Time well spent Buying a watch at Christopher Ward’s Maidenhead showroom takes the stress out of shopping. If you’re familiar with the world of watches, there’s a good chance you may be aware of English brand Christopher Ward. Since its launch in 2004, it’s become one of the major players in the British watch scene, launching its own mechanical movement in 2014. And happily, well, certainly as far as this magazine goes, the company is based in Maidenhead. Christopher Ward – named after one of its three founders – pioneered the selling of watches exclusively online, which meant it could pass on savings to customers. However, for those who like to try before they buy, it also has a rather pleasant showroom where one can test out watches ‘in the metal’, and buy direct. Staffing it is Declan Strange, whose easy manner and aversion to the hard sell makes a visit to the Park Street HQ a fulfilling way to spend an hour or two. “It pays to come with an understanding of what you want to get out of your visit,” says Declan. “Do you want to browse the whole range? Or are you after something specific? When people make an appointment to visit us, they can make notes on the booking form beforehand, and that really helps me. It’s even better if we can speak on the phone, too.” It couldn’t be easier to arrange. Book your appointment on the Christopher Ward website, and when you arrive, Declan will take you through the process of buying one of CW’s watches. “You’ll be presented with a tray that’s got a selection of watches on it I’ll have prepared before,” he says. “I try to limit what you’re looking at because seeing every watch would be overwhelming.” During your visit, he can arrange for bespoke adjustments such as bracelet resizing and movement regulation – all of which can be completed during your time at the showroom. Declan says it’s much like going to a Savile Row tailor. “I’ll sit with you and be available for any questions. I’ll always tell the truth – there’s no hard sell. I see a lot of people every week, so if you ask me for my opinion, you’ll get it!” And like a tailor, he’ll make sure that the watch fits properly before you leave. “Getting the fit right is one of the reasons it’s worth coming to the showroom. We’ll get the measurements done, go back and forth with the watch until it’s absolutely right. Some people like them loose, some prefer theirs to fit snugly, but when it’s right, it’s right.” With Christmas on the horizon, Christopher Ward has a few offers to tempt you in. From the amuse bouche to the bonbon trolley your taste buds are tantalised. We both enjoyed the Masse Foie Gras with plum, oat granola, pistachio, warm brioche to start and then Fillet of line caught Sea Bass with delica pumpkin, fig, artichoke, shellfish jus, which melted in the mouth. This was followed by two different desserts, one being variations of chocolate and mint with ganache, aero crumble and Moroccan mint ice cream and the other, baked Wigmore cheesecake with Kent mango, passionfruit, lime and coconut that satisfied the palette on every level. After three courses we finished with coffee and bonbons (from the trolley) which played with your senses and finished off a very beautiful meal to perfection. With an array of craft vodkas to lift our spirits, it’s becoming crystal clear that distillers are meeting the demand for something new and unique, and creating distinctive flavour profiles to sip, stir or shake. The foundation for many classic cocktails, vodka can be made from grain, molasses, potatoes and even grapes, and with the rise in higher quality mixers for your V&T and the trend for consuming vodka on the rocks, there’s a shift from quantity to quality. The iconic skull bottle has an opalescent finish and it’s made with English-grown wheat and water from Newfoundland. ‘Drier,

bolder and spicier’ than the Crystal Head house style, the handcrafted glass bottle has the potential to become a collector’s item as no two bottles are alike. A RYE RECIPE A new rye-based vodka from Suffolk-based brewer and distiller Adnams,the rye in Rye Hill Rye Malt Vodka (£26.99, 70cl, cellarandkitchen.adnams.co.uk) creates a drier, spicier vodka than an all-barley recipe and it’s smooth and rich with a spicy kick on the finish.“We always like to play with flavours, techniques and unusual ingredients so were keen to experiment with rye,” says John McCarthy, head distiller. “This spirit is the ultimate example of our in-house grain-to-glass production process as our chairman has grown the rye in his back garden, only a stone’s throw away from the distillery.” A MOOO-VE IN THE RIGHT DIRECTION Made entirely from milk using a secret blending process, it took a West Dorset dairy farmer to invent the world’s first pure milk vodka. Incredibly smooth and creamy, Black Cow Vodka (£28, 70cl, Sainsbury’s) is made from the whey (the curd is turned into cheese) and it really is a dairy delight with vanilla bean on the nose, a sweet vanilla palate with a flick of grassiness, and twist of pepper on the finish. Super smooth, enjoy neat over ice or in cocktails. BE A-MAIZED An award winning vodka from Austin, Texas, the producer of Tito’s Handmade Vodka (£35.99, 70cl, www.selfridges.com) has swapped wheat for corn to create this creamy, soft vodka with a sweetcorn character, and notes of black pepper and vanilla. Excellent in a vodka and tonic, it’s good enough to sip straight and if you like bourbon, this is worth exploring. SUAVE SPIRIT French for ‘wild and beautiful’, Sauvelle takes its name from the countryside where it’s produced and the people for whom it was created. A wheat vodka made in Cognac, Sauvelle Crafted French Vodka (£30.95, 70cl, www.thewhiskyexchange.com) is smoothed with wood which imparts flavours of vanilla, caramel and cherry blossom and there’s a richness to the mouthfeel with a satisfying finish. Dressed for an occasion, try it in a vodka martini.

