City favorite Pasha Du Valentine, aka The Countess of Brighton and Hackney, also shone out of the nation’s small screens, appearing in five rollicking nights of a very memorable series of Channel 4’s Come Dine With Me alongside other Sussex standouts. However, on a very sour note, one contestant’s social numbers have been threatening the Countess via Twitter in a very libelous and ageist way. ‘Authorities’ have been notified. An individual claiming to represent this contestant accosted me earlier in the year. It was all very gangster Chicago circa 1920’s. The act itself, quickly quashed, served as a clear indicator that we were in for an amazing 5-night run of Come Dine With Me. I’m sure that this hysterical episode is destined for heavy repeats so if you missed it the first time around you’ll have many opportunities to catch it again. Meanwhile, for October Ms. Du Valentine and her ever-growing posse are hosting a Punk Mini Festival all-dayer. Yet again we can show our adept, artistic natures by replicating another place and time as we put an anarchic scowl on the face of Brighton. I’ve got a T-shirt full of holes - no doubt somewhere that will do me proud.

Me Me and you! Please tell us about your background: I started out doing a BTEC in Fashion at Northbook college in Worthing and then went on to study Fashion in London. After graduating I worked for the British fashion council and for Next as a press officer but after 10 years in fashion I needed to get away and went travelling. In 2003 I returned from Thailand and settled back at home and rather than going back into the industry I found myself selling property in Hove for 4 years. After baby number 2 arrived the recession had hit and my office had closed, so after excepting redundancy it gave me the drive to get back into a career in fashion. After a year selling a Scandanvian clothing label to boutiques in the south I kept dreaming of having my own shop and now the dream has come a reality and it’s everything I hoped it would be. Please describe your business to our readers: I knew from living and working in Hove that there was a gap in the market for a womenswear boutique selling established labels at affordable prices. We’re all so busy these days that we don’t always have the luxury of time to get into Brighton....Brighton for me is a good days shopping not a pop in and out experience. I’ve tried to create a relaxed shopping experience where we can assist you as much or as little as you want. How did you become involved in the fashion industry? My mother inspired me to make my own clothes when I was a teenager and then it grew from there. How would you describe the style of clothes that you sell in Me Me? Me Me is great for those who want to have something a little different that is good quality and competitively priced. I think many

With the other labels I wanted to have a good selection for people, Fever has a vintage feel, Eucalyptus is quirky, Part Two and Sandwich are luxurious and Great Plains is so easy, so it’s all about finding a balance. lot of effort and work had gone into planning the live outside broadcast at this year’s Royal Airforces Association Shoreham Airshow by the BBC South Today team. In total, a production crew of eighteen arrived at the airport on a rather dull Friday morning to set up their equipment and shoot some footage before going live on air that evening with the full South Today programme. Some display pilots had bought their aircraft in early, and presenter Sally Taylor arrived on time along with Alexis Green the weather presenter who was going to do the forecast from the top of the Art Deco terminal building. Producer Richard Spalding had been to the airport several times to plan this important regional programme, and judging by the work involved it was going to be a real asset to all at Shoreham on this the twenty first airshow. Between takes, I managed to sit and chat to Sally about her long career with BBC South, as its anchor presenter of the ever popular South Today programme. Educated at Abbey School in Reading, Sally joined BBC South twenty three years ago and has reported on virtually every major story in the region over that time. It was in 2005 that she was awarded the MBE for services to regional broadcasting, and in 2007 she followed a lifelong ambition to travel to Antarctica on the Royal Navy Ice Patrol Vessel, HMS Endurance, broadcasting live from the top of icebergs, as well as on route during the 21,000 mile journey via the Falkland Islands. It remains to this day one of the highlights of regional television production. This was Sally’s first visit to Shoreham Airport, which did surprise me! However, I must say she was very impressed with the building and its history, and with some of the popular television series that have been filmed there. “There are many places I still have not been to in Sussex. I tend to go where there is a news story but as the main anchor for the programme, most of my work is now studio-based. It has its advantages, but the bosses know I like outside broadcasts so they give me the opportunity to do programmes like today which is so much fun.” Sally is usually associated with sailing which has been one of her major pastimes and, of course, presenting the many programmes from Cowes over the years.

Sally Taylor has been a recognised face of the south for many years as the main presenter on South Today. John Periam caught up with her at this year's Shoreham Airshow “Sadly I don’t sail now; not since my breast cancer operation some twelve years ago. It requires a lot of upper body strength and at that time I wasn’t confident enough. Life is life and other things took over – I did miss it but time moves on,” she said with a positive smile. Television at the moment is going through a lot of changes, some good and some bad. I asked Sally her views on how she sees it now? “Look how technology affects our lives and it is changing all the time. Television is very exciting and there are so many new opportunities, we are really only scratching the surface. The day is just around the corner when all you will do is touch the screen and see what you want. When I first started, the original autocue was like a toilet roll but now it is computerised and our reporters carry their own video cameras with them and can edit and then get it played out at source. It is only right that we try to keep up with that change, for our audiences!” Many people also feel these days that there are too many younger presenters that lack the charisma of the experienced presenter. “Now that is an awkward question to answer – I love doing it and feel very honoured to be in people’s living rooms – I do not take that for granted. We all started out as young presenters and if we are lucky we are all going to get old doing it! My view is if one is good at the job it should not matter what age you are and the producers should look at what is viable, programmewise, and place a suitable presenter there to do what is best. There will always be people who will want my job and that is the way of the world.” Sally interviews pilot Air Vice Marshall Cliff Spinx

