How mykind Organics Got Its Start While I was pregnant with my son, Bear, I embarked on a quest for the cleanest prenatal vitamin I could give my body. Don’t Stress About It Stress comes in many different shapes and sizes, some of which aren’t always obvious—work pressure, debt, illness, worries about children or aging parents, and the list goes on. There are also psychological forms of stress such as holding on to things and stuffing down feelings. Regardless of the cause, all forms of stress can negatively affect health and mental well-being. There are a lot of effective ways to deal with stress and lighten your stress “load.” We have some suggestions in “Stress Relief Toolkit” by Tina Rubin on p. 38. For example, here’s an easy stress management tip that can pay off in a big way—set aside 15 minutes each morning for yourself. Read, meditate, write in a journal, drink a cup of tea, go for a walk, etc. This helps you ease into the day, and when practiced over time, increases your body’s resiliency to stress. You may think kids are too young to be burdened by stress, but studies show that even school-age children may have high levels of chronic tension and anxiety, says Lisa Turner, author of “All in the Family” on p. 32. “If your kids struggle with stress, help them cope; be sure they’re getting proper sleep and nutrition. Don’t overschedule them; down time is the fastest rejuvenator for kids (and grown-ups).” You can also support tech-loving kids with apps. One to try is HelloMind, a kid-focused app that offers guided hypnosis sessions. Supplements can help quite a bit when it comes to blunting the effects of stress within the body. My favorites are medicinal mushrooms. According to mushroom expert Tero Isokauppila, author of “5 Amazing Mushrooms for WholeBody Health” on p. 53, reishi and chaga are among the best mushrooms for helping you stress less. “Taking reishi will not only increase your quality and duration of deep, restful sleep, but will also allow you to function at peak levels during waking hours,” says Isokauppila. Stress is everywhere. There’s no way to avoid it completely. The plus side is that you can reduce the amount of stress in your life and alleviate the kind that you can’t control. It might take time and practice, but making stress management a priority will make you a happier, healthier person.

trendWATCH $1 billion That’s how much we spent on gummy vitamins last year, according to research by IBISWorld. Once made just for kids, gummy supplements now cater to all ages, and even though they’re sweet, some are sugar-free.

KIDS’ SELFIES SPREAD HEAD LICE Of all the possible downsides of smartphones—interrupting family dinners, distracting drivers, or just wasting our time—who knew that head lice could be another? But that’s what British researchers at Oxford University found. Head lice spread more easily through close contact when groups of kids take selfies or crowd together to watch something on a friend’s electronic device. The upshot: If your child’s school has a lice outbreak, cutting back on the use of electronic devices with friends can help to end it.

natural remedy for eye strain Computer and phone screens emanate blue light, which penetrates our eyes and contributes to eye strain, but a natural remedy can help. A combination of antioxidants, lutein and zeaxanthin, are natural filters that reduce the impact of blue light. A study at the University of Georgia in Athens found that supplements with these antioxidants helped reduce not only eye strain but also neck pain, fatigue, and headaches among people who spent at least six hours daily in front of a screen. “After six months of supplementation, we saw significant reduction, around 30 percent, in these symptoms, and significant improvement in measures of visual performance and protection,” says lead researcher James Stringham, PhD. This antioxidant combination is an ingredient called Lutemax 2020, found in many brands of eye health supplements.

MORE CHOLINE FOR MOMS TO BE The American Medical Association, which often looks askance at supplementation, wants more choline in prenatal supplements. Such was the consensus at the organization’s 2017 annual meeting. Last year, a study at the University of Illinois at Chicago found that of the top 25 prenatal supplements, none contained the daily recommended 450 mg of choline. Two contained 50 or 55 mg, six contained 30 mg or less, and the rest contained none. Choline is necessary for a healthy pregnancy and prevention of neural tube and other birth defects.

Cranberries Enhance Gut Health Cranberries are best known as a natural remedy for urinary tract infections, but a new study has found benefits for the gut. Certain carbohydrates in cranberries, called xyloglucans, aren't digested in the stomach and make their way to the intestines, where they ferment and feed beneficial bacteria. Researchers at the University of Massachusetts and the University of Rhode Island think that this new discovery could lead to healthier gut bacteria, which play a key role in immunity and other aspects of health. Xyloglucans are a component of the fiber we get from fruits and vegetables.

Strong Muscles MAKE YOU SMARTER MAGNESIUM RELIEVES DEPRESSION Magnesium is known to be essential for healthy heart rhythm, blood pressure, bones, and many other functions, and now a study at the University of Vermont has found that it relieves depression. Among a group of 126 women and men, 248 mg daily of elemental magnesium was as effective as the SSRI class of antidepressant drugs— without the side effects. “The results are very encouraging, given the great need for additional treatment options for depression, and our finding that magnesium supplementation provides a safe, fast, and inexpensive approach to controlling depressive symptoms,” says lead researcher Emily Tarleton, RD.

