everything is going to plan. Kylee’s husband Troy is also heavily involved in volunteer work and was awarded Bankstown Sports Club’s 2016 Volunteer of the Year Award.