The Naked Grouse Old Fashioned

The classic recipe for an Old Fashioned cocktail is a simple combination of traditional ingredients that all combine in a smooth and sophisticated drink with lots of taste. Ingredients: 50ml The Naked Grouse 2 splashes of bitters 10ml sugar syrup Plenty of cubed ice Orange zest (to garnish) Method: Put a small heap of ice into the bottom of the glass then pour in the whisky, bitters and sugar syrup in any order. Stir vigorously for 20 seconds, before garnishing with orange zest. Roll the drink around in the glass for one last time, take in the aroma and then enjoy your Old Fashioned cocktail.

Galetti has All The Skills Rolled Pork Bell

With Black Apple Butter For the Black Apple Butter, place all the ingredients in a large pan and stew gently until the apples are completely broken down. When most of the liquid has evaporated, transfer to a blender and blitz. Cool and store in the fridge. Preheat the oven to 140C/275F/Gas 1. Remove two-thirds of the pork skin. Season the inner side of the belly well with one teaspoon of salt and some pepper, and sprinkle the thyme and rosemary over the pork. Roll up the belly, skin-side out. Tie tightly at intervals with butcher’s string. Heat a little olive oil in a deep braising pan and add the pork to colour on all sides. Remove from the pan, add the onion, carrot and celery to the pan and colour. Add back the pork with the stock, herbs, one tablespoon of salt and the peppercorns. Bring to a gentle simmer, then transfer to the oven, cover and cook until tender, about two and a half to three hours. Leave to cool in the cooking liquid, then remove the pork to drain on a wire rack and take off the string. Roll tightly in cling film into a firm cylinder and leave to cool in the fridge, ideally overnight. Strain the cooking liquor into a pan and reduce to a thick sauce consistency. When ready to eat, cut the set pork into slices and gently pan-fry in olive oil until golden, adding some black apple butter to coat all over just at the end of cooking. Heat some of the reduced sauce, add the butter and whisk through. Serve the pork with the reduced sauce, with a selection of seasonal vegetables.

(Serves 5-6) 1kg pork belly, ribs removed 3 thyme sprigs, leaves only 1 rosemary sprig, leaves chopped Olive oil, for cooking 1 small onion, roughly chopped 1 carrot, roughly chopped 2 celery stalks, roughly chopped 3L chicken stock 3 fresh or dried bay leaves 3 rosemary sprigs 5 thyme sprigs 1tsp peppercorns 2tbsp butter Sea salt and freshly ground black pepper Seasonal vegetables, to serve For the Black Apple Butter: 500g Granny Smith apples, peeled, cored and chopped into small pieces 150ml cider 100g black treacle 50g demerara sugar 2tsp mixed spice Juice of 1 lemon

Last month I talked about how to make the most of your salon in the lead up to the busiest time of the year. Now that the festive season is in full swing, I’m giving you my top tips on how to get your hair ready for every occasion this Christmas. After Work Drinks

If you’re suddenly invited to after-work drinks and want to boost your day-old flat hair, just use my Schu-Shine technique to revive it. Spray dry shampoo liberally throughout the hair and use a towel in a ‘shoe-shining’ action to disperse the product throughout the hair for a mussed-up finish with a cool matte texture. It’s an effortless way to add interest to your hair when time isn’t on your side.

Office Desk to Office Party

For the big office party, prep your hair ahead of time so your hair has time to ‘set’ for the day. Split freshly washed hair into two sections, apply

a little heat protection like Organic Care Systems Control Thermal 2 Twenty and then twist sections, tightly pinning them at the back of the head. This look is ideal for work as it looks intricate but is actually much easier than learning to braid and only takes a few moments. Simply take out the twists in the evening, shake out and you’ll be left with beautiful effortless waves. For a festive upgrade, add an accessory. The high street is full of gorgeous hair bands and vintage style clips so get creative.