What about Fred Dinenage on Meridian TV? “Well what can I say? We are good friends and he is a fantastic man and he got his MBE this year. We are both so lucky in what we do and this has resulted in the South of England having two experienced presenters at the helm of the two regional programmes. It is a friendly rivalry, but we go back a long way and do a lot of things together as a result.” Sally’s work can be stressful at times and she has always tried to live a long way from the studio, so she can have a quiet drive home (probably with classical music on or listening to the Archers), which calms her down. “By the time I am home I am a human being again rather than this ferocious animal that left the studio,” she said jokingly. “I try to relax and I support my partner in his wine business at a chateau in France. We have always enjoyed good food and wine and this has now become a real passion for us both and we love sharing it with other people. Living in the country has other advantages too. I love walking, so people are used to seeing me high on the hills trying to keep up with my dog, a German Pointer …it’s one way to keep fit! ” Since her cancer operation Sally has also become involved in several charities and is patron of ‘Simon Says’, a charity that helps children who are bereaved. She also works closely with Business Link promoting local business across the South. “I love to vent my anger at things I don’t think are right and I am able to do this in my weekly column in the Southern Daily Echo which I call ‘my rant of the week’. I also have my Saturday radio programme on BBC Radio Solent called Sally on Saturday. So it’s 6 days a week of work I love. Sunday is my day off to enjoy!” As we parted and Sally was making her way to the make-up room (the old board room in the terminal building), I had time to reflect on our meeting. She came across as a very caring and understanding person who was not full of self importance. She had an amusing side to her nature and was very positive in her views and opinions. In seeing her later in front of the cameras it proved to me how lucky we are in the South to have such a well respected professional presenter at the helm of South Today. Long may regional television survive!

PLAYING THE FIELD With a new season having just started, the original ‘Fantasy Football boys’, comedians Frank Skinner and David Baddiel, talk football, lucky pants and Louie Spence to Danny Masters

Which comedians and comedy shows do you watch? FS: I really liked Psychoville and Miranda and The Inbetweeners. I know it’s unfashionable but I’m also a big fan of Michael McIntyre. DB: I really like McIntyre too. I particularly like him in the face of the idiotic comedy community’s antipathy towards him. He is just a brilliant generic observational comedian who is right up there with Jerry Seinfeld. What websites do you use most – and try and keep this clean. FS: I’ve stopped doing that. DB: If you checked my computer’s history, it wouldn’t make good reading. I look at the Guardian website more than anything else! It’s still the best. But for some reason, my home page is the BBC website. I can never seem to bring myself to change it. FS: Every day I look at Google news, the comedy site Chortle, Football 365 and although I never read the paper, I always look at the Daily Mail’s website. It is very good. There’s always a picture of Kelly Brook shopping in a pair of hotpants. And there is the occasional bit of news as well. As Chelsea and West Brom fans respectively, will you sit together when the two teams play each other this season? FS: I’ll go but David’s a season ticket holder so I won’t be sat with him. I wouldn’t want to sit with a Chelsea fan anyway. DB: We sat together once when WBA played Chelsea and it lead to him hating me – because Chelsea beat them 3-0. So it’s probably a good idea that we’re apart.

FS: I remember that occasion. We were sat amongst the Chelsea fans and the bloke behind me kept saying, “Come on Chelsea, we can beat this rubbish”. I thought that’s why there’s segregation – it’s not about violence it’s just you don’t want to hear that said about your own team. Do you have any superstitions when watching a game? DB: Because I’m a fundamentalist atheist, I’d like to think I’m a man without superstition and yet with football it creeps back in. At the World Cup in Japan, I had a pair of lucky pants given to me by my daughter. I wore them when England won a couple of games but then I lost them, so I went as far to replicate them by drawing two St George’s crosses on the arse of a pair of pants. I did it because I knew I’d feel bad if we lost and I wasn’t wearing them. FS: I used all mine up at the albion 30 years ago. You can’t have lucky pants because they don’t last that long. Somebody bought me a football with a smiley face on one side and a crying side on the other so when I get back from a game I always turn it according to the result – if we draw I have them both in profile. It’s more obsessive compulsive than superstition. It’s superstition after the fact. Frank’s mate Adrian Chiles is now ITV’s main football presenter. How do you think he’s doing? FS: The biggest compliment I can give him is that he genuinely looks like he’s been doing it forever. And I like the fact they’ve put him in a suit and tie which instills in him a bit of discipline. It’s good that they’ve smartened