One Secret to Healthy Aging Weight is a sensitive issue for most people, but controlling weight gain over the course of life can have big rewards, according to research at the Harvard T. H. Chan School of Public Health, which looked at long-term weight and health changes among more than 92,000 women and 25,000 men. The study found that seemingly modest increases in weight add up over the years. On average, U.S. adults gain 1–2 pounds per year between their late teens and mid-50s. While one year’s gain is small, the cumulative effect takes a toll on health, with increased risks for diabetes, heart disease, and cancer. On the flipside, reducing the creep of added pounds makes aging a healthier experience, and it’s never too soon to start.

Meathead. Musclebrain. Dumb jock. Like many stereotypes, ones equating strong muscles with less-than-admirable intellectual abilities are off-base. A Finnish study of 338 older men and women (average age 66) found the opposite: Those with stronger muscles had better mental function, including better memory and a greater ability to process and use information. Exercise that challenges and strengthens muscles helps to reduce loss of muscle with age, and eating protein also makes a difference. Although it’s common for dinner to contain the biggest share of the day’s protein, Canadian researchers found that spreading daily protein among three meals led to stronger muscles among older people, compared to eating the same daily amount at one sitting. At least 18 grams of protein per meal, three times per day, was an optimum amount, and could come from a combination of high-protein foods and protein supplements.

GOOD REASONS TO GO NATURAL FOR BEAUTY More side effects from conventional hair and skincare products are being reported to the FDA, rising from 706 adverse events in 2015 to 1,591 in 2016. These are largely driven by complaints about shampoos, conditioners, and hair styling products, with skincare products making up the second-largest category. Fortunately, there are many organic and natural beauty products that feature gentle, therapeutic herbs and moisturizers made from plants, without the toxic, irritating chemicals found in conventional personal care products.

Muesli Magic Seven Sundays Muesli seeks to redefine the art and grace of the American breakfast ///By Neil Zevnik Back in the late ’60s, I came across a red and white box of “healthy” breakfast cereal. Called muesli, this mélange of whole grains, nuts, and fruit was a big deal among my more earthy friends. Fast-forward a few decades, and “healthy” food is no longer just for hippies. Muesli is similar to granola, but with one significant difference—it’s raw, not toasted, and therefore, doesn’t need fat and sugar to hold it together. Invented by a Swiss doctor for patients in his sanatorium in the Alps, muesli is high in fiber and rich in antioxidants, and it’s a good source of protein and omega-3 fatty acids. And that brings me to Seven Sundays Muesli. From locally sourcing plant-based, nutrient-dense, non-GMO ingredients to following environmentally sound practices to giving back to the community, Seven Sundays seeks to redefine the American breakfast.

As an environmental consultant, Brady already knew the importance of sustainability and responsibility. So he focused on the big picture; as he notes, “The cereal aisle, and breakfast in general, in the U.S. need a complete overhaul. We decided to tackle it head on!” And though

the obstacles are many, his optimism is unshakable. “This is a very exciting time to be in natural food.” It started with a local farmer’s market in Minneapolis and grew slowly from there. For Hannah, the most important thing is “the ingredients—simple, unprocessed, high-quality, and sustainably sourced.” And Brady loves the fact that, “I get to work side-by-side with my partner in life, doing something that doesn’t feel like work.” And for both of them, the goal is “to build a company with a focus on transparency, community, and sustainability.” Hannah has the final word: “Our products change people’s mornings for the better. Tia Mowry After being diagnosed with endometriosis, actress, author, and Cooking Channel host Tia Mowry embraced an anti-inflammatory diet and gained a new lease on life By Chris Mann

Success was sweet—too sweet, in fact—for actress Tia Mowry when she shot to fame with her twin Tamera in the 1990s sitcom Sister, Sister. Catered confectioneries and carb-filled studio cafeteria foods replaced healthy snacks and home-cooked meals. Endless candy, ice cream, and whipped-cream-topped pancakes eventually took a toll on Tia’s health. In 2006, “I was diagnosed with endometriosis, which is an infertility issue and an extremely painful condition,” says the lifestyle author, 39, who hosts the Cooking Channel’s Tia Mowry at Home. After having surgery and seeing doctor after doctor, an ob-gyn (Dolores Kent, MD) told Mowry that if she wanted to have kids, she needed to see a nutritionist. “She was the first doctor to tell me this. She was the first person to say, ‘You need to cut out dairy because it causes inflammation in the body,’” says Mowry. Processed foods and refined sugar also had to go. Mowry also sought the advice of Donna Gates, author of The Body Ecology Diet and otherwise Googled her way to healthy-eating enlightenment. “Educating myself and going on this nutritional journey, I learned that food can, in fact, be medicine. Not only did my endometriosis become suppressed, other ailments that I had with inflammationbased components were remedied too. I no longer have migraines, and this way of eating has also helped clear up my eczema. That is when I truly couldn’t believe it and decided I need to tell my story to inspire others.”