Perfect your Blow-dry

When time is on your side, take time to practice the perfect blow-dry. Start by prepping damp hair with a root lifting and heat protection spray and comb through to distribute. Dry your roots with your fingers on a medium heat and speed, attempting to get as much lift as possible. Always invest in the best hairdryer possible (I love the ghd dryers which have a cold setting for finishing) Take small sections starting at the nape and aim the hairdryer down the hair shaft with a round brush. This will stop the frizz, flattening the hair hair cuticle. Finish each section with a cold blast from your hairdryer. Let your hair cool before styling the hair out. Give it a light spray with a finishing/shine spray and brush into shape.

Returns With

Bewitching New Record

The Georgian native gets back to her roots with _In Winter_, and explains why making a concept album felt like such a courageous move. It is unusual to find Joni Mitchell’s ‘River’ alongside Sergei Rachmaninoff’s ‘All-Night Vigil’, but that’s exactly what happens on Katie Melua’s latest record, ‘In Winter’. Her seventh studio album, the raven-haired beauty decided to take a different approach to the artistic process, enlisting the Gori Women’s Choir and co-producing for the first time. The result is a haunting and deeply personal concept album that enchants from the very first listen. “The idea for the record came from a conversation with a friend a few winters ago,” reveals Melua. “We were lamenting the fact that there didn’t seem to be a go-to album for us to listen to during the winter months, an album that would fill the house with wonderful warm and poignant songs. So, that’s how the album was born – out of necessity!” Combining new material with classic wintery gems like Ukrainian carol, ‘The Little Swallow, ‘the album has a fluidity that is rare even for entirely original records. Part of this due to the singer’s decision to build the record around the 25-strong women’s choir who she discovered whilst researching music of her homeland. “I was mesmerised by their tone and sonic richness, they are essentially a vocal orchestra,” explains the impassioned 32-year-old. Since her 2003 debut ‘Call Off The Search’, which was released when she was only 19, Melua has been the poster girl for a certain brand of Radio-2-friendly, folk-pop. The protégé of Mike Batt, ‘In Winter’is Melua’s first album without the famed Wombles producer, her decision to take more creative control was a difficult one. She recalls a meeting with her management where she had to ‘have a word with herself’ in order to pluck up the courage to suggest she co-produce ‘In Winter’, going on to say: “I do have lots of experience; I’ve made six albums as an artist, but it’s a whole different thing when you have to take on the responsibility of being the decision maker. Because then you know that whatever decision you make on whatever take you choose, the whole project depends on it and the success of how it moves forward depends on it - that’s a different level of responsibility.” With a clear vision in her mind, Melua and co-producer Adam ‘Cecil’ Bartlett (whose engineering credits include PJ Harvey and Marianne Faithfull) set off to Georgia with 12 boxes of equipment and a plan to build a makeshift studio in the small town of Gori. “The experience was just incredible and reminded me how lucky I am to make music for a living. The women in the choir just worked

so hard and treat their vocal practice like a fine art,” says Melua. “The choir has never actually toured extensively like this in Europe – in fact, they’d never recorded with headphones before! Also it reminded me how incredibly unique it is to be living in the UK where there is such a heritage of pop music and to potentially have a chance to make a record that’s going to be released on a Western label. Their enthusiasm and passion for it made me feel like I was making my first record.” She may have had her doubts, but ‘In Winter’ is a remarkable effort proving Melua’s graduation from teen sensation to serious artist, as the haunting vocals layer up to create a blanket of sound that will keep you warm till Spring. RAISING HELL Tom Hanks might be Hollywood royalty, but he doesn’t mind being told what to do on set.

So says Ron Howard, the acclaimed director who’s now worked with the actor five times since their first collaboration, 1984’s Splash. “He really likes being directed and encourages that process, so he’s just a pleasure, an exemplary person and artist,” remarks the 62-year-old, who also worked with Hanks on 1995’s Apollo 13.

Given their history, it’s no wonder Howard says it’s “a pleasure” to be working with the actor again, this time on Inferno, their third screen adaptation of Dan Brown’s bestselling novels, following The Da Vinci Code a decade ago and Angels & Demons in 2009.

“We have such an easy and productive ability to collaborate and there’s tremendous mutual trust, and that means a lot,” continues the film-maker, dressed in jeans and sweatshirt. He’s wearing his trademark baseball cap, of course, and has the faintest hint of auburn stubble, while the voice remains as boyish as it was when he was in front of the camera, in Seventies TV hit Happy Days.