He’s a good friend of mine so he’ll know I’m saying this with great affection. DB: I’m worried that the man he replaced, Steve Rider, is currently drinking himself to death on some desolate waste ground. Adrian Chiles goes to ITV and literally overnight Steve Rider’s entire career comes to an end. Apart from your own ‘Three Lions’, what’s your favourite football song? FS: The truth is I don’t like football songs. The only football song I like is The Fall’s Theme from Sparta FC. James Corden’s World Cup song seemed to be a man talking followed by a bit of music I’d heard somewhere before. DB: I quite enjoyed the party spirit of Corden’s song but I recently listened to the Scotland ’98 anthem, Del Amitri’s Don’t Come Home Too Soon’ and that’s actually a rather beautifully wistful song. I read that it was vaguely inspired by Three Lions. They used the same bittersweet sense of hope over experience sense of it but they took it far too far. In that obviously we’re going to go out, just make it slightly later than it normally is. Aside from football, what else do you watch on TV? DB: I hardly ever watch TV although I do watch the X Factor and The Simpsons with the kids. The Simpsons is a godsend because the kids and I can both watch it and we’ll both be enjoying it. Whereas when I’m watching football with my son, he’ll chant ‘Ingerland’ for 5 minutes and then say “I’m bored, can we turn over and watch Bob the Builder?” FS: I have no middle ground. I like very intellectual programmes like Modern Masters and I do watch Eggheads but I get very annoyed, because I always get more questions right than the guests, so I think they can hardly be eggheads. And at the other end of the spectrum I watch Britain’s Got

Talent, The X Factor and I watched all 12 episodes of Pineapple Dance Studio. DB: Frank advised me to watch Pineapple Dance Studio but I watched one episode and found it all too camp. But then Frank is camper than me.

FS: I actually had it on series record on Sky Plus. I even watched the additional unseen one at the end – the bloopers edition. Having done all that I do a radio show on Absolute and we had Louie Spence lined up to come on and he blew us out at the last minute. So having invested all this affection for him in the first series, I don’t think I’m going to watch the second series. I’ve been put off by being snubbed by him. Finally, when you were growing up, were you Grandstand or World of Sport fans? DB: Mostly Grandstand because it always seemed to be more authoritative. FS: I absolutely loved wrestling so it was always World of Sport. I was at a party once with Greg Dyke and I couldn’t bring myself to speak to him because he was the man who took wrestling off TV. I still felt the resentment all those years later.

I read with interest the letter from your reader about the removal of the beautiful lamps from Hove seafront. I am appalled that these historic items can just be discarded, with no consideration of the fact that they are a part of the atmosphere and history of Hove. I believe that certain items like these, which have great historical value and interest, should be afforded some sort of protection, like old and historic buildings have the listing system. This way, it would make it more difficult to just throw away valuable artefacts. In this age when design is often minimalistic and brutal, it is so refreshing to see beautiful articles, made in an age when aeshetics were as important as

ctober heralds the start of Autumn and the start of the big garden tidy up. It also sees the end of the sowing season, although you should still be able to harvest root vegetables planted earlier in the year – carrots, swedes, first parsnips and first celeriac, plus pumpkins and turnips - both of which have a role to play in this month’s big event … Halloween. Halloween was originally a pagan holiday honouring the dead and can be traced back to the Druids. It’s held on October 31st which is the last day of the year in the Celtic calendar and was referred to as All Hallows Eve – the evening before All Saints Day that was created by the Church to convert pagans. In traditional Celtic Halloween festivals large turnips were hollowed out, carved with faces and placed in windows to ward off evil spirits. The carving of pumpkins for Halloween comes from North America where pumpkins are readily available and much larger, making them easier to carve.