The result: Mowry’s new cookbook, Whole New You: How Real Food Transforms Your Life, for a Healthier, More Gorgeous You (Ballantine Books). “All of the recipes in this book are the recipes and the food I ate during my journey and my transition

to wellness,” she adds. “I’m still in the trenches with everybody else who has food allergies or some sort of ailment that food can exacerbate. So I wanted this book to be relatable and personal but also practical and educational.”

Described in an ancient text as “a cure for every disease except death,” black seed oil, also called black cumin oil, has a long history of many uses. The seeds are a traditional Middle Eastern spice used in pastries, dairy products, salads, and other foods. And for thousands of years, the oil has been applied topically and taken internally for virtually any ailment, from bruises, bad hair, colds, and snake bites to headaches, indigestion, and a variety of skin conditions, including leprosy. (Never ingest an oil intended only for external use.) She cautions that black seed oil can turn rancid and should be stored in a cool place, in a dark-colored bottle. The usual dose is 1 Tbs. daily. Both the oil and seed extracts are also available in pills. Black seed oil is also called black cumin oil, or by its Latin name, Nigella sativa. The chief active ingredient in the oil is thymoquinone, a substance that has demonstrated anticancer effects in lab and animal studies. Some oils are formulated to have a higher percentage of thymoquinone, and specify so on the label.

The average person takes 10,000 steps per day, and most of us will experience foot pain at some time during our lives, especially women. Women have wider hips than knees, which puts stress on the inner (medial) knee and tends to cause pronation (rolling the foot inward). Women are also more likely to wear heels,

which cause the Achilles tendon to tighten and may lead to plantar fasciitis.

Treating Plantar Fascitis If you have heel pain, you may have plantar fasciitis. If pain lasts longer that three weeks you should see your health care provider. That said, a program of deep gentle stretching of the Achilles tendon (stand on the edge of a step and allow one heel at a time to hang over) should resolve pain within a few weeks. If not, consider neuroprolotherapy, a technique similar to acupuncture that can be quite effective for stubborn heel pain. Also try a no-sugar, low-red-meat diet with lots of colorful veggies plus turmeric, ginger, cayenne, and essential fatty acids. Stay hydrated, and take digestive enzymes twice daily on an empty stomach to break down debris of injured tissue. And don’t neglect your feet as part of your daily hygiene. Keep them clean and dry, and moisturize as you would the rest of your skin. Cut your toenails across the top (not in a curved line) to minimize the risk of ingrown toenails.

The Best Shoes & Inserts An easy way to prevent one common cause of foot pain is to shop for shoes in the afternoon, rather than in the

morning, as feet tend to swell slightly during the day. It’s also likely that one of your feet is larger than the other, so buy shoes to fit the larger foot. In general, feet are happier in flat, wide, flexible shoes. This includes hiking and sports shoes. The human body does best when the foot can move in response to the terrain. We are designed to hike in uneven terrain. Stiff-soled boots and arch support are often recommended, but going without this “support” can actually prevent injuries, especially ankle sprains. This isn’t to say that orthotics aren’t helpful. They definitely can be. And supportive socks can reduce swelling and varicosities. Jobst is a good brand for support socks, and I especially like SensiFoot socks to invigorate circulation. My favorite over-the-counter orthotics for high-impact activities are SUPERFeet, available at most outdoor gear stores. Toe spacers and all sorts of soft, wooly pads designed for foot ailments are available at hapad.com. Neuroma pads can ease that pain while you address the underlying problem, which usually stems from shoes that are too narrow, and thus pinch the foot bones together, entrapping a nerve. One of my favorite health habits is to walk every morning in ankle-deep cold water for one minute. Cut back on sugar. Seriously, it’s the fastest, easiest way for a busy family to improve overall health. If you can’t completely eliminate it, cut way back. Drink less juice: one small glass has about 25 grams of sugar (as much as a soda). Instead, serve chilled hibiscus, apple, or blueberry tea with breakfast. And beware of hidden sugars in products such as peanut butter, nondairy milk, ketchup, and others; look for unsweetened versions. If you do buy packaged snacks, look at the sugar content, and stick to those with 10 grams or less per serving. And serve a small portion of a low-sugar dessert (berries with whipped cream, pears and dark chocolate, reduced-sugar ice cream) with meals. It neutralizes the idea that dessert is a reward, and makes the sweet stuff less of a Holy Grail.