“The Dan Brown movies are a lot of fun to make,” explains Howard, “and I hope Inferno’s also fun to watch.” The movie sees Hanks reprise his role as the Harvard symbologist Robert Langdon on a trail of clues, this time tied to the great medieval poet, Dante. “Part of the reason everybody loves Tom in this role is that, in real life, he is Robert Langdon. Both are driven by curiosity, share a dry sense of humour and are men who, when faced with a puzzle, are like a dog with a bone. They are fascinated by the world around them and have the wonderful kind of mind that is able to decode it,” observes Howard. When the film opens, Langdon’s in an Italian hospital, confused and bloodied, with no memory of how he wound up there and experiencing terrifying hallucinations of Dante’s nightmarish Inferno. “It’s a great opportunity to look into the corners of history that one doesn’t always get a chance to really examine, and I think Inferno is a little bit more of a modern thriller,” explains Howard, who won a Best Director and Best Picture Oscar for A Beautiful Mind in 2002, but missed out in both categories for 2008’s Frost/Nixon. “Certainly, my approach to it is visually edgier, more psychological, and the issue at hand - that Dan Brown gives us in the book - is a more contemporary one, more immediate and less about looking back,” continues the father of four. When a woman arrives at the hospital with the intent of wiping Langdon out, he teams up with Sienna Brooks (Felicity Jones), a doctor he hopes will help him recover his memories. Piecing bits of the puzzle together, the pair race across Europe - and it becomes clear a billionaire genius, by the name of Zobrist, wishes to unleash a global virus that will wipe out half of the world’s population.

The stylistic film, with its series of cryptic and hallucinatory sequences, provides an entirely different feel than previous instalments, which is what drew the director to return to the franchise. Since starting his film-making career which has encompassed a range of genres; from sci-fi (Cocoon) and fantasy (Willow), to romance (Far And Away), comedy (How The Grinch Stole Christmas) and drama (Cinderella Man) - the only sequels he has chosen to helm are Angels & Demons and now Inferno. “There have been characters I love as much as I love Robert Langdon, but I always want to push myself to do something different. It’s more interesting than repeating yourself,” notes Oklahoma-born Howard, who made his directorial debut in 1977 with the comedy Grand Theft Auto, and in 1986 co-founded the production company Imagine Entertainment, with long-time producing partner Brian Grazer. “But that’s what’s so great about the movies based on Dan Brown’s books each of them is so different, and he explores such different themes in each adventure. Inferno is the most stylistically different yet. With this series, I get to go back and revisit a character I love while continuing to push myself in new directions.” During the shoot, Howard enlisted the help of philosopher and futurist Jason Silva to help build the harrowing YouTube video Zobrist produces, to support his idea that over population will lead to human extinction. He also worked closely with his team of collaborators to ensure as much as 70% of the film was shot on location. “It’s always great when you’re making any movie, when you can be in the actual locations,” says Howard, who was

In the last few years, he’s completed F1 biopic Rush and the Moby Dick inspired tale In The Heart of The Sea with Chris Hemsworth, music documentaries Made In America, starring Jay Z, and The Beatles: Eight Days A Week - The Touring Years, while Mars, his new series for the National Geographic Channel, which combines fact with fiction, is due to air next month. Everyday spaces such as open plan kitchen, dining and living areas are usually the hub of the home and are often used more frequently than formal living spaces. This amount of usage however does not mean that they should not be just as luxurious as their formal counterparts. When designing an open plan everyday living space, functionality is obviously very high on the priority list, however aesthetics need not be totally compromised, just slightly adjusted. Space planning is crucial in open plan areas and can be more complicated than a standard room which only has one use. Multifunctional spaces need to suit the

whole family and there should be a natural flow to the area. For example, how easy will it be to move around the dining table to get from the kitchen to the TV and seating area? Zoning is an important aspect of space planning and a multifunctional, open plan space should be zoned according to the function. Zoning is important for many reasons but particularly for lighting and electrical cabling. Planning a space with accurate, detailed drawings is essential to ensuring proportion, flow and maximising space efficiency. When using zoning it is usually a good idea to link the zones within a space in some form. Mixing fabrics between the zones is an ideal way to do this, such as having the material for the bar stools the same as the ottoman in the TV seating area. Lighting can also be integrated and mixed in the same way to give the space some cohesion, for example using pendant light fittings over the kitchen island and then a larger similar styled pendant light over the dining table will create a linking effect. Choosing the right type of fabrics for everyday living is essential in ensuring that the space will look great but also be durable and resilient to family life. All fabrics have different amounts of durability and some are definitely more practical than others. Robust, durable fabrics in darker colours with a hint of a pattern such as herringbone are usually a safe bet but also consider leather or faux leather for everyday dining chairs which can then be wiped down and are easy to keep clean. A further consideration when planning an everyday living area is allowing space for adequate storage. Bespoke joinery such as inbuilt cupboards or shelving is usually the most efficient use of space and can be adapted to your personal requirements. There are a myriad of different veneers and finishes that can be used to compliment the overall design, so time spent on choosing these permanent aspects of the design is always time well spent. Everyday living can still be luxurious and this should always be the aim when designing a space. A beautiful, well designed open plan family hub will always lift the spirits and should be a high priority when redesigning any home.