“If you are dreaming of a display of colour for the spring then now is the time to plant your bulbs and tulips are always a seasonal favourite” Aside from Halloween preparations, October is a particularly good time of year for planting larger plants, trees, shrubs and conifers. In fact conifers come in a vast range of colours and many change shade during the year. Careful selection can give a great splash of colour in Autumn and Winter when most other plants are dormant. Size it determined by variety and not by size at the planting stage. Most plants you buy in your local nursery or garden centre will have a 10-year height guide as part of their description. Growth rates also vary with some growing quickly straight away and needing to be kept in check, others are very slow for a time and grow very rapidly, and some barely grown more that 2cm a year. The colour, structure and style of conifers make them suitable for all types of garden – they need little attention and will provide all-year-round display. If you are dreaming of a display of colour for the spring then now is the time to plant your bulbs and tulips are always a seasonal favourite. They require a sunny spot and do very well in containers or borders. However, before planting into your border give it a bit of tender loving care. Many of the flowering plants can be cut back down virtually to ground level and you should pick through the border with a fork taking out any weeds. A good hoeing will help aerate the soil and a general tidy up with a little bit of cosmetic pruning just to dead head is also a good idea. You should also prune back rambling and climbing roses at this time of year. A good pair of secateurs is vital – they don’t have to be costly but they need to be sturdy and strong and ones that fit into the palm of your hand. This season’s retro beehive revival The array of hair trends this decade really does showcase the popularity past eras have on creating new moods as we progress through the seasons. This Autumn’s inspiration is no different with the likes of Karl Lagerfeld, Giles and Prada putting the ‘beehive’ firmly back on the agenda, nodding back to the elegant yet vivacious look of the 60s. This time around, although quite structured and polished in style, it has a relaxed ‘effortlessly undone’ feel which can be more easily replicated and incorporated into everyday looks. The models at Rochas and Nina Ricci show that modern twists can be added to retro silhouettes making them more versatile. The key to making this style look great firstly lies in the condition of the hair, so use a moisture surge mask like Shu Uemura Prime Plenish Treatment (£37.50) to sooth the scalp and strengthen weak and limp hair. Is there anything else I can do to emulate this style or are there are any other alternatives? Absolutely! SEEING DOUBLE Many be-spectacled women find the art of applying makeup for glasses a real challenge. But with a little thought and a few tweaks in your technique, your eyes can be just as beautiful behind the lenses. Here are a few helpful tips to consider without the need to pile on the makeup, for it to show up behind your glasses. For most faces, larger glasses are more flattering than small lens shapes, as they open the face and optically lift the eye area. Neutral frames give you the freedom to experiment with the full rainbow of colours, while with coloured frames, you’ll want to keep the colour to your glasses, and lightly define eyes with liner and neutral creams and taupes. If you have a bold colour frame then a matching lipstick can be very eyecatching, or go with something like a nude glossy lip colour to highlight your frames. If you choose black frames, stay away from a strong smokey eye, as this will look too busy. Use a lighter shade of eyeliner, such as a soft grey, chocolate or charcoal instead of black. Fittings on rimless glasses can make the bridge of your nose more noticeable. You can minimise this effect by drawing attention away from the centre and out towards the sides by keeping your eye shadow pale in the corners of your eyes and darken gently as you go out to the edge. Strong vision eyeglass wearers will have eyes that appear larger. To balance out the size of your eyes, apply a deep eyeliner to the inside rim, or choose a dark brown shade to powder and smudge for the same minimising effect. If you wear negative lens glasses, your eyes will look smaller. Go with a light shade of eyeliner on the inside rim of lashes and add a touch of deeper shadow on the upper lash line and the outer one-third corner of your bottom lash line to create the illusion of bigger eyes. Add a touch of ivory shimmer to the inner corners as this will reflect light and magnify your eyes.

I

nterdental plaque control is essential to every patient’s self-care program. Tooth brushing alone cannot remove plaque between tooth surfaces and adjacent gingiva. It is also known that only a minority of patients are compliant flossers. Interdental brushes, however, can be used to overcome this problem. There are several types on the market, and TePe brushes are the most used brand. The golden rule when using TePe Interdental Brushes is - don’t push. If you notice resistance on the brush when attempting to use the brush in the interdental space, STOP and draw the brush back and then try another angle. The resistance you are feeling may not be that the brush is too big (especially if your Hygienist has recommended a size to you) it may be that you are encountering the sides of the tooth rather than gliding through the space. Keep trying another angle and if the brush still does not fit try a smaller size. Your brush should be a snug fit so that it touches each side of the triangular-shaped interdental space. If it feels very tight try a size smaller. TePe have now introduced a pack of brushes that contains one of each size. This might be useful to you if you are having difficulty in using your brushes as it will enable you to find the exact right size for the space that you are having difficulty with. Each interdental gap is unique, and so will almost certainly need several sizes of interdental brush to enable you to do a thorough clean of all spaces. Once through the interdental gap, only move the brush horizontally. Try to feel the brush on the gum between the teeth and keep the brush on the gum, possibly with a little downward pressure if you are trying to improve some inflammation.

Only move the brush back and forth a couple of times. Scrubbing is not necessary and will shorten the life of the brush. If you have moved the brush upwards and it is sticking where the teeth touch each other (called the ‘contact point’), it is a sign that you have not maintained the horizontal approach. Interdental brushes are not like floss they do not go up and down the side of the tooth; they just clean the area of tooth that is adjacent to the gum as it is here that the inflammation of the gum tissue starts. Put a gentle curve on the brush to clean the back teeth. Then only use that brush on the back teeth and use another straight one for the front teeth.

Do not bend the brush back again. Continuous bending may lead to a fracture of the wire which could cause injury. You may notice over time that the brush feels less snug in the space. This is a sign that you have reduced the swelling of the gum that is part of the inflammatory process, reducing the swelling means that the inflammation is improving. The interdental brush has not made the gap in between any larger than it was, but the swelling may have filled the space. Remember the space in between your teeth is inaccessible to any ordinary toothbrush. Even on the largest teeth although it may not be more