Cook slowly. Slow cookers are the fastest way to make a home-cooked meal. While your coffee’s brewing in the morning, fill your Crock-Pot with meat,

beans, or chicken; add broth, sauce, or water, and a handful of spices; turn it on low. When you come home, stir in frozen vegetables, and you’ll have a ready-to-eat meal by the time you set the table. It’s the most skipped meal, and that has health consequences, especially for young ones: kids who skip breakfast have diminished academic performance, a greater risk of being overweight, and a lower fitness level. Keep a bowl of boiled eggs, small containers of fruit, and individual packets of almond butter ready for grab-and-go morning meals. ave you ever noticed your pulse accelerate when you do something as mundane as watching the news? In an automatic response to perceived danger, the body floods with hormones and elevates the heart rate, boosting our energy in preparation for “fight or flight.” These days, some of us find our bodies’ alarm systems going off all the time, which can lead to serious health consequences. “Stress relief isn’t optional anymore, it’s a necessity,” says Cassandra Bodzak, a holistic lifestyle expert, meditation and wellness teacher, and TV personality. “Consider creating a foundational support system for your life. If you don’t have a way to relieve stress, whether it’s national or personal, it’s so easy to crumble.” The following tools can help us create that system. Tool No. 1:

Take 15 Minutes Bodzak suggests taking 15 minutes in the morning to “fill your own cup first.” Her practice is to have some tea, meditate, then go on a walk through her neighborhood. Your own personal routine could include reading a favorite blog or journaling, “but make that walk a thing, even if it’s just 10 minutes,” Bodzak says. “The sunshine does wonders for your health and sanity, and taking that time for yourself first thing in the morning gives you extra bandwidth for the day.” For Bodzak, meditation and mindfulness are like a daily vitamin. She encourages meditating for five minutes a day, even while you’re still in bed. Numerous experiments have shown that the practice reduces anxiety, lowers levels of stress hormones, and improves attention and cognition. If you’re just starting out, there are many good resources, such as the guided tutorial on the UCLA Mindful Awareness Research Center website, marc.ucla.edu. In an article in Real Simple, Diana Winston, director of Mindfulness Education at the UCLA research center,

explains that the simple act of taking a deep breath has been scientifically proven to help curb anxiety and refocus our attention. “That’s important,” she says, “because dwelling on negative emotions only pushes us further into sadness and despair.” She also suggests practicing mindful breathing at least five minutes a day. “Once you get used to it,” she says, “you can use the technique whenever you need it.” Practicing gratitude is also advantageous. “There is some neuroscience around the idea that people can’t have fear and gratitude in their minds at the same time,” Winston says. Try calling a loved one to express appreciation for that person, writing down things you’re thankful for, or just being aware of time spent with your favorite people. Tool No. 2:

Stop Eating StressInducing Foods This is the cardinal component of the body’s ability to deal with stress. A strong, healthy body is less affected by stressors than a weak one. SEPTEMBER 2017

housands of years ago, agriculture started changing civilization. As humans figured out ways to grow crops and domesticate animals, they stopped being hunters and gatherers who continually moved around on a never-ending search for food and shelter, and created communities with distinct cultures. And eventually, we ended up where we are today. While industrial farming on a grand scale has become very efficient, it has

degraded the quality of soil. “As the soil has been mined of its fertility, we’ve seen the loss of vitamins and minerals within foods,” says Ann Adams, PhD, executive director of Holistic Management International, a nonprofit organization that educates farmers in regenerative agriculture. “If we have a truly living, fertile soil, that’s very different than dirt that’s being used to grow food by putting in synthetic fertilizer and herbicides and pesticides,” she adds.

During the past 80 years, tests performed by the United States Department of Agriculture (USDA) show the concentration of essential vitamins and minerals in our food, especially vegetables, has dropped by 5–80 percent, depending upon the nutrient. Depleted soil also makes land more vulnerable to climate changes that destroy crops and threaten our food supply, and increases air pollution. But a regenerative way of farming can reverse these trends.

Nature’s Cycle In healthy soil, there are more living organisms underground than above ground, from microscopic bacteria and fungi to clearly visible worms. “It’s said that a teaspoon of healthy soil contains more microorganisms than all the people on earth,” says Gabe Brown, a North Dakota farmer and regenerative pioneer. And those organisms are essential for nutritious food, resilient farmland, and clean air.

What’s Up with Carbon?