5 Tips For ADDING VALUE If you’ve outgrown your home and you can make it bigger by building an extension or converting the loft, cellar or garage, doing the work is often more economical than moving and gives you an opportunity to create space tailored to your needs. However, you need to be careful not to enlarge your home in the wrong way. You’ll add most value if everything’s in proportion - for example, the right number of bedrooms to bathrooms (aim for at least one bathroom to three bedrooms) and enough living space for the number of bedrooms. Lofts are often straightforward to convert, especially if the work can be done under your home’s permitted development rights, meaning that planning permission isn’t required. Loft conversions usually add most value when turned into a suite with a main bedroom, bathroom or shower

room and even, if there’s enough space, a walk-in wardrobe or dressing room. If planning laws allow, maximising the space by adding a full-width dormer window and altering the side roof so it goes from sloped to ‘straight’ (when viewed from the front or back) makes for a larger and more valuable loft conversion. These days, smaller, separate rooms are out and larger, open-plan rooms are in - as far as most of us are concerned. However, totally open-plan space isn’t necessarily the best way to add value, or live day to day, especially if you have children. Open-plan kitchen-diners/family rooms are now extremely popular, but also having a separate, more formal sitting room works well for many families. Some families prefer to have a separate playroom

or den for the kids, so the mess is self-contained. One of the best ways to create an open-plan kitchen-diner/ family room is to add a groundfloor extension (which can also often be done under your home’s permitted development rights) to enlarge the existing kitchen and any rooms you’re combining it with, such as a separate dining room. Add a wall of bi-fold doors leading out to the garden to give a wonderful feeling of insideoutside space and you have a valuable addition to your home. If enlarging the kitchen isn’t an option, modernising a dated kitchen is one of the best things you can do. Kitchens and bathrooms are the rooms that most sell homes because replacing them is expensive and disruptive, and while you don’t have to spend a fortune to get a good look, any money spent is usually a good investment in these key rooms.

SRI LANKA’S The Spice of Life “Tina, Tupac, Tyrone?” News we’re about to release a batch of three-day-old sea turtles into the ocean incites squeals of excitement from my group of travellers... followed by heated debate about the naming ceremony.

The hatchery-come-visitor centre incubates rescued eggs from Green, Hawksbill, Loggerhead, Olive Ridley and Leatherback turtles for around 32-40 days and, once hatched, babies are released at three days old for optimum survival instinct. Tourists can even take part in their own hatchlings launch for a small donation (usually around £30 per couple).

But when a fierce Sri Lanka monsoon breaks at dusk, just as we’re about to launch the 5cm-long wriggling shells into the sea, our enthusiasm is rapidly replaced by concern. We have vital minutes to ensure the 40-plus hatchlings head straight for the sea, giving them the best chance of survival. As torrential rain lashes down, we steer wayward shells into the waves, while somebody in the group loses a flip-flop in the angry tide. Founded in 1978, Kosgoda Sea Turtle Sanctuary on Sri Lanka’s south coast is one of several hatcheries working with local fishermen to protect vulnerable turtle eggs from predators, like monitor lizards and crows, and poachers illegally selling the meat and shells.

We leave the centre drenched but grinning like turtle superheroes after our successful release of the babies, made even more dramatic by the erratic monsoon. “Here in Sri Lanka, we see nature putting on its finest displays,” says our local tour guide, Richard Pieris, smiling. Frequent tropical storms, especially in the monsoon period of May to September, are responsible for the vibrant greens of Sri Lanka’s palm tree-fringed coastlines, so we really can’t complain. It’s humid too. At every stop, we’re offered orange King Coconuts (sweeter than traditional ones) for refreshment. Richard tells us locals sup it from roadside stalls all over the island and the indigenous fruit has become Sri Lanka’s welcome

factory is so potent, it makes me feel dizzy.

Tourism boomed in Sri Lanka after three decades of civil war ended in 2009. The number of visitors has been growing and from November, Thomson will launch a direct 12hour flight, bringing a new wave of wanderlusters to the tropical island.

The scene outdoors, 350ft above sea level, is similarly breathtaking. Sloping hillsides are carpeted in tea leaves as far as you can see and the air’s punctuated by plucking sounds as traditional tea pickers expertly throw leaves into mesh back sacks.

Along with nature, tradition and culture are key attractions.

We pass a truck heaped with 1,500kg of green leaves and I’m told it takes almost 5kg of the stuff to produce just 1kg of black tea.

