Chelsie Hightower Where is your favorite place to grab a bite to eat in Utah? There are so many places I love to go to, but I'll narrow it down to three. The Tree Room at Sundance is one of my favorite places to eat. I have so many great memories there, whether it was for a high school dance, dinner with close friends or a significant other. Porcupine Pub and Grille has an amazing atmosphere and good food. And another favorite on my list is Takashi. This is one of the best sushi restaurants I've been to. If you had 48 hours to do whatever you wanted in Utah what would you do, where would you go? If I had 48 hours to do whatever I wanted in Utah, I'd go to Park City with my family and close friends. We'd rent a couple of condos, ski and snowboard, order in and watch movies. Where is your favorite place to go shopping in Utah?

My new favorite place to shop in Utah is City Creek! I love the feel and it's about time a West Elm came to Utah.
For the past five years, Chelsie Hightower has wowed audiences with her dancing skills as a professional dancer on Dancing with the Stars. She was a special guest star for a week this summer in the Dancing With The Stars Live show in Las Vegas. Chelsie has assisted with choreography and danced for numerous musical guests on DWTS including: Justin Bieber, Whitney Houston, Nicki Minaj, John Legend, Martina McBride, The Script, Goo Goo Dolls, Heart, Rascal Flatts, Kevin Rudolf, Jewel, Susan Boyle, Melissa Etheridge, The GoGo’s, The Bee Gees, and Train. In July 2010 she received her first Creative EMMY nomination for Outstanding Choreography for her Dancing With The Stars routine, Paso Doble /Malaquena. She co-choreographed the piece with fellow DWTS pro Derek Hough. Born in Las Vegas and raised in Orem, Utah, Chelsie has five older brothers and started dancing in an after school program when she was nine years old. She won her first national title when she was just 11 years old. Chelsie has accomplished a great deal and even has her own dance/activewear clothing line, the Chelsie Hightower Collection for Sugar and Bruno. What has been the best part of being on Dancing with the Stars? I've been fortunate to work with people who are legends in there own fields. I have had the pleasure of getting to know them on a deep, personal level. I have also learned from watching them, the way they handle different situations as we take the Dancing with the Stars journey together. Best of all, I'm forming lifelong friendships with these amazing people. These friendships are probably my favorite part of being on Dancing With The Stars. And, of course, I love being able to perform in front of millions of people each week. Do you have any exciting projects, shows coming up that you can tell us about? I recently just signed with Reebok to be the 'face' of their new style-driven, colorful Reebok Dance Collection of shoes and apparel. I'm really excited about this opportunity! They have such cute dance and foot wear. It launches February 1. Also, I'm always dancing, performing in shows around the country and taking classes so I can improve my craft and get ready for the next season of Dancing With The Stars! What is some advice you can offer our readers about learning to dance, young and old? Dancing has played a huge role in my life and the person I have become. It pushes me to new levels makes me explore my boundaries. It teaches me how to succeed and for anyone aspiring to be a dancer I say go for it!! At the end of the day, life is about the journey and finding yourself in it. Focusing in on a goal and going for it with everything you have, even if you fall short of the dream. The person you become in the process is greater than the actual prize.

True family-style Italian restaurants with authentic Italian food seem hard to come by in Salt Lake. Now, I will not complain about the number or quality of Italian restaurants, because I feel we really do have some fantastic Italian food in the city, but restaurants where you feel completely comfortable bringing the family and can expect delicious food are rare. Vivace fills the hole in that arena. There are no white tablecloths or expensive decor, just the basics—great service and legitimate Italian food served in a comfortable and open environment. Vivace is a part of the Cucina Restaurant Group, which includes the Vivace at the airport, Caterina in Sugarhouse (a French bistro), and Cucina Toscana, which is right next door to Vivace downtown. While Vivace serves up more casual Southern Italian food, Cucina Toscana presents upscale Northern Italian food. Enter either door and you’ll find tasty, high-quality food. An evening not so long ago, we stepped through the doors on the corner of 3rd West and Broadway and chose the left entrance instead of the right, leading us into Vivace. We quickly decided to go for the Cena Vivace, their signature menu, which includes either the antipasti platter, pasta, and meat dish for $22 per person or the antipasti platter and pasta for $18 per person. While there are many more options to choose from, spanning from pizza (which our waiter, who spent the last five years in Rome, claims is the best in town) to pasta or meat entrees all ranging from $12– $32, I always find it most enjoyable to order together and

share the meal with those you’re sharing your evening with. Our evening started with one of their more daring crudo bites (or “raw fish dish” for those of you unfamiliar with the romantic Italian language). We took a risk and ordered the Escolar, a fish we’d never had before. It came thinly sliced with avocado, micro cilantro, and citrus. We found it refreshing with an intriguing flavor. Our friendly and very helpful waiter explained that Escolar is a deepwater fish meant to be eaten in small quantities. The Shrimp Carpaccio also came highly recommended. Next came our antipasti platter, a more generous serving than we could have imagined, yet every bite unique and delicous. We each selected what we wanted to taste from the platter and began to
dive into the fresh-marinated vegetable selection. We tasted carrots with fresh mint sauce, fennel with citrus and olives, marinated artichokes, asparagus and green beans with garlic, sautéed mushroom medley, roasted red peppers with capers, roasted red beets, and smokey grilled zucchini. I truly liked every color on the plate, making it only hard to save room for the next two courses. In my mind, when I want Italian food it really means I want pasta. So of course, the next course was our pasta course, and I was glad! We let the chef select which dish (always a fun and good way to try a new restaurant) and he chose well. We had the Bucatini all’Amartriciana, a spicy tomato sauce served over thick round noodles and tossed with crispy pancetta—a bril-

liant combination and one that will certainly bring us back to Vivace. This pasta with a kick proved to be our best bite of the evening. As most would have turned to dessert at this point or just thrown in the towel, we still had one more course to go: meat. And we feasted on some great tasting meat! Our large platter was a meat lover’s heaven, spilling over with porchetta, lamb chops, sliced turkey, roman style lamb, and skewers of sausage. What we couldn’t finish, they happily packaged up for us to take home. Becky Rosenthal loves Salt Lake City. It doesn’t get much more complicated than that. Sometimes she attributes it to the four distinct seasons. Other times it’s the skiing or the summer evenings on the porch. However, most often, it’s the food. Get out and run No matter how fast you go, a mile is still a mile. According to a December 2012 University of Scranton (PA) poll, losing weight is the most common New Year’s goal. If you’re one of many who make that resolution, you may be struggling to stick with it.