The Breakthrough Grain A new type of grain developed by The Land Institute, a nonprofit research organization that designs alternatives to destructive farming techniques, Kernza can help reverse soil depletion. Traditional grains deplete soil because they are annual plants; seeds must be planted each year and are harvested a few months later, leaving the soil fallow and exposed to erosion, with no food for living organisms. Kernza is a perennial; once planted, it lives for many years, producing an annual grain crop. Kernza has very deep roots, which grow to about 10 feet in a year. “Those roots are there to take up whatever resources are available and they’re forming a network that holds the soil and prevents erosion all year round,” says Lee De Haan, PhD, lead Kernza scientist at the institute. “If our growing of grains undermines the system, eventually it will collapse, as historically civilizations that are dependent upon annual grain crops have collapsed as they deplete their soils,” he says. “So we’re trying to have a system that has natural sustainability like natural ecosystems do, by allowing the plant to be one that lives for many years in one place.” So far, Kernza has been used to make Long Root Ale (hopworksbeer. com), and farmers have started growing it for grain foods. So you may be seeing Kernza soon, in a store near you.

Uniting these seemingly unrelated issues is a gas that often gets negative headlines: carbon dioxide. It makes up 80 percent of the greenhouse gases that trap heat above the earth, but carbon isn’t all bad. Every time we breathe, we inhale oxygen and exhale carbon. Plants do the opposite, taking in carbon and emitting oxygen. Too much carbon, often found in poorly ventilated offices, makes the air

seem stuffy, can make people feel sleepy, and can lead to headaches. But in farming, says Adams, “Carbon is the food of life.” Here’s how nature intended it to work: k Plants take in carbon from the air, convert some of it into energy, and pump out the rest through their roots. k Organisms in the soil feed on the

carbon, supply nutrients to the plants, and enable soil to absorb water efficiently and withstand droughts and other extreme weather. k As long as there is plenty of life below ground, massive amounts of carbon are stored in the soil, instead of escaping into the atmosphere. By killing off life in the soil, herbicides, pesticides, chemical fertilizers, and other farming practices have broken the cycle. Depleted soil floods easily, leads to toxic run-off, can’t withstand drought, produces poor-quality food, and contributes to air pollution. But it can be rescued.

Organic farming protects the land (and us, when we eat organic food) by shunning toxic herbicides, pesticides, and chemical fertilizers. It may improve the quality of soil to different degrees, depending upon the farm, but the basic approach is to do no harm. Soil quality is not among the criteria for organic certification. Regenerative agriculture goes a step further, aiming to literally regenerate the life, fertility, and resilience of the land, and it’s become a hot topic. The most recent survey of American organic farmers by the nonprofit Organic Farming Research Foundation found that soil health was their chief priority in every region of the country. To meet these needs, the organization funds studies to identify the best methods to enhance soil and provides educational guides to help farmers improve crop yields and make their land more resilient in the face of climate shifts.

The Role of Animals Industrial feedlots may be inhumane polluters, but on regenerative farms, healthy animals thrive while playing a vital role in enhancing the land. “When we focus on ‘animals are bad,’ we’re missing the boat,” says Nicole Hahn Niman, author of Defending Beef, a former environmental lawyer, and a vegetarian since her college days. “If you just look at any kind of natural system,” she adds, “there’s a tremendous interrelationship, a very complex kind of tapestry between the plants and animals.”

How to Go Beyond Organic “Make it a journey and begin to learn more about your food,” says Hahn Niman, “without becoming obsessive.” In addition to buying organic and local whenever possible, she suggests: k Ask if food was produced in a way that enhances the soil and keeps it alive. k Seek out pasture-raised hens, as well as grass-fed beef. k Get more connected with food by growing some of your own, maybe starting with herbs on the kitchen windowsill. k Grow food in your own garden, or join a community garden.

grew up in Finland on a farm that has been in my family for at least 13 generations. Much of my youth was spent outdoors, learning from and living off the land. These days, when I tell people—strangers, friends, family members, possible love interests— that I am passionate about fungi, the reactions I get are anything but dull. They’re confused, surprised, skeptical, intrigued. Some are even disgusted— I can almost see the thoughts emerge from their heads like a cartoon bubble: “Mushrooms must be big in Finland.” “Just another hipster forager.” “He must be a chef! I’ll ask him about morels!” These are all valid reactions. People hear the word “mushroom” and often have surprisingly specific ideas of what they think the larger conversation must be about. We’ve all heard cautionary tales about the poisonous potential of mushrooms, and we’ve seen elation spread over the faces of world-famous chefs as they extol certain varietals of fungi in an almost evangelical manner. related to bone broth, but I know virtually nothing about it. What is collagen, and why are people taking it?