We visit Galle Fort beach in the Bay of Galle to see stilt fishermen in action; scrambling up three-metre wooden structures in seconds, they dangle basic rods to catch fish - a method of fishing unique to Sri Lanka. I appreciate their skills even more when I try it myself. I take forever to perch safely on the branch ‘seat’, and catch just one microscopic fish in 15 minutes. It all feels pretty stable and fun, until a more ferocious wave wobbles your precarious stilt a fraction. Another tradition Sri Lanka is fiercely proud of is tea production, specifically pure Ceylon, described as the ‘Drink of Kings’ on billboard posters. Dressed in white lab coats and masks, we get a tour of Raigam Tea Plantation in the lush hills of Ingiriya. The aroma of fresh tea inside the

Seeing first-hand the meticulous processes involved in producing such high-grade tea - starting with stalk extraction and ending with a sophisticated tea colour sorting machine, I vow to never to settle for cheap tea bags again. Not everything in Sri Lanka is so high-tech. We visit a family-run farmhouse in Bandaragama, where we see a large bull being led in a circle to grind coconut oil using a traditional wooden mill. More than 100 varieties of fruit and veg are grown on the farm (including some of Sri Lanka’s 60 banana varieties) but the family head tells us endemic Ceylon cinnamon is one of their bestsellers.

Tucked away in sleepy Bentota town, our hotel, the Vivanta By Taj, is flanked by beautiful beaches on either side. Dotted with rock pools,

one is perfect for sunset strolls; the other, slapped by more ferocious waves, is scattered with coconut shells and burnt-out banana leaves, like something out of a Bond movie. Chill-out levels hit their peak after a visit to the hotel’s zen Jiva spa, which draws on Indian Ayurvedic rituals and has koi carp hypnotically swimming around a relaxation room pond.

Winter

Walks Winter is upon us, long dark nights, chilly days, who would want to go out walking? Forget all those negative thoughts as winter is a great time to take a walk in our countryside. Winter gives us an opportunity to look at the landscape. Bare trees and hedges give us a chance to see the details of the landscape. Features that are so often hidden by the abundance of summer now come to the fore, where once hedgerows obscured our vision, we now see the lands beyond. We are recommending three walks based around Christmas Common in the Chilterns, for you to try out this winter. The walks are circular and you have a choice of 2 ½ miles, 3 miles or 6 miles, depending on how energetic you’re feeling. All the walks start from the Natural Trust carpark located on Hill Road, OX49 5HS is the nearest postcode. You can download a detailed map and description of the walks from the website www.chilternsaonb.org where you will also find lots of other walks in and around the Chilterns to try. You will be walking in an area of outstanding natural beauty, so pick a dry crisp winters’ day and get out and explore, the wonderful Chilterns countryside. What can you expect? You will be walking on paths and roads, but be prepared for a bit of mud, so suitable footwear is a must; it’s winter after all. The shortest of the three walks is a level route with no obstacles which need negotiating. The other

two walks each have their own challenges and you should be prepared for steep muddy paths and stiles. Each of the walks takes you on a journey through our countryside, past and present. As you walk, you can see how mankind has shaped and changed the land over the years. Look closely at the fields and hedgerows as you walk. Each walk has a story to tell from ancient woodland with its old trees to more recent woods of Beech planted for the furniture industry and fuel in more recent years. At times your walk will take you between steep banks. Many of these banks denote a very old route that would have been used by our ancestors, to move people and stock around the area. Best of all, perhaps are the glimpses through the now bare trees of a wider vista. You are, after all, on top of Watlington Hill, a great vantage point to look out over Watlington below. Should you become foot weary you can always head to The Fox and Hounds in Christmas Common for a short rest or head into Watlington itself to explore the town. So whatever you do this winter, pull on your coat and walking boots, get out in our countryside. Contrary to popular belief, even in winter there is a lot to see and do. The magical and sometimes macabre stories behind the popular 19th century fairy tales are explored through family-friendly tableaux, talks, walks and storytelling. Hughenden’s staff and volunteers will recreate scenes from the stories throughout the Manor and extends into the woodland. Cliveden

For the first time in Cliveden’s history, Widow Twankey and the gang are coming to Cliveden for a very special pantomime-themed trail harking back to Cliveden’s theatrical roots. Dress up as your favourite panto character in an interactive activity trail where children will explore Cinderella’s kitchen, find Aladdin’s magic carpet in the cave of wonders’ and try spot the top of the beanstalk. This year, Greys Court is having a traditional Brunner family Christmas in the mansion. Magnificent festive floral displays will decorate several of the rooms, drawing on Lady Brunner’s love of fresh flower arrangements around the house. The kitchen was a hive of activity for Lady Brunner during the festive season and will once again be aglow with the delicious sight and fragrance of home-made Christmas baking. The removal of a tree stump from a garden can often be a problematic and time-consuming exercise without the help of a good tree surgeon, says Calibra Tree Surgeons. The root systems which the tree creates can differ depending on the species and age of the plant and can often extend metres from the tree and within flower beds or lawns. Stump grinding is a way of removing a tree stump. The blades cut at the stump creating ‘sawdust and woodchips’ until the stump has disappeared. You can use the mulch in your gardens and beds to conserve moisture, improve fertility and health of the soil, reduce weed growth and to enhance the visual appeal of the area. Now is a good time to be removing stumps as plants are dormant and there will be fewer disturbances.