than a few millimetres long, once infection has become established in the interdental space it can spread down the side of the tooth until it reaches the tip of the tooth root. It will take the bone level with it which is how loose teeth happen. Gum tissue will always respond to care it is never too late to improve a gum condition unless the tooth has already been lost! While your dentist may be able to give you a functioning replacement ‘tooth’ it is better to prevent loose teeth as treatment cannot replace the lost bone. If you are using a therapeutic gel put it on the gum between the teeth and then use your brush. If you are using the right size brush putting the gel on the brush means that the gel will be removed from the brush before it gets to the deepest part of the interdental space. Toothpaste is unnecessary on an interdental brush. It is universally acknowledged that it is necessary to clean your mouth with a toothbrush every day to maintain health. This is also true of the interdental space. Once or twice a week will not get the results that you would like. Not all Interdental brushes have plastic coated wire. This is particularly important if you have implants as without the plastic covering the wire will scratch the implant. It is important not to scratch the implant as this gives small bacteria an extra place to live. Interdental brushes are more effective than floss if they are the correct fit. BATTLE AGAINST THE MITES Each of us live with millions of dust mites and pollution whether we like it or not. Although usually harmless, as our health expert Sheryl Waters explains, preventing these uninvited guests in the home is easy and can help prevent common allergies

I

t’s that time of the year ; time to put away your sun hat and flip-flops and pull out the winter coat and fuzzy socks. Cups of tea indoors replace sitting out in the sun. Unfortunately, for many people, this switch from outdoors in the sun to the cosy indoors also leads to feeling bunged up and congested. Indoor, wintertime allergies are extremely common, and may be associated with blocked sinuses, asthma, and even eczema. There are many reasons why wintertime brings on the dreaded allergies, and one of the biggies is pollution. During summer, people leave their doors and windows open, so air can flow through their indoor spaces. In the winter however, pollution can become trapped inside. This is not to say that pollution is only a wintertime problem, but the lack of ventilation can make it all the worse. This lack of fresh air in a house also leads to dust mites. Dust mites are mites that live in house dust. It is actually the faeces of dust mites that are the most common trigger for breathing difficulties. Dust mites produce faecal matter approximately 20 times each day and these faeces are light enough to float in the air. This means that this is easily inhaled. Approximately 40,000 dust mites can occupy one speck of dust so it is easy to imagine the amount of dust mite faeces that are inhaled with every indoor breath taken. A warm, humid environment is the perfect habitat for dust mites because dust mites feed on plant materials, moulds, and fungi, all of which are abundant in winter environments. Dust mites also feed on dead human skin, something which is prevalent in every home. If one has allergies or asthmatic health issues, minimizing dust mites in the home is a very important task. Reducing dust mites naturally is an effective option that is relatively simple to accomplish too. Reducing House Dust Mites and Pollution in your home 1. Dust mites make their way into bedding, so make sure that duvets and pillows are regularly washed. Clothes should also be regularly cleaned. Washing in 130oF water will kill all dust mites. Washing in cold water kills approximately 90% of dust mites.

2. Adding several drops of eucalyptus oil to the wash water is effective as well. For those with sensitivities to eucalyptus, lavender or rosemary essential oils are also effective. You can also burn these essential oils around the house in oil burners to keep the air fresh and help reduce mites and pollution. 3. Heat will help minimize dust mites. Examples of effective heat include steam-cleaning carpets, tumble-drying in a dryer, direct sunlight, and electric blankets. Dust mites do not like direct sunlight. Hanging bedding or rugs outside in the sun if possible is effective for removal of dust mites. 4. Because dust mites exist in fabrics, carpets, and upholsteries, it is impor tant to vacuum carpets and upholstery frequently and carefully. Pollution also gets trapped in these materials. If breathing issues are par ticularly severe, removing carpets and installing hardwood flooring may be beneficial. Regular dusting is also impor tant. 5. A spray filled with of one cup of vodka and 20-30 drops of eucalyptus essential oil can be made and used as well. Spray pillows and bedding with this mixture several times per week. This spray can also be used on upholstery and carpets. 6. A quality air purifier is an effective tool for reducing pollution and dust mites. Air purification technology that uses oxidation is effective at purifying the air of dust mites. Oxidation technology air purifiers can be placed throughout a home to be effective. These oxidizers can also penetrate upholstered furniture, carpeting, and bedding to destroy dust mites and their faeces and neutralize pollution. Another amazing way to clear the air of stagnant pollution, as well as dust mites is to get a Himalayan Salt lamp. Himalayan salt lamps work in a similar manner to an air purifier or an ionizer by killing the bacteria and removing dust, allergens, smoke, odours, germs and mould spores. The salt lamp emits negative ions which counter positive ions (pollutants) in the air. The negative ions emitted by the salt crystal lamp bind with the excessive positive ions and the positive and negative ions cancel each other out. They improve air quality by reducing air pollution, airborne dust par ticles, and airborne bacteria and viruses. They are known to reduce symptoms of asthma, allergies, bronchitis, sinusitis, and other respiratory diseases. And, since we are talking about winter time, they are also good for season affective disorder (SAD) and other mood problems as well as stress. And the best par t is that they are incredibly beautiful! So if you are one of those people who suffers from winter time allergies, something that ionizes the air is essential, as well as the number of other things mentioned above that you could do to make your life easier. A new flavour at The Dyke Mo Hunter-Shine and Rishma Patel visit The Dyke Pub and Kitchen in Hove for a gastropub treat