Collagen is the most abundant protein in our bodies. In fact, it accounts for one-third of the total protein in our bodies, and 70 percent of the protein in our skin. It provides the structure in connective tissue and is found in our bones, tendons, ligaments, gut, hair, and nails. There are many types of collagen, but 90 percent of the collagen in the body are types 1, 2, and 3. Collagen is made from the protein we eat. Protein helps rebuild damaged joint tissues and produce healthy cartilage, which is another type of collagen. But while our bodies make collagen, this production decreases as we age. Environmental factors such as pollution, and lifestyle factors such as poor nutrition, can also diminish collagen production. Our ancestors utilized whole-animal nutrition, which naturally provided an abundant amount of collagen. Bone broths, good sources of collagen, are staples in the traditional diets of most every culture. This protein also made its way into early diets through slowcooked shanks, necks, feet, oxtails, and ribs, as well as in whole-fish soups and stews. Few people prepare and eat these

foods today, so virtually none of us are getting much collagen in our diets. And that’s not good, because this multitasking protein performs numerous key functions in the body.

Collagen Roles and Benefits Collagen is critical for smooth, healthy skin, and research suggests that supplementation might counteract some signs of aging. One double-blind, placebocontrolled study found that collagen supplements used daily among women ages 35–55 for eight weeks significantly improved skin elasticity. In another double-blind study, women who took a collagen supplement daily experienced a 20 percent reduction in wrinkle depth around their eyes after eight weeks. Some people report other benefits from collagen supplementation, such as healthier hair and nails, improved wound healing, a decrease in cellulite, and even speedier recovery from injury. Mark Sisson, Paleo diet expert at Mark’s Daily Apple blog, wrote that when he suffered an Achilles tendon injury, he experienced dramatic healing after he began supplementing with collagen.

Many people also report that their joints become less achy and stiff when they supplement with collagen. Studies have shown that supplemental collagen provides improvement in some measures of pain and function in people with osteoarthritis or other arthritic conditions. Collagen might also help with postexercise muscle recovery. A study by the Department of Nutrition and Sports Nutrition for Athletics at Penn State University found that when student athletes supplemented with collagen over the course of 24 weeks, the majority showed a significant improvement in joint comfort, along with a decrease in factors that negatively impacted athletic performance.

Ways to Get More Collagen You can get collagen from foods such as gelatin used in recipes (yes, this includes Jell-O), but the best-known food source is bone broth (sometimes called stock), long revered as a healing food. Bone broth is easily digestible, and it may help strengthen the immune system and reduce inflammation and symptoms during illness.

asktheNUTRITIONIST Supplements There are many different types and forms of collagen supplements available. Consider a collagen powder, which is probably the easiest to use. And look for hydrolyzed collagen, also called collagen hydrolysate or collagen peptides. In this form, the protein has been broken down into smaller peptides, which are easier to digest and more absorbable. Also look for a brand that is nonGMO; free of common allergens, fillers, binders, and sweeteners; and derived from sustainable animal sources. Vital Proteins, for example, makes collagen peptides sourced from grass-fed, pasture-raised bovine hides from Brazil, and Marine Collagen is sourced from wild-caught, non-GMO red snapper. Give Your Thyroid Some TLC Improve thyroid function by eating more of these seven foods ///BY LISA TURNER Is your thyroid gland making you fat, sad, and tired? It’s possible. An estimated 10 million to 25 million people suffer from underactive thyroid—a condition called hypothyroidism. And some studies show even mild thyroid impairment can result in cognitive impairment. The thyroid is a small, butterfly-shaped gland at the base of the neck; its job is to make hormones that regulate energy, metabolism, mood, heart rate, and other important functions. But when it’s out of whack, symptoms can include weight gain, fatigue, dry skin, sluggish thinking, and even depression. If you suspect your thyroid’s not functioning properly, check with your health care provider. And support your thyroid—and overall health—with these seven foods.

Seaweed. The thyroid requires iodine, a trace mineral, to synthesize sufficient amounts of thyroid hormone, and studies show that even mild iodine deficiencies can lead to thyroid problems. Other than iodized salt, the richest source of natural iodine is seaweed, with kelp, kombu, and wakame having the highest amounts. Try this: Soak wakame seaweed in hot water for 20 minutes, then drain and combine with rice vinegar, sesame oil, grated ginger, honey, or agave, and thinly sliced scallions for an easy seaweed salad. Brush sheets of nori with olive oil; sprinkle with a mix of brown sugar, salt, smoked paprika, and cayenne; and pan fry for 15 seconds. After allowing this to cool, cut into triangles. Soak hijiki seaweed in hot water for 10 minutes; drain and toss with a mixture of minced red onion, shredded carrots, cooked quinoa, and green peas; drizzle with a dressing of white miso, black sesame seeds, sesame oil, and garlic.