Tighten that belt While you may not feel in the festive mood just yet, new research suggests many people started stocking up for Christmas well before shops started putting up their displays. Nearly one in four (23%) of us had started our Christmas shopping by September or earlier, a survey from VoucherCodes.co.uk has found. And with worries about stretching the budget over the festive season, many have been thinking ahead. Just over two in five (42%) people have been putting a bit of cash away every month throughout the year to be able to afford Christmas. Many are so well prepared that 23% expect to have the festive shopping all wrapped up by the first week of December. Although there are always some who like to leave it to the last minute with nearly one in 10 (9%) confessing they will be making a last-minute dash on Christmas Eve to finish buying their presents. It’s clear that cost pressures are on many people’s minds when it comes to Christmas shopping habits - and with much discussion taking place in recent weeks about rising prices, it may well pay for some shoppers to plan ahead. Nearly one in four (22%) people surveyed were concerned about the impact the festive season could have on their wallet. And it’s little wonder when, according to the research, households are typically expected to spend £780 on Christmas, including gifts, food and drink, and cards and decorations. Many plan to take advantage of shopping bonanzas to help them save money. The survey among more than 2,000 people found that 22% of people are planning to shop on Black Friday, while 17% plan to splash the cash on Cyber Monday. But before joining the stampede, it may well be worth doing your research before these shopping days - to check out whether what’s billed as a “bargain” really is worth it. Technology is also playing a big role in shoppers’ quests to scout out the best deals this year.

Nearly half (49%) of those surveyed will be shopping online this Christmas, with nearly a third (29%) planning to make festive purchases on their smartphones. Those planning on hitting the high street are also doing their homework online first, with nearly one in five (19%) using mobile technology to find deals on-the-go. The research suggests women are savvier than men when it comes to comparing prices on the high street with those online, with 21% of female Christmas shoppers admitting to searching for deals online while in-store, compared to just 16% of men. There are also signs that rising prices may make this year particularly tricky for Christmas bargain hunters. Official figures recently showed the consumer price index (CPI) rate of inflation accelerated to 1% in September - the highest level seen in nearly two years. Economists have warned the weak pound could feed through to further price increases at the tills in the coming months. This has led some commentators to suggest that this year, it really may pay to do your Christmas shopping early.

First Drive: Audi R8 V10 Spyder WHAT’S NEW? The latest generation Audi R8 coupe has been on the market for a year now, so aside from the Spyder’s retractable roof, there’s nothing particularly new to shout about. That’s not a problem, though, because the roof’s opening and closing mechanism is certainly worth a mention. It takes 20 seconds to complete its movement, with the rear deck lifting up as arms twist and turn to accommodate the cloth canopy. What’s new compared with the previous generation R8 Spyder? Well that’s where things start to get a bit more interesting. It’s 25kg lighter but 50% more rigid thanks to the new aluminium-intensive chassis, which only weighs 8kg more than it does in the coupe. Extra stiffness comes from reinforcements in the sills, A-pillar and windscreen frame so the car doesn’t tie itself in knots when the road gets fun.

LOOKS AND IMAGE Just one of the Audi R8 Spyder’s many key selling points is its gorgeous styling. It somehow manages to look understated, imposing and elegant in equal measure, especially in the Daytona grey pearl-effect paint our car was daubed in. Quality exudes from every inch of the car, from the perfect shut lines of the body to the minimalist interior. Every R8 is handmade on its own plinth in a dedicated factory, and the attention to detail that affords is immediately evident. The only bugbear is the driving position, which is hindered by the roof mechanism’s packaging. The seat doesn’t slide as far back as it does in the coupe, meaning drivers more than six feet tall will struggle to fit. That aside, there are few cars that pack quite such a performance punch into such an exquisite package and, coupled with the purity of the glorious naturally aspirated 5.2-litre engine, few keen drivers will be left anything other than overjoyed by the experience. Steering is a little on the light side, which makes driving it near the limit a lesson in trust, but it doesn’t take long to gel with the car - you’ll never have to worry about finding the limit on the road, there’s that much grip.