T

he Dyke Pub and Kitchen on Dyke Road, Hove, has recently undergone a renaissance. Its spacious interior offers a welcome haven from the bustle of the busy road outside. My colleague Rishma and I were pleased to come into such a welcoming environment when we visited recently on a wet and windy evening. The old Brighton and Hove pub feel is still prevalent but the whole venue has been refurbished, and brought up to a fine standard, with antique pine, and French Provence grey walls. Entrepreneur owner Martin Webb has many other successful ventures in and around Brighton and Hove, including the Robin Hood and the Connaught Bar and Kitchen. Those of you familiar with The Dyke will know it has a spacious interior. There is a large bar area on the left as you enter, and then another large bar and eating area on the right, where you can order food from the bar, and through the centre there is a lovely area for table service. We chose to sit in a cosy part of this area where we’d be waited on - a sumptuous Chesterfield surrounds the whole of the wall, and makes for a wonderfully comfortable and relaxed area. The menu is just long enough, with plenty to choose from but not so many as to make the choice unnecessarily difficult. I rather liked the design of the menus, with thick wooden covers, making them like tantalizing books! It’s good to see that the mains on the menu include a section of English pub classics,

like Harveys beer battered cod with hand-cut chips and pea puree and Sussex sausage and mash with red onion gravy. Other mains include seared tuna loin with sweet corn and potato muffin and meatball tagliatelle with watercress. There are dishes for veggies, and some of the starters, like warm salad of calf ’s liver with smoked bacon and spinach can be served as a main - the menu is very flexible, and apparently there are changes every day. Ingredients are sourced from as close as possible, with organic chicken and dusk from Gill Wing Farm in Kent, and fish from Brighton and Newhaven Fish Sales, based in Shoreham Harbour. Bread is home baked, chutneys are homemade, and the vegetables come from a Sussex organic cooperative. There is an extensive wine list with wines from all over the world. I opted for roast butternut squash ravloli with basil butter, which can be served as a main. It was truly delicious - I especially liked the basil butter. Rishma chose the wild mushroom and smoked Mozzarella arancini, which is a wonderful treat for the tastebuds, biting through the mushroom to the cheesy centre. My game pie with mash and seasonal greens was from the English pub classics part of the menu and was too delicious for words. The tenderness and flavour of the meat was accentuated and not drowned by the shortcrust pastry, with perfect mash and green vegetables cooked al dente, just as they should be. The dessert menu cried out to us, but we were unable to take advantage of the wonderful treats on offer, including lemon and blackberry jam creme brulee, and plum and almond cake with Chantilly cream. A gentleman sitting nearby to us, however, was enjoying his dessert of apple crumble and amaretto cream. He told us it was fantastic, and also added that the food was always excellent at The Dyke. Outside, at the rear of the pub there are several bench tables in a comfortable and spacious area which is still being developed - by next year, it will be a thriving place to enjoy a summer drink alfresco. The staff all made us feel very welcome, and this is a place that deserves to go from strength to strength. I am sure, as with Martin Webb’s other endeavours, it will. Please give the Dyke Bar and Kitchen a try, you will not be disappointed, and like Rishma and I, you will look forward to your next visit. With excellent service and reasonable prices, I would recommend that when you visit, go hungry to do justice to three courses!

ABSOLUTE RECIPE

Pumpkin paradise Pumpkin is versatile; it can be boiled, baked, steamed, or roasted, and is delicious in savoury and sweet dishes. Although popular in the United States it is becoming established as a staple in Britain, and is now readily available. So lets make more of the lovely pumpkin with this delicious risotto

Pumpkin risotto Serves 8 Prep 15min Cook 40min

INGREDIENTS 700g pumpkin, rindless and cleaned 2.5 litres homemade meat or chicken stock 90g unsalted butter 8 shallots, very finely chopped Sea salt 1tsp sugar 1 large bunch of flat-leaf parsley 600g Italian risotto rice Ground black pepper 150ml double cream 90g grated parmesan METHOD Cut the cleaned and prepared pumpkin into 1cm cubes. Heat the stock to simmering point. Heat the butter and the shallots in a large, heavy saucepan and add 1tsp of salt and the sugar. Cook for 5 min. Chop the parsley, add half of it to the pan, cooking for a further 5 min. Stir frequently.

Add the pumpkin and cook until just tender (about 10 mins). When the pumpkin is tender right through when pricked, stir in the rice and sautĂŠ for 1 or 2 min until the grains are well coated in the butter. Pour over about 450ml of simmering stock and stir thoroughly. Bring the liquid to the boil, turn off the heat and cover the pan tightly. Bring the broth back to simmering point. Add a knob of butter to the rice, which will have absorbed all the broth and be half cooked. Mix two ladles of hot broth into the rice and continue cooking, gradually adding a ladle of broth at a time until the rice is ready. If you finish the broth before the rice is cooked, add boiling water. Season with pepper, and salt if required. Add the cream and half the parmesan. Turn the heat off and leave for a minute for the cheese to melt and the flavours to blend. Sprinkle the remaining parsley, or some rosemary sprigs over the risotto and serve at once, handing around the remaining cheese separately in a bowl.