Brazil nuts. The thyroid has the highest selenium content of any organ, and studies suggest that selenium deficiencies may be a primary

cause of thyroid disorders. Brazil nuts are an especially rich food source of selenium; other sources include tuna, sardines, beef, turkey, and chicken. Try this: Combine Brazil nuts, olive oil, garlic, and a handful of arugula and basil in a food processor, and process into a savory pesto. Soak Brazil nuts overnight in water, then drain and purée with fresh water, a couple of dates, and a dash of vanilla for a delicious milk alternative. For a rich, dairy-free soup, cut sweet potatoes and onions into chunks and simmer in stock with a sprig of rosemary until soft; remove and discard rosemary; add Brazil nuts and purée until creamy and smooth.

Apples. Like pears, plums, and citrus fruits, apples are rich in pectins, a gelatinous fiber that helps clear the body of heavy metals, especially mercury, which has been associated with lower levels of thyroid hormone in those people with higher exposure. Try this: Cut apples crosswise (don’t peel them—the skin is the richest source of pectin!), dredge in brown sugar, then pan-fry in coconut oil until tender; top with shredded basil and crumbled blue cheese. Spiralize a whole apple with skin, lightly steam in apple juice until tender, and serve with yogurt, hemp seeds, and

blueberries as a breakfast noodle bowl. Simmer chopped apples, parsnips, shallots, and sprigs of thyme in broth until tender; remove thyme sprigs and purée until smooth; top with additional thyme and a dollop of crème fraîche.

Pumpkin seeds. Zinc is critical to thyroid health and is required for the synthesis of thyroid hormones. In fact, deficiencies of this mineral can lead to hypothyroidism. (Additionally, thyroid hormones are essential for zinc absorption, so hypothyroidism can lead to zinc deficiency.) Pumpkin seeds are a rich source of zinc; other good sources include oysters, crab, lobster, legumes, nuts, and sunflower seeds. Try this: Purée raw pumpkin seeds with avocado chunks, cilantro, and a squeeze of lime for a creamy twist on guacamole. Combine pumpkin seeds, canned black beans, shredded carrots, and instant oats in a food processor; pulse until finely chopped and form into burgers; fry until crispy on the outside and cooked through. Or toss pumpkin seeds with melted butter or coconut oil, honey, cinnamon, and cardamom, and toast in the oven at 300°F until browned.

Yogurt is rich in vitamin D, a key hormone-like substance that’s involved in immune system regulation. Vitamin D deficiencies are associated with increased risk of Hashimoto's disease, an autoimmune condition that’s the most common cause of hypothyroidism. Other good sources of D include fortified orange juice, dairy-free milks, sardines, and sunshine.

Rinse rice in colander until water runs clear, not milky. Combine rice with 1½ cups water in medium saucepan. Bring to a boil, reduce heat, cover, and simmer 20 minutes, until rice is tender and water is absorbed. Remove from heat, and let cool.

While rice is cooling, combine shallots, garlic, sweet potatoes, and stock. Bring to a boil, reduce heat, and simmer 15 minutes, until sweet potatoes are soft. Stir in coconut milk and red curry paste, and cook 2 minutes longer. Transfer to blender or food processor, and purée until very smooth. Return to pan to keep warm.

While soup is cooking, stir nori or other seaweed into rice. Form rice into 1-inch balls and flatten slightly. Heat sesame oil in large, heavy skillet. Fry croutons 4–5 minutes per side, until golden.

To serve, divide soup among individual serving bowls. Top each with croutons, and serve immediately.

Try this: Make a lassi, a traditional Indian beverage: purée yogurt, frozen mango chunks, and lime juice, then pour into glasses and garnish with slices of lime. Purée yogurt with blackberries, honey, and grated ginger; stir in vanilla yogurt to make swirls and then spoon into Popsicle molds and freeze. Dump a container of yogurt into a cheeseclothlined strainer and refrigerate overnight; stir in your favorite herbs and seasonings, and use as a substitute for sour cream.

Chickpeas.

Like other beans and legumes, chickpeas are high in fiber, which can help prevent or reduce constipation—a common complaint among people with thyroid disorders.

Bonus: chickpeas are also high in zinc, which is critical for thyroid function. Try this: Toss cooked chickpeas with olive oil, coarse salt, and minced rosemary; spread on a baking sheet and roast at 400°F until crispy; let cool for a crunchy, nut-like snack. For a vegan tagine, cook chickpeas with sweet potatoes, onions, tomatoes, garlic, cinnamon, cumin, and broth; stir in chopped dried figs and slivered almonds; top with parsley. Or toss chickpeas, Brussels sprouts, and cauliflower florets with olive oil, and roast at 400°F till tender.