SPACE AND PRACTICALITY Supercars aren’t known for being spacious and practical, and so the R8 Spyder struggles here. The aforementioned driving position makes it less comfortable for tall folk, particularly on long-haul trips, and the low-slung seats require learning an undignified slide and drop on entry. With the engine located in the middle of the chassis and behind the driver, the only place to put luggage is in the front trunk. It’ll easily hold a small weekend bag, but you might struggle to squeeze a family’s weekly shop inside. As far as family appeal goes, the kids will love it for the occasional outing, but with only two seats and limited luggage space it won’t replace the family hatchback...

BEHIND THE WHEEL Once you’re behind the wheel - and assuming you can fit - you start to forget about any impracticalities. Thumb the big, red wheel-mounted starter button and the motor stutters for a moment before unleashing the sound of 10 glorious cylinders on your eardrums. It’ll stir something deep within even those who claim not to care about such things. Out on the road, the R8 Spyder is something of a battering ram, offering searing performance whenever you stamp the throttle. Even with the gearbox in full auto mode, there’s only a moment’s hesitation as the S tronic system dives down the cogs before dumping all 532bhp and 540Nm of torque through the all-wheeldrive system and pinning you to the seat. That pinprick on the horizon will scream past the window alarmingly quickly. The light steering and wide stance make it a less-than-ideal companion for a back-road blast but, particularly with the optional Sport exhaust, it can still be fun at sane speeds. Its party piece is how docile and easy to drive it can be when you’re not stamping on the loud pedal at every opportunity. Use the Drive Select toggle to put the car in comfort mode and you’ll cruise about unassumingly. Parking can be tricky, again because of just how wide this thing is - it’ll barely fit in most bays width-wise - but thanks to a reversing camera and parking sensors the job is made a little less stressful.

The power of positive thinking

Dog training – a subject likely to stimulate heated discussions in any gathering of dog owners as to the best or most effective approach.

Now I don’t profess to be an expert by any means and certainly have no formal training in dog education, but over the years I’ve seen a lot of dogs and owners, so this is just based on observation and personal experience. Inevitably, in a short article, there are a lot of generalisations and yes, I understand that there are always exceptions.

The key message is, keep it positive. The idea is for your dog to want to do what is being asked of it. In broad terms, dogs do want to please as they are pack animals so they want to be with their pack where they feel safe and supported. Dogs are not actively naughty or bad and their reactions to situations they find themselves in may not be exactly how we’d like every time, but they are individuals. You can never start the education of your dog too early and an older dog can learn new ‘tricks’ when presented in the right way. Don’t wait until they are a boisterous ‘teenager’ before you get them walking on a loose lead, whether it is ‘at heal’ is up to you. Having a dog at heal gives you closer control in tricky situations, such as a busy street. No questions about am I or am I not meant to be at heal. So, ‘keeping it positive’, what does that actually mean? If the dog is

doing it wrong, telling them off is not going to achieve anything. In life, we all prefer reward and praise for doing something, it’s is all about being incentivised. To say that a dog ‘should know better’ is just silly. A dog has to understand what is wanted and it is up to the owner to create the conditions that enables them to understand. If you have ever been to a dog training class, you will know the mildly embarrassing situation where the instructor demonstrates what is wanted with your dog, and your dog gets it absolutely right. What is that telling you? That it is you that is getting it wrong and when there is understanding, there is obedience. If your dog is pulling, yanking on the lead – tempting though it can be - will always meet with resistance – action and reaction – so it is counterproductive. If someone pulls at you, your reflex is to resist that pull. It is the same in your dog. If your dog pulls, stand still until the tension comes out of the lead, then carry on. Give the dog a treat or praise when the tension comes off the lead so they associate a slack lead with positive vibes from you. Ignore unacceptable behaviour, turn and/or walk away – do not scold. If your dog is seeking attention, even a scold is better that being ignored. When they stop doing whatever was unacceptable, praise and reward them. Reinforce the good and ignore the bad. Never ever tell your dog off when they return to you, no matter how long they took to respond to your call and no matter how worried or frustrated you were. Reward and praise. Just think how confusing it is to the dog ‘I’ve come back – I’m scolded. Have I done something wrong in coming back?’ Call them back, make a fuss, give them a treat and then off they go again. Recall is as much about reconnecting with your dog and keeping them aware of where you are, as it is about control. And in case you are wondering, no, I don’t always practice what I am preaching, but I try to remember this mantra and feel irritated with myself when I react rather than think. Dru Ross

You will be shown to your reserved seats on the steam train, and then ride up and down our 1/3 mile length of track as you await the arrival of Father Christmas, his elves and a big sack of presents, as they make their way along through the train!

Thomas the Tank Engine will be here for the first three weekends leading up to Christmas, but he then has to return to Sodor. So for the last weekend before Christmas, 17/18th December, Father Christmas will be travelling on one of our own steam locomotives. Every child gets an age-related present from Father Christmas.