Sweet spiders!

Add a Halloween twist to cupcakes! Simply bake a batch of standard cupcakes to your usual recipe, and change them into edible spiders! Frost the cupcakes with chocolate icing. This is the body of the spider. Cover the cupcakes with chocolate sprinkles, these will serve as fur or hair for the spiders. Make a small amount of white icing and shape for eyes. Add colouring or chocolate to some of the icing for the inner eyes. Take some scissors and cut 4-inch pieces off of some flat licoricestrips, these will serve as the legs. Hold all of the legs together to form a bunch and then bend them in half forming a crease. Take each end and punch them into the cupcake.

NEW British-made confectionery company is launching a nationwide search this year (until November, 2010) to find Britain’s best butler and it is looking for nominations from Sussex. The chocolate biscuit and wafer bar firm, also called British Butler, wants to celebrate one of the nation’s oldest traditions – butlering, and an entrant from the county could go forward as a regional finalist. Director, Peter Howarth explained: “British Butler products are a new generation of chocolate bars that maintain traditional British values. “Butlers have been around for eons and

they are the archetypal symbol of bygone Britain, but they are also coming back into fashion with lots of organisations offering butler services. We’re looking for nominations from Sussex and will pick a regional winner in November, who will then go forward to the national competition.” People are invited to nominate butlers for the title of Best British Butler via www.BritishButler.co.uk until November 13th. ASHES HERO AND MOTORING EXPERT GO HEAD TO HEAD IN BRIGHTON DRIVING CHALLENGE

ricketing legend Andrew ‘Freddie’ Flintoff scored yet another victory in Brighton recently when he beat motoring expert and TV presenter, Quentin Willson, in a fuel-efficient driving challenge that saw the pair compete to go as far as possible on a litre of new Shell FuelSave Regular Unleaded. The contest, which began at the Shell Service Station in Hickstead, and finished at Brighton Pier, saw Quentin try to beat Shell FuelSave ambassador Freddie Flintoff’s score of 13 miles to a single litre of fuel. The motoring aficionado notched up an impressive 11.7 miles on a single litre, just narrowly missing Freddie’s 13-mile score. The final leg in Brighton also marked the culmination of the Shell FuelSave Britain Challenge, in which Quentin was tasked to drive from Inverness to Brighton – 671 miles - in just 1 tank (75 litres) of fuel. Freddie revealed the results of the Challenge to a large crowd of cheering spectators, announcing that Quentin had completed his epic journey in a phenomenal 50.17 litres – just over a tank of Shell FuelSave Regular Unleaded. Along the way, he was joined by five ordinary 54

motorists from across the UK, each of whom completed a litre-leg of his epic journey using fuel-efficient driving tips to squeeze as many miles as possible out of every litre of fuel. Celebrating his victory, Quentin said: “It’s been an extraordinary journey and I’m

brimming with pride that I’ve managed to complete the challenge in just over a tank of fuel. This shows that with the right fuel choice and a bit of fancy footwork on the pedals you can get the most out of your tank. Saving fuel and money really is that easy, although that Freddie Flintoff must weigh a ton!’”

Remember A Charity Week took place in September. 140 charities from around the country came together to highlight the importance of gifts left to charities in wills. Nine local charities helped launch the week at St. Peter’s Church in Brighton. Representatives from the Diocese of Chichester, Raystede Centre for Animal Welfare, NSPCC, SightSavers International, Guide Dogs, Macmillan Cancer Support, RSPCA, Elizabeth FitzRoy Support, the Disabilities Trust and the Alzheimer’s Society, joined together to encourage the people of Brighton to consider the difference that gifts in wills can make to their favourite charities. Currently only 7% of the UK remember a charity in their will.

Trusting the experts Ben Cannon of Lanes lettings discusses the legal side of letting, and the advantages of using a letting agent, as opposed to the DIY approach

F

or this month’s edition I did some research, speaking to Samantha Davies, Landlord and Tenant Solicitor at Engleharts Solicitors, on the legal side of letting your property and some of the pitfalls of doing it yourself. With the housing market having struggled over the last 12 months, many homeowners have taken to renting out their property. With two universities, and proximity to London to attract young professionals, the Brighton rental market appears more buoyant than ever, and properties are getting snapped up within hours of coming to the market. Some landlords with one, maybe two, rental properties decide to opt for the Do-It-Yourself approach rather than engaging the services of a local lettings agent with the aim of saving professional fees and ultimately ending up with more cash in their pocket. But is this always the best way? There are many pitfalls to being a private landlord and going it alone; you may potentially miss an opportunity to secure good tenants at the highest rental price possible or, more seriously, you may get caught out by your legal obligations, both of which may cost you more money than you would have spent on agency fees. The pitfalls come at all stages of the rental process and, unless you have a significant amount of time on your hands, coupled with an in-depth knowledge of the law, then you may hit a few stumbling blocks.