Sardines. Like

Brazil nuts, sardines are high in selenium. Plus, sardines are rich in omega-3 fatty acids, which help

lower inflammation and enhance immunity, reducing the risk of Hashimoto’s. Other good sources of omega-3s include salmon, walnuts, and flax seeds. Try this: Arrange sardines in a glass casserole dish and drizzle with olive oil and lemon juice; broil till hot and then shower with parsley before serving. Mash boneless, skinless sardines with olive oil, chopped olives, capers, coarse black pepper, and a pinch of cayenne for an easy, spreadable fish dip. Simmer boneless, skinless sardines in tomato sauce with minced rosemary leaves and crushed red pepper flakes; serve over cooked penne pasta with grated Asiago cheese. Lemon

The poor underappreciated lemon. Like comedian Rodney Dangerfield, it “just don’t get no respect.” Usually relegated to the position of garnish or zest, it rarely gets the attention it deserves as a genuinely healthy food on its own. Maybe it’s time that it did. Singing teachers have long known about the anecdotal benefits of lemon. When I was working in musical theater, there wasn’t a singer I knew whose teacher hadn’t prescribed hot water and lemon, first thing in the morning, for its soothing effect on vocal cords. Nutritionists in the naturopathic tradition—like my friend Ann Louise Gittleman, PhD—recommend daily intake of lemon juice to stimulate digestive juices. Like other citrus fruits, lemons are a great source of vitamin C, a powerful antioxidant and anti-inflammatory agent. Lemons also contain two other compounds—a group of chemicals called limonoids, and specifically a compound called limonene— both of which have documented anticancer properties.

TANGY TOMATO TROUT Serves 4

Pan roasting gives this moist, flaky fish a nice crispy skin. Ask your fishmonger to butterfly the fillets for easier prep. 2 Tbs. neutral high-heat oil, such as rice bran or pastured butter 8 boneless, 4 oz. rainbow trout fillets, or 4 whole 6 oz. rainbow trout, deboned and butterflied wide open Salt and cracked black pepper, to taste 2 Tbs. olive oil 1 large clove garlic, crushed and thinly sliced 1 large lemon, seeded, peel and pith cut away, and roughly chopped 2 pints heirloom cherry tomatoes ½ cup whole pitted Kalamata or green olives, drained 2 Tbs. capers ½ lemon, for squeezing ¼ cup chopped parsley, optional for garnish

1. Heat rice bran or butter oil in large skillet, sauté pan, or Dutch oven over medium-high heat.

2. Evenly season trout fillets with salt and pepper. Add fillets in single layer to skillet, skin side up, and allow to cook, undisturbed, about 3 minutes. Gently flip fish, and sear about 2 minutes, or until just cooked through. (Try to flip the fish only once to prevent breakage.)

3. While fish is cooking, heat olive oil in large sauté pan at just below medium-high heat. Add garlic, lemon, and tomatoes, and sauté 3–4 minutes, until tomatoes start to soften. Add olives and capers, and sauté 2 minutes more (bursting some tomatoes), until everything is hot and tender.

4. Add tomato mixture to serving plates, and arrange fillets on top. Squeeze lemon over all, and garnish with parsley, if using.

NOTES FROM THE CLEAN FOOD COACH Rainbow trout made the 2010 Seafood Watch “Best of the Best” list for low levels of mercury and PCBs. Nutritionally, rainbow trout is superior to tilapia because its ratio of omega-6 to omega-3 fatty acids is 1:2 (like salmon), whereas tilapia is 2:1. Otherwise, the two types of fish are very similar—both mild, quick-cooking fillets.

When Chef Jeannette sent me this recipe, the first thing I did was Google rainbow trout. That’s because every time you look, it seems there’s another hidden danger or environmental problem with fish. Farmed salmon is, according to the Environmental Working Group, the main source of polychlorinated biphenyls (PCBs) in the U.S. food supply. Swordfish can have large amounts of mercury. And do we really trust the farm-raised tilapia from China? On the other hand, rainbow trout seems to be on the “good” side of everyone’s “eat this, not that” list. In 2014, Women’s Health magazine listed it under “fish you should eat,” and as recently as May of this year, livestrong.com listed it as one of the nine safest seafood options. (Mussels and Pacific sardines also made the list.) Rainbow trout has more than 100 percent of the daily requirement for vitamin B12, as well as more potassium than bananas. It’s also got a nice dollop of niacin, an important B vitamin. And the rest of the ingredients in this dish are superstar supporting players with a wealth of health benefits: garlic, the original medicinal food; tomatoes, with their healthy dose of the antioxidant lycopene; olives, with their legendary olive polyphenols (the reason extra virgin olive oil is so good for you); and the underappreciated lemon, the subject of this month’s “featured ingredient” section.