It may also affect your ability to remove a tenant from the property by serving a section 21 Notice. An Inventory of the Property • In conjunction with the AST, the initial and final inventories are the most important documents in the letting process. The details and condition of the contents that you are leaving at the property for the tenant to use will need to be noted and agreed on the day that the tenant moves in. Do you have the time to carry these out? During the tenancy • If you are your tenant’s first port of call, then you may well receive calls at 3am from tenants who have locked themselves out of the property, lost their keys, or something else has gone wrong. If any neighbours complain about the tenant, then it is your responsibility to follow up any complaints and issue warnings at the first sign of trouble. • It is also important that you have a good list of reliable and suitably qualified local tradesmen as you will be responsible for organising all repairs and maintenance to the property. Do you know enough about your legal obligations to ensure that you engage suitable tradesmen and do you have the time to go to the property and check their work? Ending the Tenancy • Serving a section 21 Notice on the tenant is a potential minefield and, as mentioned earlier, the courts will not show any leniency on you if you use the wrong form or make a mistake in completing the form. At a worst case scenario, this could mean that you need to start the whole process over again and, as a tenant must be given at least 2 months notice to vacate, you could be stuck with your tenant for a lot longer than you wanted to be. This could have disastrous, and potentially costly, consequences should you want to sell the property or have found other tenants who are expecting to move in.

Before you even get a tenant into the property • It pays to think somewhat carefully about where you plan to advertise your property. Whie you can place adverts online and in free local publications, are you really going to attract the right sort of tenant? • While you have a property that you can rent out, how well do you know the local rental market? For example, what are tenants looking for? What will attract the highest rental? Is it worth furnishing the property? • Once you have a tenant in mind how are you going to check their suitability and the suitability of any guarantor? • Since October 2007 Energy Performance Certificates (EPC) were introduced as an extension of the HIP Scheme for residential property sales (which has now been disbanded). All properties on the market must have an EPC available for inspection by the prospective tenants. The legal side • You need to ensure that you have an Assured Shorthold Tenancy Agreement (AST). This is potentially the most important document to get right, as it is the contract between you and the tenant. While there are websites that offer free downloads of these types of agreement, there is no guarantee that the document is correct and, once you have signed it, you are stuck with its terms. If it necessary to issue Court proceedings you may have an uphill struggle as the courts do not show any leniency on landlords who have used the wrong document, or were unsure of their legal obligations. Protecting the tenant’s deposit • Since April 2007, landlords under virtually all new tenancies must pay their tenant’s deposit into a Tenancy Deposit Scheme within 14 days of

Lettings Agents have the experience, knowledge of the law and the relevant contacts to ensure that the process is as hassle-free as possible. The stringent vetting and referencing procedures mean that you are more likely to attract reliable tenants. Your agent should also be a valuable source of information and advice; they will be able to deal with the tenant’s deposit on your behalf, handle all of the paperwork in relation to the property, deal with the dayto-day issues that arise and advise you on your obligations under relevant legislation. If you do not live near your rental property the services of a letting agent can be invaluable and, I would suggest, highly recommended. However, even if you live only minutes from your rental property the service that a letting agent can provide is likely to remove the stress and strain from you as, unless you have the time and knowledge to both manage the property and ensure that you stay on the right side of the law, you may find yourself paying for a simple, yet costly, mistake. Well, legend has it that the Devil, Ol’ Nick, was determined to dig a chasm across the Downs so the sea would flood in, drowning and inundating the churches and pious inhabitants of the Weald. But the devil was thwarted; an old woman lit a candle, the Devil thought the sun was rising, and being a coward at heart, abandoned his work, which was never completed. The distinctive hill and its valley proved attractive to tourists and in particular were a huge hit with Edwardians. Some 30,000 people visited the Dyke on Whit Monday 1893. Hoteliers and budding businessmen saw there was money to be made and a variety of attractions were opened. A steep grade funicular railway on the north side of the Dyke would take passengers to the village of Poynings. From the south, a traditional steam railway was built. Its final station, Devil’s Dyke Farm, was some 200 feet below and half a mile from a hotel which had been built at the very top of the Dyke. And there were all kinds of other attractions - a funfair, two bandstands, an observatory, camera obscura, coffee rooms, a restaurant, and at one time, an ornamental wooden cannon. A cable car, suspended from two pylons 650 feet apart, ran across the Dyke itself, an exhilarating ride 230 feet above the bottom of the valley. There was nothing quite like the Dyke anywhere else in the world and it was visited by both King William and Queen Victoria. The steam railway was opened in 1887 by the Brighton and Dyke Railway Company. The service was a great boon to the club members of Brighton and Hove golf course as the train provided a regular service for its members and players. There was even an automatic bell in the club

But the two golf courses are still there - the Dyke, once a municipal enterprise, and the oldest club in the area, the Brighton and Hove Golf Club off the Devil’s Dyke Road. Today sheep still graze on the Downs and the occasional deer will wander past. The view, which is without parallel, remains marvellous. And nowadays there are hang-gliders performing their daring feats when the wind veers or backs to the North. Next year I will take that bus, and the family too; we’ll have a proper day out.
